    Greetings, Fellow Challengers

    I'm pretty easy going with regard to reporting details. All I need from you is a total number of net veggie carbs (carbs - fiber = net carbs) for each day. I would prefer that you report each day, but it is perfectly fine to give it to me the next day... I would just rather not have all of the days reported on the last day. Please feel free to include details about what you ate, etc., if you wish, but it is not required.

    Sonya ~ sure, you can count the jicama as your new veggie. I'm so glad that you like it! Jicama is a great veggie - good carbs, and good fiber.

    Chick ~ your time table will be no problem!

    Heidi ~ Ugh on the poor food choice! Ah, well... sh*t happens. You'll get it straight. And yes, I think leeks are like onions. I saw a recipe in one of the journals chats about cooking leeks... I'll go find it and let you know.

    Irish ~ I can't believe you've never eaten cauliflower! To tell you the truth, I thought I hated cauliflower until I had it a few times. It's one of my favorites now! So many things you can do with it. I love that "loaded cauliflower" with the bacon, cheese and sour cream... I'm drooling thinking about it.

    Tracey ~ feel free to post at night, or the next day... as long as it doesn't turn into days without checking in, I'm cool. And I'm curious to see what new recipe you try!

    Glenda ~ woo hoo! go, girl... I LOVE your details.

    Robin ~ I love what you have in your siggie! That's a neat idea.

    Whew! I just walked in from work, and sat down for the first time in 9 hours... feels good! And I'm hungry... guess what I'll be having?

        *Totals based on information plugged into Fitday*

        Breakfast - 1 tbs. Chives = 1.0g net carbs
        Lunch - 1 Cup Head/Iceberg Lettuce = 1.0g net carbs
        Snack - 2 Pickle Spears = 2.0g net carbs
        Dinner - 1 Cup Green Beans = 8.0g net carbs
        Total = 12g net carbs

        The green beans are something I've never eaten willingly. To my surprise they really weren't that bad. They weren't great, but I'm sure I'll get used to them soon!

            I have heard of Leek soup.. not sure about eatting leeks as leeks.. Interested in knowing about that!

            I was having a hard time eatting vegetables at night.. I was so full before that time came around. So, I have been eatting salads for breakfast. That is what is new for me. This morning had a BLT salad for breakfast. Light and delicious, and got 5 grape tomatoes and V8 juice (for my additional rung veggie) with it.

            Lunch was Linda's Italian Casserole.. Very good ladies.. which had some onions and mushrooms included. Another salad with blue cheese dressing.

            Using Fitday to calculate totals.. No vegetables for dinner. 33 carbs out of 35 used, of which 19 were vegetables.

            Irish.. congrats on eatting stringbeans! I love them with slivered almonds.

              Burp... I feel full already today and I had 23 carbs but its on like 10.5 NET! Quick - what to have?

                I was quite boring today and didn't eat a huge variety, but I made it nonetheless!

                2 slice of onion - 2
                2 pieces of red dried tomato - 2
                2 cups of fresh green beans, boiled - 20 (7 fiber)
                2 cups Broccoli spears - 8 (6 fiber)

                Total: 32 Carbs - 13 fiber = 19 Net Carbs for OWL

                I barely squeaked by! Tomorrow I'm trying a new veggie...Brussels Sprouts. Wish me luck

                      Cucumber, celery, mushrooms, romaine, tomato, asparagus, broccoli and onion.

                      23g carbs - 10g fiber = 13 g Net Carbs

                        Heidi, congrats on being able to get back on plan! And you did a fine job of spreading out those veggies.

                        Irish - were your green beans fresh, canned, or frozen? I just can't stomach the canned or frozen ones, but I adore the fresh ones. DH is the other way around, though. Which way are you?

                        MG, thanks for the link! I keep forgetting to look here at "home" for recipes.

                        Robin, I think it's a great idea to think outside of the box when it comes to breakfast. I can't stand eggs, so I've had to come up with alternatives. Your salad sounds yummy.

                        Tracey - (burp) LOL! I love your sense of humor. Grape/cherry tomatoes are a quicky way to up carbs... got any?

                        Nichole, there's nothing wrong with boring... it gets the job done. Have you ever cooked brussels sprouts before? They stink. How are you doing it?

                        Krista, wow! What a nice variety of veggies you had today. Yay! And you bring up a good point - for relatively few carbs, you can get FULL! And it's on foods that are excellent for your health.

                        OK - my turn. I am in Maintenance, so my minimum is 22 net veggie carbs.
                        I've had .88 cups pumpkin, 7 ounces of celery, 1 cup (130g) of jicama, 1 serving of raw sugar snap peas, and a WHOLE 12 ounce bag of broccoli slaw. Out of the 48 net carbs I had today, 31 of those were net veggie carbs. And this fiber freak is happy to report that I got in 45g of fiber. Woot!

                        Do any of you eat broccoli slaw? It is shredded broccoli stalks, cabbage, and carrots that comes prewashed in a bag. (I picked out the carrots prior to reaching rung The traditional way to have it is like cole slaw... make a little dressing of 1/4 cup mayo, 1 1/4 teaspoons vinegar, and a couple of drops of liquid splenda, and toss the slaw with it... tastes like super-crunchy cole slaw. I do enjoy it like that, but the last couple of times that I have had it, I got creative with it. I made pancakes and bacon for DH tonight, and tossed the bag of broccoli slaw into the leftover bacon drippings and fried it up. Takes a long time, because the slaw is VERY crunchy... I cooked it down until it was limp, added some salt and pepper, and TA DA! Dinner!! It reminds me of the middle of an egg roll. I used to love Chinese food, so it's nice to add this to my menu.

                        I'm mega-proud of all of you! I enjoy your enthusiasm - thanks so much for participating!

                          Yum, never had broccoli slaw before. I do buy the shredded cabbage and carrots in a bag and smother them down in butter but I bet its fantastic with the broccoli added. I will have to look for that in Walmart.

                            May 12 I had jicama, red & green bell pepper, onion, grape tomato, radishand pumpkin.

                            Totals - 68 carbs, 38 net carbs, 25 veggie carbs.

                            For those of you who are using PC fitday, this is really neat:
                            1) Set up fiber reporting by entering a fiber goal under "my nutrition"
                            2) Choose to show "reason" under "view>choose food log columns" at the top of the food log page.
                            3)Click the down arrow in the reason column
                            4)Scroll down to the bottom and choose "create new reason". Name your reason "Veggie" or something like that.
                            5)Select this new reason for all your veggie entries
                            6)Select the "nutrition by reason" report in the left hand column
                            7)At the top select "carbs - fiber"
                            click "update"

                            You will see a pie chart of your net carbs divided by reason. If you hover over one of the sections, it will give you the net carb total for that reason. I use this report to track whether I am meeting my goal of half veggie carbs per day.
                            I have created a reason for "fruits" also.

                              Okay, I think I am going to be the last one posting everyday due to being in Alaska! lol (I ran out of jicama and the ones at the store seemed 'soft'...*sad sigh*)...so here is my totals so far:
                              Veggie Carbs: 25 g ---(11 fiber count but not sure how much veggie fiber) YIKES!!! for Induction???
                              (out of 32 carbs for the day...)

                              MAJOR OOPSY!!! OVER DID CARBS!! (i had some mup)

                                Hello everyone. My first day on the challenge !. I work nights so my day begins at 11 pm and all my posts will be a day late, sorry.
                                So far i have had a quiche made with mushrooms, spinach and green peppers. Once i am home, i plan to have two small yellow squash and 1 cucumber. and after i calculate how many carbs that is, i will have a baby spinach salad.

                                I just discovered Zucchini like two days ago and i have bought a special peeler so i can make 'noodles' from it, will kep you posted. thanks
