    Re: Monday nights dinner plans

Ok, this is only for people on OWL or maintenance - even though I have lost 40 lbs and have maintained for 2 years - I still need to lose another 25 lbs. This recipe is sooooo......good. I'm eating as I'm typing. This was in the paper last week. I don't have the exact measurements right now but will get them if anyone if interested. This is a combination of blackbeans, corn, red pepper, green onion, lime juice, olive oil, cumin, salt, pepper. It is amazing. Eating with low carb tortillias. So Good.

I'm on the road for most of this week, so I ate at the hotel....had a good dinner though! I had a side salad with Ranch dressing and Pork with melted provolone cheese and pancetta on it. It was very good...except the little bit of brown gravy on top...scraped most of it off!

Too bad i couldn't find fennel at the store.

So instead I'm making zucchini "spaghetti" with fresh chopped tomato, garlic, salt, pepper, olive oil and basil. If you guys don't have a spiral slicer, I highly recommend getting one. I have the one linked below.

Yea, I can easily eat the whole bag! I've never had green garlic! I am a garlic fanatic! Usually when I do my spinach with garlic I use olive oil to sautee it in instead of bacon though. I'll have to try that with the bacon. I have never seen green garlic at the store. Do you buy yours or grow it?

MOG, it's so cool. I like to use it with zucchini for "spaghetti".

I also like to spiral cut daikon radish and eat it with a bit of wasabi and soy sauce, and pan seared tuna.

Yep, Tell John it's all my fault!

Yep, carrots work too, but you've got to use BIG carrots.

                        Re: fennel

It's nice cooked too. One of my co-workers brought a chicken and fennel dish to the weekly lunch potluck. Real easy. Slice two fennel bulbs, toss with olive oil, put in the bottom of a baking dish. Bake for 10 minutes at 350 degrees F. Then take it out of the oven, arrange chicken pieces (she used legs) on top, salt and pepper. Throw it back into the oven and cook until the chicken is done.

Green garlic- its my first time trying it as well. One of the organic vendors at the farmers market had some and RAVED about it. It looks like large green onions. And smells like a mass of garlic. and has a fabulous garlic flavor. Id recommend trying the farmers markets in your area to see if anyone knows what it is. I threw some in whole to a green bean 'soup' I made this weekend and it added a very mild flavor, very VERY nice. Its mild enough to eat raw (would be awesome dipped in an artichoke dip), stands up WELL to simmering and sauteeing and I found a new veggie that I love! lol.

                              That sounds good Megs!

Tired of Chub, it sounds very yummy, I will have to keep my eyes peeled for it! I'm going to Whole Foods at lunch today, they might have it, I'll check. I found a great line of Atkins friendly salad dressings that I'm going there to get anyway.
