Just wanted to chime in and say I LOVE the steamer bags and use them all the time ....... I know the point of them being disposable is what appeals to most ut ya know I wash them out and use them at least 5-6 times before I toss them ...... I'm cheap!!!!!

Butt dragging this evening. Still tired from yesterday. Getting my veggies in & feeling thinner. I'm going to try & weigh in tomorrow just for giggles. Hoping for a loss!

I have learned during this veggie challenge that I haven't been eating nearly enough veggies. This has been a great challenge for me!

            Today's tally:

            B) none
            L) 3 oz tomato~~~3.2 net carbs
            0.25 cups gr pepper~~~0.625
            2 cups Romaine~~~1.33
            0.25 broccoli~~~0.57
            0.5 cup cucumber~~~1
            0.125 cup shrooms~~~0.175
            6 marinated artichoke hearts~~~3
            0.5 cup jicama~~~2.5
            S) snap peas~~~2.5
            D) 0.5 cup pumpkin~~~4 net carbs

            Total 18.9~~~net carbs

Not really hungry this evening as I had such a big a$$ salad at lunch time. Tomorrow I will be making ratatouille to go with our anniversary dinner. I bought all the veggies today. Will have to enter everything into Fitday to figure out the carbs.

              May 15th, 2008

*Totals based on information plugged into Fitday*

              Breakfast - N\A
Lunch - 1 Cup Faux Mashed Potatoes (Cauliflower) = 4.0g net carbs, Marinara Sauce (made w/ tomatoes) = 1.0g net carbs
              Snack - 1 Pickle Spears = 1.0g net carbs
              Dinner - 1 Cup Head/Iceberg Lettuce = 1.0g net carbs, 1 Cup Green Peppers = 6.0g net carbs
              Total = 13g net carbs

I made the Faux Mash "Potatoes" today and I was extremely surprised! They were actually good! They didn't taste like potatoes at all but the mashed cauliflower seasoned with salt and pepper with some butter and a little bit of cream was a GREAT subsitute! Now all I need to do is find and Atkins friendly recipe for gravy and I'd be GOLDEN!!! YUM!!! I can't believe I'm saying this but dang the mashed cauliflower was GOOOOOOD

Good idea about washing them out and using the steamers again. It is so wonderful to have a nice healthy inexpensive lunch for a change! Why I did not think of that since I wash out and reuse water bottles..

Now for the GREAT news... my local market got me the jicama.. NOW what do I do with it.. ROFLMAO.. I will look at Linda's recipes for tomorrow. This is so exciting.. too bad tomorrow is the last day of the challenge. We should have it for five more days and have a pair of cauliflower heads... LOL..

Success has been inventing more enjoyable breakfasts, jicama, and most of all.. y'all. Mitzi.. remember .. two heads of cauliflower is better than one.. giggles.

Steamed broccoli and cauliflower, with T butter... along with sliced roast beef

                Great veggie day!

Thanks Mitzi for answering my questions. I'm sorry I missed the carb totals on the first page, it's been a crazy week and I didn't go back and re-read them. Thanks for all the info on OWL too! I've been talking to several people who started around the same time as me and we're all confused about OWL. We've read all the sticky's but still have so many questions. Your post really helped a lot.

After reading your post I think I'm eating to much protein. I'll have to pay closer attention. My problem is I'm not hungry enough to eat all the veg's I should. I bought some leeks today so I'm going to try 3 new veg's this week, first I had pumpkin, tonight I had broccoli slaw, and I'm going to try leeks. The bad news is I went to the market today and bought some jicama and I picked up the best one I could find, but when I got home it was rotten inside. All the rest had mold on then so I thought this one was OK but no it wasn't. I had it all planned for tonight.

Today I had romaine lettuce, tomatoes, broccoli slaw, celery, cucumbers, onions for a total of 18 net carbs.

                      Greetings, Friends!

I am soooo sorry that I have been so scarce today! I was supposed to be off of work, but got asked to come in for the evening shift at the last minute.

I really wish that I could reply to each and every post here. You all have made me so proud! It has been very satisfying (and inspiring!) to come here each day and see the effort that each of you has put forth to succeed in this challenge. The veterans have done a fabulous job of taking the newbies under their wings and sharing their expertise. The newbies have taken this seriously, and have asked fantastic questions to learn as much as they can. And it's been a joy to watch those of you who HATED veggies (Irish ) be able to make this work. You are showing that you have what it takes to make Atkins a way of eating for life... you've accepted and embraced the fact that doing Atkins correctly is the way to succeed in the long run... you are making a lifestyle change, and not viewing Atkins as just a "fix" to lose weight.

                      You, my friends, ROCK!

Watch us participate in the Veggie Challenge!

Yes, Thank you Mitzi and all the veterans for answering all the questions...and thanks to the newbies for thinking to ask those questions...I am learning soo much and feeling awesome! So far, I have currently converted my husband, my mom, and am working on my cousin! giggle~ My kids are a harder sale on it...I am trying to convince them but, well, lol they are carbivore's currently but I will slowly convert them! hehe

This Veggie challenge has been sooo good for me! I am so proud of myself and I love how its really changed my way of looking at veggies and my woe in general!

yeah i think i'll just go back to eating brussels sprouts, as it is much easier to fulfill the 'cups' and 'carbs' limit with those.

Always to my rescue ! LOL
yeah i think i read a bit too much in one sitting and got all my numbers mixed.
So this is what it should be - on induction i need to have at least 11 net carbs of vegetables, with the remaining 9 divided between cheese, tofu, etc ?

Or i can have more veggie carbs if i dont spend them on other things ?

sorry if i am being too dull headed

I have been a bit obsessed with zucchini and cauliflower because i have never had them before. Cauliflower yes but never like a pizza !
i made a small piece with one cup cauliflower , cut it into strips and had it all day !
also had spinach, cucumber, mushrooms, yellow squash.
