    I don't know if it counts! 11.73 net carbs! I ended up not eating supper because we found a dryer, 7 years old, FREE so we picked it up and took it up to my moms house, right after work. I got home at 9:10pm...and wasn't hungry at that time....

    I'll make up for it today! Having chicken w/veggies for breakfast, salad for lunch and dinner with a meat and veggie! Everyone keeps talking about brussel sprouts, love those and haven't had them in awhile so I think that will be my veggie of choice today!

      Thursday's Totals: 33g Gross Veggie Carbs - 15g Veggie Fiber = 18g Net Veggie Carbs

      Vegetables I ate today included raw cauliflower, tomatoes, mushrooms and snow peas, grazed on all that throughout the day; a tossed salad & green beans at lunch, and then once again my beloved steamed brocolli at dinner.

        Total carbs for today 32 - 14 net for veggies. I'm off to workout and then maybe get in some pickles or brussel sprouts later for a snack - extra net carbs then!!

          i went over my carb limit today ! i have a total of 23 carbs !!
          but my veggie carbs are 16
          cauliflower 4
          spinach 1
          cucumber 4
          spaghetti squash 7
          total 16

          for 5/16
          unfortunately i have had another round of crazy schedules and have not had any sleep, so i will go to bed as soon as i leave work and my veggie carbs (in my single meal for today) will be limited to :

          spinach 1
          cucumber 3

            Breakfast - N\A
            Lunch - Less than a cup of Green Beans = 8.0g net carbs
            Snack - 2 Pickle Spears = 2.0g net carbs
            Dinner - 1/2 a servingish of Faux Mashed "Potatoes" (Cauliflower) = 2.0g net carbs
            Total = 12g net carbs

              Tried eggplant as my new veggie today. Not sure about it. I made ratatouille which I enjoyed for the most part. The eggplant was kinda mushy & the rind was just weird.

              Todays tally:


              L) 2 cups Romaine lettuce~~~1.33 net carbs
              0.25 cup cuke~~~0.5 net carbs
              0.25 cup green pepper~~~0.625 net carbs
              1.5 oz tomato~~~1.6 net carbs
              1 stalk celery~~~0.8 net carbs
              1 cup summer squash~~~2.5 net carbs
              D) Ratatouille~~~7.8 net carbs
              eggplant, red & green pepper, red onion, zucchini & tomato
              S) 0.5 cup pumpkin~~~4 net carbs

              Total~~~19.15

              I'm ordering a food scale so I can keep a more accurate net carb count of all my food. This challenge really showed me how important it is to keep track of everything going into my mouth. The other thing I found interesting is the differences in listings on Fitday, Calorieking, the spreadsheet here on ADBB & Dr. Atkins' Carbohydrate Gam Counter. I guess I'll have to pick one & stick with that.

                Will miss EVERYONE having learned and enjoyed this challenge. Truly, it is sad to see it go. Y'all have been wonderful! Thank you.

                Did well vegetable wise today.. and will take what I have learned and act on it.
                Giggles.. even what that heck to do with all this jicama I finally got.. LOL..

                Will breakdown my May results tomorrow... After being on the computer ten hours a day, sometimes it is hard to be on it again.

                  I made it! Mitzi...thank you so much for this challenge. It was eye-opening to say the least. It showed me just how many veggies I should be eating instead of substituting other foods. Wonderful experience!

                    Tomato slices for break-3 net carbs
                    6 Microwaved Fresh Asparagus - 4 net carbs
                    half can of pumpkin- 7 net carbs

                    14 net veggie carbs for the day

                    okay fresh asparagus was the new veggie I chose for the challenge....didn't care for it...think I will stick with my canned version.

                      Good Evening, Fellow Challengers!

                      Sorry that I haven't been here all day - my step-daughter graduated from Louisiana State University today! Woo hoo!! Traffic was crazy getting there, and the ceromony lasted almost 3 hours... there were almost 1000 people graduating in her particular college, so it took quite a while. And hers was only one of several ceremonies scheduled for today, hence the traffic. (LSU is the 7th largest "city" in the state of Louisiana) Tomorrow night we'll be going out to eat with her grandparents and an aunt and uncle, and Sunday there will be a Crawfish Boil (it's a southern thing) for friends and family to celebrate. And I was supposed to be off of work tomorrow, but was asked to come in for a while. So, I have been incredibly busy!

                      Thank you all so much for letting me know that you have enjoyed the challenge. I, too, enjoyed it very much. I also benefited from it, too! I usually only weigh once a week, but I felt so skinny this morning that I had to take a peek. 2 pounds gone since Sunday's weigh in! This challenge really helped me to keep focus this week. I am very excited! I'm not going to change my ticker until Sunday's weigh in, because that is my official day, but it's nice to know that these past 4 days really made a difference.

                      I hope that you all decide to keep veggies as a priority in your eating. We think we are getting a lot of veggie carbs, until we start really tracking them and deducting the fiber. An eye-opener for sure! It just goes to show just how many veggies you really can eat for relatively few carbs. I also hope that this experience with veggies has reassured you about moving on to Rung 1... there's nothing to fear!

                      Tracey, your 11.73 carbs definitely does count! I have no problem at all rounding that number to 12.

                      Yes, on Induction at 20 net carbs, I would try to get a minimum of 11 net veggie carbs, with the remaining 9 divided between cheese, tofu, etc. And yes, you can have more veggie cabs if you don't spend them on other things. You've got it!

                      Glenda, for someone as anal as I can be about things, I find frustrating to find different counts for foods in different places. Ack! How can that be? So, I use labels when I can, and pick the facts from whatever source seems the easiest to work with at the time. And have you had this happen yet? I've tried to enter info from a label into Fitday before, and it tell me that there is no way the info could be correct! Fat is 9 calories per gram, carbs are 4 calories per gram, and protein is 4 calories per gram... after putting in the nutrition info from the label, Fitday will tell me that the number of calories is incorrect for the number of grams of fat, carbs, and protein that the label states is correct. That means that the info on some of the labels is inaccurate, too.

                      OK, it will probably take me another day or two to get all of my results finalized (I have to track a few people down and organize my notes), and I will probably make a formal announcement of winners on Monday. Meanwhile, please feel free to use this thread for a few more days if you wish. I'm going to miss this challenge, and I'm in no hurry to shut the thread down just yet. I have really enjoyed getting to know you!

                        Thanks Mitzi, you've taught me so much!! I really thought I was getting more than enough veg's and what I found was I wasn't getting anywhere near enough. You also made me much clearer on OWL. Thanks a lot for hosting this challenge.

                          Mmmmmmm, I am craving me some crawfish now Mitzi and onions and garlic! I just hate the bloat I have been getting when eating them lately. I've been to three crawfish boils in the last month and had boiled crabs which were a welcomed treat.

                          Off topic, how did you fare with the day before last? My sister is in Denham Springs and it took a lot of the fences down in her neighborhood. They had dogs running everywhere.

                              Thankfully, we came out smelling like a rose. Just a h*ll of a lot of rain for 3 days, though. Lots of people lost power, but mine never flickered. Thanks for asking.
