    the taco salad I get at the mexican place is served in a large tortilla shell...which obviously I don't eat..it also has beans at the bottom which I skip. The one I get has chicken, lettuce, tomatos, cheddar cheese, sour cream and guacamole.

      OK, this may fall into the "why didn't you put this in the recipe place" category.

      Saturdays or Sundays, for me and my wife, are the perfect time to prep for the week. We usually hard boil 3 or 4 dozen eggs, mark the cartons and store them on a different shelf in the fridge. I usually grab 4 to 6 in a ziploc bag on the way out the door for work.

      Another possiblility it to bake something, usually an extra of something we fixed for dinner, let it cool and then cut it into servings for easy transport in plastic containers.

      One I'm dying to try:

      Take your favorite veggie (could be spaghetti squash, zucchini, summer squash, tomatoes, etc) slice it into 1/4 inch slices (crossways, longways it doesn't matter.) In the spaghetti squash, cook it in advance to "almost done" and shred it up in advance like spaghetti.

      Brown a pound or two of your favorite burger (turkey, beef) and season to your liking.

      Prepare some grated hard cheese, your preference.

      Finally, melt a pound of butter and season with some garlic.

      Construction goes as follows:

      Spray the dish with a non-stick cooking spray, lay down a layor of veggies and "paint" them with liquid butter.

      Then add a layer of ground meat. Again, the amount and thickness of each layer is up to you.)

      Add a layer of cheese.

      Repeat the process until the baking dish is full.

      Some would have the last layer as vegetable, I prefer to stop at the top layer of meat and cheese.

      (Obviously, any ingrediants left over, put in containers and save for use later on in the week. Especially the butter and garlic, that is liquid GOLD!)

      Eat what you will for dinner. (We usually bake two or more 9 inch dishes. Eat one for dinner.) Then allow the rest to cool in the fridge. It should firm up nicely. then cut into individual servings, put into freezer bags or containers and freeze for a quick grab for lunch as you run out the door.

      (Most of your favorite Atkins approved dishes, cassaroles, burgers, etc. can be prepped in advance like this to make the work week less tedious regarding food prep. BUT, I would guess, most of the long term Atkineers have already discovered this process.)

        I just realized that my true on the go food is chicken wings with a veggie bowl! LOL I cook freeze and grab on the way to work when im in a rush! Lol Yum yum yum!! lol

          My go-to meal usually revolves around cauliflower-mash--I steam cauliflower and mash it with butter, sour cream, bacon bits, cheese--(sometimes just butter or cream cheese--whatever I have)--as long as I have this around, I am happy with just a plain protein and some salad

          another dish would be
          from LindaSue's recipes---Like Velveeta Rotel Main Dish--which is ground beef (I usually use turkey), a bunch of sauteed cabbage, Ro-tel, and Kraft American cheese. Sometimes, I'll mix the ground turkey with shredded chicken breast--or just the chicken breast--add mushrooms, zucchini--again, whatever I have

          Another favorite is just a big pan of sauteed cabbage with butter
          or I'll treat it like fried rice--add some low-sodium soy sauce and scramble a few eggs in it

            it really depends on what I'm in the mood for... sometimes I'm just not in a meat mood... so I chop of lettuce, onion, cucumber, grate some cheddar... blob in mayo... and a packet of splenda... and mix.. it's great...
