      So, what´s for lunch/dinner today??? Mine will be roasted chicken w/pickled eggplants

        For lunch I'm having a leftover chicken breast that I made the other night, coated with parmesean cheese and spices and baked in the oven and a Spinach salad with tamari sesame dressing and some zuccini slices.

        Dinner, I'm still undecided at the moment.

          Tonight we're cooking for the in-laws. The menu we're making is Pork Chops cooked in red wine and blackberries (and topped with extra blackberries), insalata caprese (italian appetizer; slices of mozzerella and tomato, topped with fresh basil and lightly drizzled with basalmic vinegar), and baby portabella mushrooms stuffed with gouda, fresh mozzarella, garlic, and diced mushroom stems. MIL is providing red wine to drink with our meal.
          No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.
