  • low carb latke recipes

    I love latkes and am known for my wonderful crispy traditional ones ...I am having a Latke party coming up ...I would like to have a variety of options this year so if you have any good recipes for low carb latkes would you please post them?
    including how they are cooked...

    I have done one with zucchini and it was not great but not bad ...

    anyone ever do a parsnip latke?


    what else can I shred up and turn into a fried pancake?

    and what else besides applesauce and sour cream would you use for toppings?

    I am all about pushing the envelope you know

    For Maintenance or Pre-maintainance, try the parsnip idea. If potatoes are in your maintenance menu, you can do potato-parsnip, potato-carrot or potato-zucchini--just enough potato to add some starchy stickiness and crunch.

      I saw a recipe for sweet potato latkes recently, i will try to find it. I think it had both white and sweet potatos, mostly, but i'm thinking maybe you could sub parsnips or turnip for the potato?

      Just not sure how crunchy sweet potatos can get when fried.

        Oh! I can't wait for the answers to this question, my kids are bugging me to make them this weekend. At first I said I didnt think so, but I don't have the heart not too do it. I would love to try something I can use with Atkins.

          While looking for the sweet potato recipe (which i haven't found) I found this:

          Chunky Pear Applesauce

          Give latkes a zing with this spiced pear applesauce. For an attractive presentation, you can leave the spices in the sauce. Use a sweet-tart apple that softens easily, such as McIntosh or Gravenstein.
          Ingredients


          2 pears, peeled and cored
          2 apples, peeled and cored
          2 tbsp (25 mL) lemon juice
          4 tsp (20 mL) granulated sugar
          Pinch salt•
          6 whole cloves •
          2 whole star anise •

          1 stick (about 2 inches/ 5 cm long) cinnamon

          Preparation

          Cut pears into bite-size chunks; chop apples. In small saucepan, combine pears, apples, lemon juice, sugar, salt, cloves, star anise, cinnamon and 2 tbsp (25 mL) water. Cover and bring to simmer; cook for 10 minutes. Uncover; cook until pears are very tender and apples break down to make thick sauce, 12 to 15 minutes. Let cool. (Make-ahead: Cover and refrigerate for up to 3 days; serve at room temperature.)

          Nutritional information

          Per 2 tbsp (25 mL): about 24 cal, 0 g pro, 0 g total fat (0 g sat. fat), 6 g carb, 1 g fibre, 0 mg chol, 0 mg sodium. % RDI: 1% iron, 2% vit C.

            OK I figured out what magazine it was. Here are a couple that sound really good:

            I'm wondering what a good sub would be for the flour, maybe ww flour or oat flour?
            Sweet potato pancakes

            Nutrients per latke
            1.8 g protein
            6.8 g fat
            14.5 g carbohydrates
            1.1 g fibre
            0.5 mg iron
            15 mg calcium
            109 mg sodium
            125 calories


            Preparation time 15 minutes
            Cooking time 5 minutes per batch
            Makes about 18 latkes

            1 medium-size onion
            2 medium-size sweet potatoes, about 2 lbs (1 kg), peeled
            2 eggs
            3/4 tsp (4 mL) salt
            1/4 tsp (1 mL) ground white pepper
            5 tbsp (75 mL) all-purpose flour
            1/2 to 3/4 cup (125 to 175 mL) vegetable oil

            1. Slice onion in half. Grate potatoes and onion using large holes
            on box grater or medium-size grater disc in a food processor.
            Place in a large bowl. In a small bowl, whisk eggs with salt
            and pepper. Pour over potato mixture. Sprinkle with flour.
            Using your hands, mix well. Line a large baking sheet with
            paper towels. Heat 1/2 cup (125 mL) oil in a wide frying pan
            over medium heat. When hot, but not smoking, scoop 1/4 cup
            (50 mL) mixture into your hand and pat down. Place in hot oil.
            Add 3 more scoops, leaving space in between. Using back of a spoon,
            flatten into rounds, about 3 inches (7.5 cm) wide.
            Fry until undersides are golden, 2 to 3 minutes. Turn.
            Continue frying until edges are crisp and brown, 2 to 3 more min.
            Remove to paper towels. Repeat with remaining mixture.
            Add more oil, if needed. If edges brown before centres are cooked,
            reduce heat to medium-low. Pat tops of latkes with paper towels
            before serving.

            Zucchini-and-carrot latkes
            Here are Toronto dietitian Marsha Rosen's colourful crunchy latkes.

            Makes 8 latkes
            2 medium-size zucchini
            1 tsp ( 5 mL) salt
            2 carrots, peeled
            1/2 medium-size onion
            1 garlic clove, minced
            2 tbsp (30 mL) chopped parsley
            1 egg, beaten
            1/2 cup (125 mL) all-purpose flour
            1/4 tsp (1 mL) each of salt and black pepper
            2 tbsp (30 mL) vegetable oil

            1.Grate zucchini and place in a colander over sink.
            Stir in 1 tsp (5 mL) salt. Drain. Meanwhile, grate carrots and
            onion into a bowl. Stir in garlic, parsley and egg. When zucchini
            has drained 15 minutes, scoop up handfuls. Squeeze out all liquid
            and discard. Stir into carrot mixture. Stir flour with salt and pepper.
            Stir into carrot mixture. Heat 1 tbsp (15 mL) oil in a large frying
            pan set over medium heat. Fill a 1/4 cup (50 mL) measure with latke
            mixture. Turn into hot oil. With a fork, spread into a 3-inch (8-cm)
            round with uneven edges. Repeat process, adding 3 more latkes to pan.
            Sauté until golden, turning once, from 1 to 2 minutes per side. Repeat
            with remaining oil and latke mixture.

              OOh....the zucchini Latkes sound great and I'm assuming can be done with Almond flour for lower carbs in the higher OWL rungs.

                Thanks sounds wonderful! I am going to try them this week (on my day off) and see what happens ...it is such an art I think to making a perfect Latke!..they are so good...I like potatoes crispy otherwise I am just not that big a fan that I really want to risk the extra carbs on that particular starch....I use cassava and plantains instead..they have way more flavor ...(hmmmm I may have to try a cassava or plantain latke)........ I used to watch my grandmother do them when I was little ..hers were of course absolute perfection!...and it took years to perfect them myself ..I dont think any other veggie would be as crispy because of the starch (except maybe the aforementioned cassava or plantain or other yammy thing)...but they sound good so what the heck ..variety is nice in life I think...

                I do love sweet potatoes I can not wait to try them

                  they were ok but sucked up a lot of oil and are not crispy at all..but then how could they be since they are a zucchini? .. they were just a pancake .....good but just a pancake not a real latke I was disapointed

                    I've tried to make zucchini hashbrowns as well and they don't work either (it's basically fried zuicching mush), they tasted good but nothing like a potato hasbrown. I thought the carrots might help in this recipes

                    I'm not sure if almond flour would work for this recipe? I can't see it having the proper consistency.


                    Did yous see the chunky pear applesauce dip recipe Heide? I think it sounds wonderful.

                      I agree on the almond flour I think it would burn as well

                      maybe parmesan cheese? or GOD FORBID ...FLAX

                      please keep them coming you guys no idea is too unusual for me to try!

                          I saw a really good recipe on food Network once...I think it was that Calorie Commando show, but I can't find the recipe. Here's one I've found that does look good though...

                            CAssava should get crispy (they make cassava chips right?)

                            You could try using only the egg white (save the yolks for Hollandaise sauce!) and maybe using a tablespoon of tapioca starch. Tapioca starch would be okay for Maintenance.

                              I've seen ground cassava in the freezer section of my grocery store and have wondered what it is and what you do with it? so it's like a flour?
