    Today I am going shopping ........... fresh green beans and onions are top on my list! As well as squash, peppers, brocolli, cauliflower, and finding something new t try.


    I made a delicious soup this morning with Cabbage, onions, zuchinni, summer squash, peppers and steakums it was delicious and full of veggies ........ I have to get on fitday and figure out all the particulars for a serving but I know it gave me some good net carbs!

        O.k. Silly, I think I figured this out.

        Yesterday I had the following:
        1 cup of Romaine Lettuce
        1 cup of Diced Cooked Squash
        1/2 c. of cooked onions
        1/5 cup of cooked tomatoes
        1/5 cup of Jicama

        18 Total Net Carbs

          TODD'S GREEN BEANS
          1 pound fresh green beans *

          In a large skillet or wok, sauté the green beans in oil and 1 tablespoon butter over medium-high heat about 4-5 minutes or until they start to brown. Add another tablespoon of butter, if needed, and add the onions. Sauté until the onions are nice and brown. Season to taste with salt and pepper.

          Makes 4-6 servings

          * You can also use a 16-ounce bag of frozen thin green beans that have been thawed completely and patted dry. I used frozen beans. I used a medium onion plus one small onion to get 6 ounces. Per 1/4 Recipe: 126 Calories; 9g Fat; 2g Protein; 10g Carbohydrate; 4g Dietary Fiber; 6g Net Carbs
          Per 1/6 Recipe: 84 Calories; 6g Fat; 1g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs

            Hello, Everyone

            I thought that I would post another one of my favorite recipes from Linda's website. This is not supposed to taste like a potato, so don't count on that. However, I do find it quite delicious! (I use the sour cream rather than the ranch dressing) At times, I've even doubled the recipe and added more bacon to make it into a meal.




            "LOADED" CAULIFLOWER
            1 cup cooked cauliflower
            1 teaspoon butter
            Salt and pepper, to taste
            1 ounce cheddar cheese, shredded
            1 tablespoon ranch dressing or sour cream
            1 strip bacon, crumbled
            1 teaspoon chives

            Butter and season the cauliflower. Place in an individual-serving baking dish, then top with cheese. Microwave or broil until cheese is melted. Top with ranch dressing, bacon and chives.

            Makes 1 serving Per Serving: 290 Calories; 25g Fat; 12g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs

              I hope that you like it, Emma. I find that I have to cook them a long time to get them as brown as I like... being browner makes them taste yummy to me... it does seem to take forever, though. Good Luck!

                23 net carbs for me today

                2 cups green beans
                1 med onion
                1 cup tomatoes
                1 cup mushrooms

                PROOF THAT I TRIED MY NEW VEGGIE!!! LOL



                they were GOOD!!! there was a couple that tasted of the old green bean taste, i figured i didnt cook them long enough, i know i could never eat these in any other way than fried but i will definitely eat them again like that! YUMMY!

                  Emma, so glad you tried green beans and liked them. They're one of my favorites, fresh, canned, hot, cold, I love them!

                  My veggies for yesterday:
                  .5 avocado
                  1.8 c jicama
                  .75 c green beans
                  2 T pasta sauce

                  18 net veggie carbs!

                    Emma, down here in Texas we usually throw a piece of bacon (or ham) in with the green beans, too. Adds extra flavor!

                      Ok here's my day:

                      2 cups veggie soup 11 net carbs
                      Zuchinni, onions and pepper stirfry 5 net carbs
                      Salad lettuce, onions, peppers, mushrooms 3 net carbs

                      total for today: 19 net carbs

                        And yep - I only like them fried, and I don't like the ones that aren't cooked long enough, either.

                                I was starting to stress about Saturday (I'm going to be on a bus from 8 am Sat until 2 am Sun with our 350 members of our High school band going to Area competition).

                                Challenge is over Friday, though, right? I can still take my veggies, but if I don't get as high as normal, it will be all right. I should have enough this week to slack just a bit Saturday!
