        Can I just say that I am sooooooooo nervous about this challenge? I HATE HATE HATE veggies, you can say I'm pretty scared to try them!

        But I spent the money on them and they are in my freezer. I will eat them...somehow! Ugh. Just had to get that off my chest...

          IrishMom, I was in your shoes at my re-start of Atkins last February... other than salads, I wouldn't touch veggies with a 10 foot pole. That first Veggie Challenge in April of last year literally changed my life. I decided to open my mind and get brave... tried lots of new things, and kept up the minimum of 17 net veggie carbs daily from then, on, after the challenge ended. You'd never make me believe, the week before that Challenge started, that *I* would be the one hosting the challenge a year later... I'm proud of myself.

          Hopefully, you will pick up a lot of ideas for veggies while participating in this challenge. Everyone should feel free to post some of their favorite ways to have veggies. I know that butter and olive oil have become staples in my eating now... I like just about any veggie as long as it is sauteed/fried in butter and olive oil in a skillet on the stove or in my electric skillet - YUM!

            Here is one of my favorite ways to have a veggie. One of the members here on the board gave it the name MUP (Mitzi's Ultimate Pumpkin), and the name has stuck. Here goes...

            Recipe for MUP:

            The great thing about MUP, is that it is so versatile. I have heard of people putting coconut in it (Rung #3), and I have tried adding unsweetened cocoa. You can vary the spices, too. Just remember to account for carbs. One person thought it was too "spicey" for them the way that I make it, so just experiment until you find what you like. I also put natural almonds in mine, but I didn't include them in the recipe because they are not legal until Rung #3 (Nut and Seed Rung) and it looks like most of you are doing Induction. I have also tried it with pecans and walnuts. It's good without the nuts, too, though.

            I'll post how I eat my MUP to give you a general idea, and you can adapt it to your tastes/needs. I use a LOT of cream cheese in mine. Lots of people use less, but I like the creamy-ness of it and am not afraid of fat, so I go for it.

            Here goes:

            About the pumpkin - I use Libby's canned pumpkin that is probably located next to the baking items in the grocery store. Make sure to read the label carefully so that you pick up the 100% pure pumpkin and not pumpkin pie filling, which is also made by Libby's and looks a lot like the pie filling, which has sugar in it. Here is the recipe for what I eat:

            In a bowl, I mix 1/2 of a can of pumpkin (which is .88 cups) with 2 ounces of cream cheese. I put this in the microwave for 50 seconds then take it out and stir well. I then add a few drops of liquid Splenda, 2 teaspoons of cinnamon, and 1 teaspoon of allspice and stir. I then put it back in the microwave for about 50 seconds, stir, and it is done. I find that the warmer it is, the better it tastes. I've had one person tell me that they like it better cool, though. This makes a lot, too, so you may not need to make this much. My husband always talked about how good it smells when I make it, so I made it for him one day. He couldn't finish it all because it is kinda rich. Cutting this in half would have been enough for him. I always finish mine.

            Fixed this way: 11 net carbs (7 of these carbs are net veggie carbs )
            287 calories
            23g carbs
            12g fiber
            21g fat
            8g protein

              Another favorite recipe...




              "LOADED" CAULIFLOWER
              1 cup cooked cauliflower
              1 teaspoon butter
              Salt and pepper, to taste
              1 ounce cheddar cheese, shredded
              1 tablespoon ranch dressing or sour cream
              1 strip bacon, crumbled
              1 teaspoon chives

              Butter and season the cauliflower. Place in an individual-serving baking dish, then top with cheese. Microwave or broil until cheese is melted. Top with ranch dressing, bacon and chives.

              Makes 1 serving Per Serving: 290 Calories; 25g Fat; 12g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs

              This recipe and photo is from Linda's website, and the link will take you there. I use sour cream instead of ranch, and stir mine really good before I eat it... it's not a pretty sight after that, but it mixes up well and coats all of the cauliflower... very yummy.

              Also I want to say that whenever I use a recipe from anywhere, I don't go by the nutrition facts that are provided... meaning, I don't take it for granted that they are correct. I enter everything myself and come up with my own numbers. I included hers here because they are part of her recipe, and it will give you an idea of what is in it.

              Of course, you can trust the numbers that *I* provided for MUP, though. (you really can - I can be quite anal about my numbers)

                  cauliflower
                  onion
                  zucchini
                  If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

                        That recipe looked so yummy- does anyone have good dairy-free recipes for unusual veggies (including cauliflower-since I haven't eaten it in years)??? I'm eating my usual boring salads, but I want to try something new and can't have diary. It's great to feel there's support for doing Atkins- it makes it easier to turn down all the treats at work!

                          Have you looked through Linda's website for recipes? Here is the link for those who don't know about it yet. http://www.genaw.com/lowcarb/index.html Maybe you can find some recipes there, or get some ideas for some that you could modify to suit you... get creative!

                          I have never really been a good cook... I am an awesome baker , but cooking has never really been my thing. It was during the first Veggie Challenge that I learned the beauties of butter, olive oil, and a skillet or oven. I guess it just never occured to me to "fry" a fresh vegetable in butter/olive oil in a skillet.

                          For example, the only experience I have ever had with asparagus is the canned kind. Stangely, one of DH's favorite "treats" is chilled canned asparagus with a dollop of mayo on top. (Eek) It always disgusted me that way. However, I have always been intrigued with the fresh asparagus in the stores. So, I got some and "fried" it in a combo of butter/olive oil in a skillet and OMG! Very good. I fried it for a pretty good while, because I like it limp and browned... and those crispy tips! They're the best part. I also do this with fresh green beans/onions/mushrooms combo... very nice!

                          Another example - While I had always thought that brussel sprouts were cute (tiny cabbages!), I had always been to scared to do anything with them. A member convinced me to brush them with olive oil and roast them in the oven. She said if I was feeling adventurous, I could separate the leaves and it would make them crunchy. I went through the trouble, and it turned out to taste really good. Just make sure to keep an eye on it and shake the pan occasionally so it doesn't burn. And oh yeah... brussel sprouts kinda have a strong odor... DS b*tched for days about the smell.
