    Sounds very interesting. It's a type of yam used like you would a potato. Here's some info and nutritional stats.

            Yesterday I had:

            Breakfast:
            310 g cucumber (4.5 net carbs)

            Snack:
            135 g red pepper (5.34 net carbs)
            200 g kohlrabi (5.2 net carbs)

            Lunch:
            50 g carrots (2.72 net carbs)
            250 g green beans (10.63 net carbs)

            Snack:
            200 g Brussels sprouts (8.12 net carbs)

            Dinner:
            260 g eggplant (6.02 net carbs)
            125 g red pepper (4.94 net carbs)
            125 g yellow pepper (6.8 net carbs)

            The total was 54.27 net carbs from vegetables.

                  Thanks. I got recipes for it but no nutrtional info. I hope that is a misprint about the carbs being 24mg since it has 3 grams of fiber for the same serving size.

                  I read it is a bugger to peel and can be a slime factor during the process like okra. I'm going for a warm spicey "potato" salad and if I don't like it I hope the worms in the bin do.

                    I don't know. That seems like a reasonable carb count for a potato/yam veg. 3/4 c. is a lot (in their portion size).

                    I wish we had interesting veggies here. Can't even find jicama. The only unusual veg we get is fiddleheads for a couple of weeks in the spring.

                    Please post back on how it tastes...I live vicariously through other's culinary experiences.

                        on May 12th, I got 18 net carbs from lettuce, tomatoes, scallions, radishes and Collard greens. I love the greens and realized that I don't think I've eaten them since the last veggies challenge but I won't make that mistake again.

                            Well, I'd never heard of fiddleheads. So I did a search on one of my favorite websites for information of veggies ( www.foodsubs.com ), and let me just say - I think you've cornered the market on unusual.

                              Yeah, I think it must be a misprint. I don't think I've ever seen carbs listed in mg, but I could be mistaken. Have you?

                              I did a search, and found this: http://www.everydayhealth.com/food-fitness/calories-in-yam-name-cooked These facts are for 1/2 cup, cooked, and it listed 19g carbs and 3g fiber.

                              This is what the site I used earlier had to say about them (they don't list nutrition facts there):

                              tropical yam = true yam = greater yam = cush-cush = mapuey = yampi = namé = name = nyami = igname Notes: These firm, white-fleshed yams are widely used in tropical countries. They're somewhat bland and dry, so they're often served with spicy sauces. Substitutes: sweet potato

                                We are grilling burgers tonight, and I'm making this to go with them:



                                From the website Mann Packing

                                The original Broccoli Cole Slaw! Tender hearts of fresh broccoli with a splash of carrots and red cabbage for color and flavor. This product holds its color, crunch and texture much longer than cabbage slaws! Toss in some freshness to salads, pastas, stir frys and more! A real nutritional all-star. You can also steam it in our microvaveable bag!





                                This is a recipe I just found for a lowcarb coleslaw dressing:





                                Ingredients:
                                • 1/3 cup mayonnaise
                                • 2/3 cup sour cream
                                • 2 Tablespoons lemon juice
                                • Artificial sweetener to equal 2 T sugar
                                • 1 teaspoon garlic powder
                                • 1 teaspoon onion powder
                                • 1/8 teaspoon paprika
                                • 1/4 teaspoon black pepper
                                • 1/4 teaspoon plus one pinch salt
                                Preparation:

                                Mix all cole slaw dressing ingredients together, and then mix them into the broccoli slaw. Balance the lemon juice and sweetener to your own taste.

                                *** I've made cole slaw dressing before, but it consisted of 3 ingredients - mayonaise, vinegar, and sweetener. This one has no vinegar, but does have sour cream (which I've not used for cole slaw before), and seasonings.
