      Okay..May 14th...did pretty good today I think!

      Had a few bites of salad at a field trip with my son but couldn't finish it cause the stupid mosquito's kept dive-bombing it! rofl So I settled with a boiled egg and decided to eat some cabbage later on. And then I had some cauli & broc with dinner....so here is my list:

      Total Veggie carbs: 25.912 gms ..Fiber: 12.846..With a total of 13.066 NET Veggie carbs
      Yayyyy! I did it!

        I tried the cauliflower pizza dough yesterday and i am hooked !! it was incredibly yummy !
        I mean just divine !!
        So today i had one cup mushroom and half cup spinach so far just so i can have the pizza again. Oh and i made a small one because i just used one big floret.

          Hello Mitzi



          You must have seen my other post about the information I gathered from fitday and Soliwit’s post (weight of a veggie in a cup and the net carb ). So here’s a question I bet you’ve heard a million times.

          I am supposed to have 2 cups of veggies and 1 cup of ‘other’ veggies per day.

          So according to fitday these will be my net carb (nc) totals for each –



          1 cup mushroom – 2 n.c.

          1 cup cucumber – 2 nc

          Half cup cauliflower – 2 nc

          Half cup spinach – 1 nc



          So all together this is 8 net carbs. But I know on induction I should aim to have at least 17 net carbs. I have already reached my limit in ‘cups’ , how do I add more ?

            I peeled back the outside layer and cut off the roots then sliced them from the bottom up into about 1/4-1/2 inch slices then dipped those into egg and then parmesean cheese and deep friend them in a skillet of shallow oil. It doesn't take long and kind of makes a mess because half the parmesean doesn't stick well but they came out crunchy and tastey like onion rings. I really liked them. Don't turn the heat on the oil too high or the cheese will burn before the Leek cooks ........flip them over half way through cooking it takes probably about 3-5 min a batch. I did three Leeks and it was more then enough for Hubby and I with leftovers ...... and Like I said I ate way too many. I wish I had taken a picture but I didn't ........ I made the sliced Zuchinni with it the same way and togethr they were a great fried side to my Tillapia.

              Ashley you may hear a different answer from someone else but for me what I found I had to do was change my veggie choices to things that had a higher Carb level , It's not easy on induction but once you get to the veggie rung it's alot easier to get your NC's in

                brussel sprouts: net 8
                spring mix :net 1
                broccoli: net 4
                onion: net 4

                TOTAL : 18

                2nd day-Tuesday:
                sauerkraut:net 4
                cauliflower: net 2
                onion: net 2
                broccoli: net 5
                pumpkin: net 5
                TOTAL : 18


                Day 3- Wednesday
                eggplant salad: net 9.5 (new)
                mushrooms: net 2
                tomato sauce : net 3
                cauliflower: net 3
                sauerkraut: net 2
                TOTAL: 19.5









                290 lbs. on 11/02/07 Goal: 145 lbs. or size 14 whichever comes first!

                    Mitzi I will be heading out of town this afternoon and won't be back or have computer access till Tuesday ......... I have all my foods prepared and cut up and baggie'd for the weekend so I know my totals if it's ok for me to count it ahead of time here it is:

                    Thursday:
                    Total Carbs 28
                    Fiber 7
                    Net Carbs 21
                    Veggie Carbs 17
                    Veggies include: Zuchinni, onions, peppers(red and green)Avacado, tomato and green chillies, lettuce, spinach

                    Friday:
                    Total Carbs: 28
                    Fiber 4
                    Net Carbs 24
                    Veggie Carbs 19
                    Veggies include: Green Beans, Summer squash, Onions, green pepper, Avacado, tomato, green chillies, lettuce, spinach

                      I think I just got lucky and found some good ones! All I did was peel & then sliced them into strips. I toss them in a baggie that way - I was just eating them raw. They were really moist & crisp & sweet - very refreshing. I kept them in the fridge so they were nice & cold too.

                        Yesterday's Totals: 37g Gross Veggie Carbs - 18g Veggie Fiber = 19g Net Veggie Carbs

                        I ate Jicama, Cucumber, Cauliflower and Tomatoes all raw, and some cooked Brocolli again at dinner (I'm so boring! But brocolli w/ butter is just so good!)

                            Thank you Heidi for the picture of Jicama.. At least I know what I am looking for now.. and the recipe for Leeks... Will try that this weekend. Speaking of which, hope you have a great few days and will see you back on Tuesday.

                            Getting my veggies in today having made a BL, no eggs but have them, for breakfast, and a garden salad with one hotdog, mustard for lunch. Will calculate later on my carbs.

                            Tonight am having steamed veggies. Has anyone used Ziploc's steam bags.. they are GREAT! ..

                                Sorry that I haven't seen the post you are referring to, but I can answer your question.

                                Heidi is exactly right - you need to pick veggies with a higher carb count. For example:

                                Jicama is a salad veggie, and 1 cup = 5 net carbs
                                Rep bellpepper is a salad veggie, and 1 cup = 6 net carbs (I eat these raw, cut into strips - awesome!)
                                my canned pumpkin is an Other veggie, and .88 cup (which is 1/2 can) = 7 net carbs
                                Total for these 2 cups salad veggies and .88 cups of Other veggie = 18 net carbs

                                One more thing... You wrote "But I know on induction I should aim to have at least 17 net carbs." I'm wondering where you got the 17 net carbs number from... do you mean that your total net carbs from everything should be 17? Because for Induction, total net carbs should be 20. If you are referring to net veggie carbs, the "most" rule (the way that I interpret it; half plus one) would be 11 net veggie carbs if you had a total of 20 net carbs from everything. Because this a challenge and we wanted to "challenge" you, we made the minimum for Induction 12 net carbs.
