Heidi, I'm still trying to think of some way to make a crispy shell for your spring rolls. Is there some sort of root vegetable you could cut very thin on your mandolyne and wrap the goodies in, and deep fry that might come out to the same consistency?
Perhaps turnip? I don't know how that fries up, or what the taste would be like, but I have seen recipes for making "chips" with them. It's too bad the water content in cabbage wouldn't allow for it getting crispy...maybe some other sort of "green" vegetable? I think I saw something once about frying Kale...but it would look very ugly.
