    I made the chicken parmesean for dinner. I love the fried chicken with the almond flour! It browns up so nice and quick. John liked it. But he wanted a lot more sauce even though I put about 3 tablespoons on each breast instead of 1. We also decided that it could use more garlic--but then again, we always want more garlic

    Thanks for posting the recipe Barb, its definatley a keeper.

    Oh and IMO this would make a great breading for fried fish, the almond flour has the same consistency as corn meal. I think I'll try it with some Old Bay seasoning in it - I might even do some fried shrimp!

      Oh yea, I used 2 eggs as well. And the recipe says it will do 3 whole breasts, I did 3 one half breasts and it used up all of the coating just for those--I did pound my chicken out though so it was flatter than your's looks in the pic so I guess there was more surface space to cover.

        Oh, glad you tried and liked it Mog. I didn't flatten mine out. I was in a rush. LOL. And always, always, alway more garlic! I used more sauce too, than the recipe called for. Woohoo! I have been thinking about cheese sticks since you mentioned it. Tony loves those, he would be in heaven.

          I made this also, except I didn't have almond flour, so I pummeled raw almonds as best as I could. They were a tiny bit chunky. Hubby liked it a lot. He said I'm allowed to make it again. lol

            That's cool MissPhode, John said it was a keeper recipe as well! You know I bet it was good with the almonds more chunky to, that way would probably be good on fish too, there are a lot of nut encrusted fish recipes out there - the 2 flavors go well together.

            Barb, next time I'm going to use a lot of my own homemade sauce with a load of garlic in it! John said to try it with my pizza sauce next time.

                  Yea, I meant to take a pic the other nite! But darn it we were hungry and started eating before I remembered LOL. Homegrown tomatos are coming soon, so fresh homemade sauce is in the near future!

                        I don't bread my crab cakes but I really want to try Soft Shelled Crabs! Of course I'd have to use different spices but I have just the recipe for it! I can't wait to see if I can find any soft shells at the store.

                                I have eaten soft shelled crabs twice in my life and they were to die for!!!!! YUMMMMMMMMMMM!!!!! I wish I could find them for a reasonable price here...but they are far from that!!!
