    Hey everyone, checking in for the day, well I decided to drink my self silly yesterday, had me my 4 bottles of water along with my normal hot tea that I drink. Thought okay this is the day, get on the scale and I am up 2 lbs.! LOl, think I may have found the problem though when TOM decided to visit me this afternoon. And all in the middle of of pack of bc pills. Bummer! Maybe by next week!

    Randy, hope you can get your cycle straightened out quickly, that can such a pain and inconvenient.

    Iyshia, your doctor appointment is tomorrow, hopefully by the end of the weekend you will be good. Crossing fingers for you.

    Emma's got a birthday coming? Well happy pre birthday, but you know we'll catch you again on it.

    Don, of course you are the only male. None of the others would wear a thong!

    Chicklady, broccoli gives out whooshies? Sounds good since I have that out cooking as part of my dinner. As far as someone said the horseradish, I don't know on that one, I eat horseradish almost daily and it doesn't seem to work for me. I eat the whooshie pies but I think mostly cause I love the taste.

      mwahahaha, yeah its tomorrow, old age is kicking in....

      I'm just going up on the scales, TOM is overdue so i'm blaming that for now, no doubt he'll arrive for my nights out eh?

      Yep Randi, sounds like good reasoning, always blame the man!

      Corn syrup it was stalled Joy (validrouge) out for months and months as it was in her unsweetened tea she got from work! so maybe you'll get a ncie drop on the scales now eh?

          I'm feeling fluffy but my pants are feeling loose....must be a mind thing .

          My goal for today....drink my water! I'm getting my exercise, but my water intake on teaching days just doesn't seem like enough. I feel like I'm talking into the wind and going horse by the end of the day...good thing I'm not spitting when I'm talking .

            Checking in to see how everyone is doing!! I am doing great I have been exercising (huge for me) and I really hope I can see changes in those after pics! Last Night I tried to make eggplant parm. from linda site and I guess I just odn't like eggplant. It was squishy and a bit bitter and I really don't like all those seeds...Too bad to. I have had the carb loaded eggplant parm before and like it...oh well...I guess i need ot check so other recipes...I think I am going to try the Mockafoni and Cheese....I hope it is good!! Well Ta Ta For Now!

              If you noticed the seeds it was probably over-ripe, i've never noticed seeds and i have been craving eggplant for weeks and rarely find it, and when i do, its over-ripe.

              I add bacon bits and cheese to mine and grill until the cheese is crisp. yummmmmmm!

              Mockafoni cheese is my fave EVER, i cook it at least twice a week, I dont add as much sauce now, but i'll let you work out your ingredients on your own to your taste!

              well done on trying new things though!

                  Starr- Emma has me addicted to the Mockafoni. It is so good. DH & I almost ate the whole thing in one sitting .

                  As for the eggplant- there are male & female plants. Male eggplants tend to have fewer seeds, and are therefore less bitter than female eggplants. To sex an eggplant, look at the indentation at bottom. If it's deep and shaped like a dash, it's a female. If it's shallow and round, it's a male. Smaller eggplants also tend to be less bitter. I never knew this until a few years ago when watching the cooking channel and Alton Brown of "Good Eats".

                    I guess I will give Eggplant another try...How do you find a good one? should they be soft or frm....I read something about it being shinny..any clues about that??

                      Happy Thursday everyone, hope everyone is hanging in there! Rochelle that is great tips on the eggplant, I never knew that about the male and female. I am always so disappointed when I end up with a bitter one.

                        Here is what I found on the internet. Hope it helps oyu out:
                        Purchasing Eggplant: Smaller, immature eggplants are best. Full-size puffy ones may have hard seeds and can be bitter. Choose a firm, smooth-skinned eggplant that is heavy for its size; avoid those with soft or brown spots. Gently push with your thumb or forefinger. If the flesh gives slightly but then bounces back, it is ripe. If the indentation remains, it is overripe and the insides will be mushy. If there is no give, the eggplant was picked too early. Also make sure an eggplant isn't dry inside, knock on it with your knuckles. If you hear a hollow sound, don't buy it. NOTE: Whether or not there is an appreciable difference, I don't know.
