Have you been reading the Veggie Challenge page? I think we're all about to try some new and interesting veggies!

My puppy is the best dog ever! They told us he was a corgi/pekenese, but we're convinced he's like 90% Tibetan Spaniel and maybe a little Chiuaua or Papillion!

Re: New to Atkins - can we do it? YES WE CAN!!

      ok ... here goes Janet

      Cheesecake recipe ( induction friendly)
packet of sugar free jelly ( I like to use the lemon one for this )
      1 cup boiling water
2/3 cup cream cheese ( at room temp)
      1/3 cup heavy cream

Dissolve jelly in boiling water - let cool ( not in fridge -- dont want it to set yet )
using electric beater beat together the cream cheese ,cream and cooled jelly mix
(careful - its a bit sloshy at first ) beat until all combined and smooth. Pour into 4 dessert bowls and set in the fridge.

      Clouds
      1 pack cream cheese ( 8oz)
1 stick of unsalted butter ( 125 g) dont use salted butter
      1 tsp vanilla essence
      1/4 cup splenda

beat cream cheese and butter together with vanilla and splenda until smooth ( i used my food processor ) Spoon teaspoons full onto baking paper on a baking tray and freeze. I piped nice rosettes instead of doing blobs- much prettier..
these taste a bit like cheesecake -- yummy. careful they are addictive!

      Chocolate bark

1/4 cup cocnut oil ( comes in a solid block)
      3/4 Tablespoon unsweetened cocoa
1/4 tsp liquid sweetner ( if using splenda you will need about a tablespoon)

mix all together then spread on a chilled baking paper lined biscuits tray ( i spoon mix into a metal patty pan tray.
Once you reach the stage where you can have nuts you can add chopped walnuts or flaked almonds( or other nuts) unsweetened coconut is great too ( make coconut rough!) you could also add a few drops of peppermint flavouring too. experiment!
Coconut oil is supposed to increase your metabolic rate and help you to lose weight. it is also claimed that it is very beneficial for your health and hair / skin . Not sure how true all that is but it sure is yummy!

MAKE SURE YOU COUNT THE CARBS ETC FOR ALL OF THESE RECIPES....

If you find that you get addicted to these goodies please excercise some control and dont let it ruin your quest! They are pretty rich and I find that a small amount is very satisfying.

      Cheers

        hey Silly,

have not been on these past 2 days but i just went through them now, yeah there are lots of good veggies inspirations out there and i love the mushroom ones. As i said i'm not very adventerous with my veggies as i dont like most of them but i have been trying a few here and there and i'm changing my mind about a few of them. Plus my hubby is a head chef and when he cooks he's trying to make them look much tastier..

I have been meaning to put my pic on and i will also include my westies.

        Take care,

Hi Janet --- yes the only cream cheese to use is PHILADELPHIA ( the block not the tub) Great to hear of your 5 lb loss ( i havent lost anything for a few weeks - I tihnk the Whooshie fairy has forsaken me !) Yes i have entered the Vege Challenge but I still cant get the old man brandishing "veges of mass consumption" to stick to my Signature! BTW -- why is he waving a CARROT? they are HIGH GI AND most of us wont be eating them until much later ! hmmmmm? TOM LATE ??? YIKES

Re: New to Atkins - can we do it? YES WE CAN!!

                hey guys,

I have decided to stay a little longer on the induction phase at least until i am certain that i am ready to go to phase OWL.

This WOE has been easy so far, i am eating 4 to 5 meals a day. I used to eat mainly 1 or 2 meals a day sometimes I ate a snack and 1 meal a day. I never ate breakfast in morning, but now i do breakfast everyday even if dont feel like eating it I do. I am never hungry so basically eating my food has become something that i have to remember in doing sometimes.

Veggie challenge is going good so far, my hubby has been of great help. I loved my veggie stir fried so much that ate it twice in a row this week. I'll end up doing another stir fry by the end of this week.....its thursday here.....

Finally, TOM is in town, sorry if i keep stressing this out but after 18 days of over due anticipation i'm really glad. i feel a little bloated today so I know that my weight loss will either come to a halt or increase a little until TOM has completely left my system.

it has been a struggle not to weigh my self everyday, i'm a bit of a scale addict. i'll try and weigh my self 1st week of may and see if any progress has been made.

How's it going for you all.

                Donna, greetings from sunny malta,

well done on your 1 kilo loss, YOU GO GIRL!!, so you must feel pretty glad that the scales have finally moved. Dont worry about the veggie man pic, as long as we both have the Cauliflower pic at the end you can do with out him. hey it seems that your veggie challenge is quite easy. take care

Re: New to Atkins - can we do it? YES WE CAN!!

                  Hi Janet ( waving)

Glad Tom is in town! enough to scare the pants off ya if you have not planned it that way! Yes finally the scales have moved ! My brothers birthday party was to blame I think -- I baked him a lovely Atkins Almond and lemon cake ( even the non-atkineers Snarfed it down! ) I probably ate more that I thought I should have that day - maybe the extra carbs and calories kicked my metabolism into action again . Maybe I should rename the cake the "WHOOSHIE CAKE" Things are still slow in the "weight loss on the scales dept " But its great to see things moving again even if it is only a little bit. My Jeans keep falling down and a almost lost one of my rings the other day ( YIKES) so things are definatively happening.I have also been taking coconut oil ( in the form of yummy chocolate bark) which supposedly revs up the metabolism. I know i havent been feeling the cold the last few days which is a sign that the metabolism is firing up( and it was freezing here last night)
I have given up trying to paste the vege man to my signature ! Crotchety old bugger wouldnt stick no matter what I tried! Ah well -- as Long as the Cauli sticks at the end I will be happy. Yes its a very easy challenge for me.
I bought an exercise DVD on Wednesday as its been pretty yucky weather here and not very good for walking outside .Now all i have to do is work out how to use my DVD player and I will be all set . I am rather technologically inept - thank god my partner is a techno GEEK!!!
                  Nice Pics Janet !

                        Hey guys,

veggie challenge is over and done with, at first it was a little though cause i dont like most veggies but hey i can actually say that i enjoyed every bite i ate. Hubby helped alot in this challenge.....with TOM in town i thought that i would feel bloated and that the scales would move up, but i'm happy to say that they have remained the same and i'm quite happy with that, i feel lighter and i have tried these pair of combat pants that i had bought hoping that they would fit....and now they fit and also zip up, OK yes they are still quite thight but compare to not zipping up, that's an accomplishment!! WHIIIIIIIIIIIHOOOOOO!! I am going to try and keep eating more veggies for my net carbs.

                        hey Donna,

I also bought a Cardio Excercise DVD and am waiting for it to arrive, i cant wait,. I hope you managed your DVD, we're in 2007 its about time you manage to use some of these gadgets sweet, its not that difficult .....I am going to start another challenge as i find they keep me on the right track of motivation. Its a 6 week challenge and it starts Tomorrow 1st May, its called The Atkins Attack challenge and apart form other rules it invloves at least 45 mins of excercise 4 to 5 days a week. Check it out http://www.atkinsdietbulletinboard.c...0&page=1&pp=30 I will keep you updated with my progress. Whem i'm in OWL phase i will ask you for your WHOOOSIE almond cake recipe..LOL

                        catch you later,
                        Take care

                            Hi Janet

I got my techo Geek boyfriend to set up the DVD for me -- its been great - it has 4 ten minute workouts for burning cals and carbs . You can do them individually or string them all together. I have been jumping around the loungeroom so much the house shakes!!! I am off to Sydney at the end of this week so i think i will take my DVD with me -- i think the hotel has dvd players. I am staying at Olympic park so there is a lot of nice walking areas there and it is a 15 minute walk to the venue where the fair is that I am attending( dolls house and miniatures fair - I build little things). If i spend the hour on the plane walking up and down the aisle does that count as walking from Melbourne to Sydney???? hehehe. That would look impressive on the challenge check in, but the people on the Plane might think I am a nutter and have me restrained !!!!

Re: New to Atkins - can we do it? YES WE CAN!!

                              hey Donna,

how are you? I'm not too bad my self. i have not been on lately cause my son was sick and i find my self pampering him more during these days.....the only thing i manged to do was update my 6 week attkins attack challenge and that was that.

So how was Sydney and did you manage to do your dvd work outs? both my dvd work outs have arrived and i am finding my self jumping and pumping and wiggiling all over the sitting room too....actually i have this Total Cardio Kick boxing one and its really a hit. My DH has also decided to do them with me, i have been doing them for a wole week and my body is already feeling the change.....firts of all i have been using muscles that i myself didn't even think i had...LOL....i'm in some pain right now especially when i sit down and stand back up....its good pain pain though cause it menas that my workouts are doing what they intend to do and move my whole muscle group.

I'm thinking of moving up to OWL now but i'm still a little unsecure of doing so, dont know y really cause its only 5 grms per week.....i think my problem is that my mum was in the UK a few weeks ago nd she managed to get me Ketostics and when i tried them they did not turn pink or purple.....so even though i'm losing weight my head keeps telling me that something is not going as it should.

My ATKINS ATTACK challenge http://www.atkinsdietbulletinboard.c...0&page=3&pp=30 seems to be going great, i measured my self and i lost a little over 8" all over my body.....isn't that amazing, i'm really looking forward to measure my self next Sunday. i have no idea what my weight is as i cannot weigh my self for another 5 weeks.......AND YES, IT IS SOOOOOOOO HARD NOT TO WEIGH MY SELF BUT I'M STICKING TO IT.
                              xx Janet xx

                                Hello Janet !

I had wondered where you were hiding -- hope your son is better. Sydney was fantastic. Sold a lot of little things and caught up with some good friends. I didnt take my exercise DVD as they did not have players in the hotel rooms . I did manage to eat only atkins friendly which was great. I took some unperishable foods with me and there was a macdonalds and a subway downstairs so they provided me with lots of salads and things for lunches. ONe night i had a lovely steak with veges at the fancy restaurant there . I did get some exercise though as i had to walk to the venue and back from the hotel everyday and did some weight lifting in the form of lugging suitcases here there and everywhere. There is not a lot of night life at olympic park so i spent my evenings soaking in a tub full of bubble bath and generally pampering myself before collapsing into bed at about 9pm ( VERY EARLY FOR ME!)
I forgot to take my laptop with me so couldnt keep tabs on my carbs and cals .I had to do a lot of guesswork, but the good news is i didnt put on any weight while I was away ( I didnt lose either but that was ok) I probably ate too many nuts ( even though i took little bags weighed out to try to control portion sizes) but i figured it was better to do that than to be hungry.
I am eating a lot more veges now ( did you notice I flunked out on the vege challenge?? how embarrassing !!! hahha)and I am keeping track of everything in fitday as I was not eating enough calories and put myself unwittingly into starvation mode ( hence the lack of weight loss for 5 weeks) Now that life is back to normal, things should start to get back into the swing of things and i am keeping my fingers crossed that the scales will show some losses (My pants keep falling down and my belt needs a few more holes which is encouraging) I still get on the scales every morning just to make sure i am on the right track -- I dont stress too much over it though so it is not a problem for me. Nice to hear from you ..keep up the good work
                                Donna
