Ok, my book will be arriving at my house tonight. I am on Pre-mtce, and I have a question about the nuts in the challenge.

    No nuts?

    Seriously?

    My CCLL is around 55-60.

    I'm in.

I decided on no nuts and limited dairy as a way to take a break from foods that some of us tend to overdo. With a CCLL of 55-60 you may need to focus on carb dense veggies if you can get over 20 net that would be good. Any thoughts on how you are going to do the rest?

Re: Mini Boot Camp April 19-23. Sign up here

As it gets closer to the weekend and time to plan.
We will need plenty of eggs for this one I think. I suggest boiling some up on sunday ready for all kinds of emergencies. Maybe make some devilled eggs for snacks. Also for those who can jerky would be good do have. Cooking up some chicken or roast to have ready meat for snacks and easy meals and salads is also recommended. Plan to stock up on a good variety of vegetables. To do this challenge with clean eating whole foods will be a key. If you plan to eat anything other than whole foods study the list of ingredient carefully.

Make sure you have bacon without sugar and do not use mayo or salad dressing with sugars. So olive oil and vinegar may come in handy

Make your sugar free mayo if you do not have access to sugar free mayo: Here is one recipe
              Basic Blender Mayo
              (Makes 16 Tablespoons)
1 raw egg yolk (pasteurized in the shell egg if available)
2 teaspoons champagne vinegar or white wine vinegar
              1/4 teaspoon salt
1/2 lemon, juice only (about 1 tablespoon)
              1/4 teaspoon dry mustard
              dash cayenne pepper
3/4 to 1 cup olive oil
              1. Crack egg and put yolk only into the blender
              2. Add the vinegar and salt and blend on low speed.
              3. With the motor running, add all the remaining ingredients, except the oil.
              4. With the motor still running, add the oil in a slow, steady stream until it makes mayonnaise of the consistency you desire. Be careful not to add the oil too fast or add too much oil or you may break the emulsion and the mayonnaise will separate and clump.*
              5. Store in the refrigerator in a clean jar (good use for store-bought mayonnaise) or a container with a tight-fitting lid for up to a week.

Re: Mini Boot Camp April 19-23. Sign up here

My plan to survive mini boot camp:

Going to defrost my 15 lb. turkey on Thursday and roast it Saturday or Sunday. That will last me a lot of the week and give me lots of meal options too.

I am only using a 1/2 packet of splenda in my one cup of coffee each day and plan to reduce it a bit each day so that by Monday I'm not using one at all.

Going to stock up on veggies this weekend. I need at least 2 heads of cauliflower, a bit of jimica, 3 avocados, tons of leafy greens, new celery, tomatoes, cucumbers, onions and a few fresh herbs so my taste buds will be happy.

I also want to buy a bigger water bottle something insulated to keep my water cooler longer as it's starting to warm up here and I like my water crisp tasting.

And following Liv's idea. I think I will buy 2 dozen eggs and boil up at least a dozen for random snacks/devil eggs/meal on the run.

Think I won't buy any cheese. Because having it around makes me want to it it and if I keep eating my morning mock danish (with 2 oz. cream cheese and NO splenda) I won't have any allowance to have anything else anyway. I have enough cream cheese to last me the week.

I could maybe make an egg omelet instead of a mock danish and that will give me a bit more cheese for the evening....but I do so love my morning mock danish!

I think with that I will be set for next weeks challenge. Really looking forward to it.

Yeah, I like to have MUP in the morning, but it uses the cream cheese and the artificial sweetener so I will need to figure that one out. I will work on planning stuff on Saturday, and cooking/preparing stuff on Sunday. If I plan ahead, I should be fine...right? lol

This Boot Camp is just what I need right now. My weight loss has really slowed down and I think it is because I am getting a little complacent in certain areas (aka sloppy). This will be perfect to kick my butt back on track.

                      I'm in!
