  • Monday nights dinner plans

    So, what's everyone having tonite?

    We're having BBQ'd chicken breasts, sauteed spinach (sauteed in bacon grease with bits of bacon) for me and cauliflower with cheese sauce for the man of the house (he hates spinach, more for me )

    Sauteed tofu (marinaded first then sauteed) with italian seasonings. The sides will be a small salad and green beans baked with butter and hot sauce.
    Female/32/Still too big, but getting smaller..

      Ribeye's that we should have had for dinner last night, but we got invited out last minute. I'm going to make a fennel salad to go with.

        ohh your sauteed spinach sounds yummy Mog! I was going to make creamed spinach but I might have to try yours out. Sounds yummy.

        Fried chicken for me. Chicken breast (boneless skinless were on sale last week, this week its thighs!) dredged in egg and piri piri And then covered in parmesan and almond flour.


        I have to tell you MoG.... I was in San Antonio last week and had lunch at a bar called Guadalejara (sp?) grill. They had YOUR shrimp on the menu, but added a bit of jalepeno in the shrimp! oh so good!

          Hamburger pie and spinach (prob the way MOG and I salivate over, lol), maybe caesar salads before.

              A chicken stew thing in the crockpot and a warm veggie salad made from steamed green beans, steamed asparagus tossed with lemon and oil. The veggie salad is really leftover veg from the weekend...need to use up leftovers somehow right?

                Sounds good. But I also make "firecrackers" I take a jalepeno slice it down the side, remove the white membrane and stuff a shrimp inside it and then wrap it with bacon and grill it! I also do them like that with cheese. Delicious!

                I did get some shrimp yesterday so this time I'm probably just going to do them with garlic basil and the bacon. But soon we'll have homegrown jalepenos and it'll be firecracker season again!

                  2big, how do you bbq almonds? That sounds good!

                  I never thought of mixing green beans and asparagus! That also sounds yummy Megs! We had roasted asparagus Saturday nite with Bernaise sauce for dipping...I LOVE those!

                      Fennel has a licorice/anise flavor. Heidi posted a Fennel Salad recipe a while back, and I'm trying to find it. That's what I'd like to make.

                        MOG I just place some foil on the grill and toss the almonds on it and turn them as they darken.
                        you can "sauce"them with either hotsauce and a fat like hot wings or your low carb BBQ sauce and then cook.

                          Ah, actually I've eaten fennel seeds, just never the fennel veggie part, so they taste the same I take it. I'll have to try it sometime.

                              Here's the fennel salad recipe.

                              "thin slice fennel with lemon juice olive oil and parmesan cheese"

                              Too bad i couldn't find fennel at the store.

                              So instead I'm making zucchini "spaghetti" with fresh chopped tomato, garlic, salt, pepper, olive oil and basil. If you guys don't have a spiral slicer, I highly recommend getting one. I have the one linked below.
