      yay I got it! THANKS!

      This shouldn't be too bad for me - I'm sort of obsessed with veggies...I have to cut back for induction.

        Mitzie I hope you don't mind me dropping in the middle here and posting this, but I'm a true believer in visual examples so will contribute this. I took this picture last year when I did the veggie challenge and it is an example of 17 - 20 net carbs of veggies. The mound of cauliflower looks a little daunting, but if you cook it and mash it with butter and parmesan, it's understandable why there's so much (delish!).
        There are obviously a ton of ways to get your veggie carbs and this is only an example. I didn't follow the 2 cups, 1 cup rule, but rather went by net carbs instead..that worked better for the way I think....good to know there's options, right?

        Good luck with your challenge everyone...the veggie challenge is one of the best ones I ever did, so I hope you guys enjoy it! That's jicama beside the broccoli, cut into slices. I really like it cut into matchsticks and eaten on it's own, along with the sugar snap peas. It's good in a salad too; lots of fibre!

              Oh I love that picture of veggies, puts it into perspective for sure!

              I'm excited about this now... I printed off the list of veggies, and that baked cauliflower recipe! YUM!

                  Mitzi...just had your MUP for my breakfast....I am so full! That's a keeper for sure. Nice way to start a cold morning. And really nice carb count too!

                    Okay, Mitzi you have been helping so much and I see that I am not even near the amount of veggies that I should be sooooooo......I am joining too!!! I cannot wait to get started and I will download the spreadsheet and everything! Thanks for this challenge!!

                        Thanks for this...I have never had Jicama (pronounced how? lol) so might try that as I see that they are allowable on induction...but I cannot find sugar snap peas on my list so do not know if they are allowed on induction, does anyone know?? Love that pic tho...And is it ok to go by that rule of just counting the net carbs for vegies instead of measuring by the cup?? cause I think that was what has been throwing me off on the amounts of vegies/carbs I eat. Thanks in advance!

                            Are we listing WHAT we had for veggies each day, or just the net carb count?

                                When I took that picture, I was in OWL, so could have more of a variety of veggies than on induction, but....Snowpeas (also eaten with the pod, just they're flatter than sugar snaps), are allowed on induction and you can have 10 pods for 2 net carbs total! Figuring out the net carbs per pod is for me is much easier to manage than to try to figure out 1 cup of snowpeas. I also figure out broccoli and cauliflower by the floweret, not by the cup, cherry tomatoes by each one, leaves of romaine, sticks of celery, etc. I do all this on Fitday.

                                From my own personal experience, I know it doesn't matter if you count net carbs for veggies, as opposed to using a measuring cup because I did it and managed to go from a size 12 to a size 7 in a very short time! I do not weigh myself on a scale...I only go by measurements and how my clothes fit...works for me!

                                See Mitzi's post #38....she listed the acceptable induction veggies for those of you on induction.
