    No it's more like a root veggie. The only way I've had cassava was as chips (deep fried like potato chips) and as a dessert cake (totally Atkins unfriendly---sweetened condensed milk, sugar, etc.)

      cassava is actually the root that makes tapioca in the first place ...never been a trigger for me even though it is starchy and white ..that and green plantains thank goodness no problems...

      ..and yeah Megs that cassava cake we both love so dearly ...very dangerous I made one for work (again) recently ...and ..well ...slippery slope after eating a piece all I could think about was eating MORE!!! ...I am glad we got busy and it was gone before I felt compelled to take the cake in the back room and demolish it myself!

        Jenn I used that ground cassava for a lot of stuff that needs binding or a starchy thing in it...and will drain it and use it for the latkes for sure it is easier than grating it ...that is one hard root to grate ..

        Higgies thanks so much I am not a fan of either of those veggies but never say never and I will try it and see ...I want to have a big spread with lots of options

          Ooo Heidi, about a month ago, I went to a friend's birthday party. His wife is half Filipino and her mother made that cassava cake. I had to close my eyes and pretend it wasn't there. lol.

          But try using tapioca starch to hold the veggie together.

            You don't like zucchini?!?!?!?! Oh...I don't think I can answer you ever again then...

            Oh, that's the cauliflower one...yeah, I'm not too crazy about that one either. I'll try to find the calorie commando one...

                Hi Heidi,
                This is interesting, I was just trying to think of Latke vegie alternatives this weekend. I am just starting Phase 2, so it is really important to me to not have the starches. The plantain and cassava sound yummy! I was thinking chayote, celeriac and parsnip. I love parsnip fried, but I am not sure I can even have that on Phase 2 yet. I haven't gotten around to reading up on it. I finally finished school tonight. So, I went to both our big stores after I finished my exam, about an hour ago and neither had celeriac out, so I will look tomorrow.
                If you try either one let me know how it is and I will do the same.

                As far as toppings....you are gonna laugh. My family always preferred the sour cream and sometimes we made pepper sour cream. White green and red peppercorns freshly ground and so heavy in the sour cream that it was not white. MMMM very good actually.

                  no no no I love zucchini !!! it is one of my favorites!!!

                  it is the caulifower and turnip one but I think you figured that out the idea of those two things in a latke ..well ......um.....

                  I am going to check the other one you found when I wake up tomorrow right now I am going to fall over and die from exhaustiion !

                    we always ate it with sour cream and pepper never applesauce as kids ...I learned about the applesauce as an adult ..I am loving the idea of the mulitcolored peppers YUMMMM thanks so much!!!!

                      Heidi, today's Washington Post Food Section has a recipe for Cabbage Latkes. It's not suitable for Induction because it uses flour (soy or whole wheat)

                      The Post is finicky about it's online content. But I looked around and found this site with the same cabbage latke recipe.

                      There's no way about getting around the flour. The flour helps it to stick together and it helps it to get crispy. Oat flour might work. But again, it won't be suitable for Induction.

                        not low carb but I can work with it ... check this recipe out ...curry and sweet potatoes ...omg I can do this


                        • 1 lb sweet potatoes, peeled and grated coarsely
                        • 1/2 cup all-purpose flour (leave it out or something else)
                        • 2 tsp. sugar (leave it out)
                        • 1 tsp. brown sugar (leave it out why add sugar the sweet potatoes are very sweet and it would just increase the chances of buring imho)
                        • 1 tsp. baking powder
                        • 1/2 tsp. cayenne pepper
                        • 2 tsp. curry powder
                        • 1 tsp. cumin
                        • salt and freshly ground pepper
                        • 2 large eggs, beaten
                        • 1/2 cup milk
                        • peanut oil for frying
                        In a bowl separate from the grated sweet potatoes, mix the flor, sugar, brown sugar, baking powder, cayenne pepper, curry powder, cumin, salt, and pepper.

                        Add the eggs and just enough milk to the dry ingredients to make a stiff batter. add the potatoes and mix. The batter should be moist, but not runny; if too stiff, add more milk.

                        Heat 1/4 inch of peanut oil in a frying pan until it is barely smoking. Drop in the batter by tablespoons and flatten. Fry over medium-high heat several minutes on each side until golden. Drain on paper towels and serve.

                        Yield: 16 3-inch pancakes.

                          Why would anyone add sugar to sweet potatoes? That is weird.

                          If I can escape from the office during lunch, I'll buy the ingredients for the cabbage latkes and give them a try. I figure I can sub oat flour for the whole wheat/soy flour.

                              I have all the stuff I need lined up and one more long shift at the clinic tonight ..I plan to get up at the crack of dawn ..have a complete neurotic nervous breakdown ..then clean my house rapidly (we had a storm/power outage mind you) ...prepare the following

                              warning I am going to mention high carb food here

                              hummous
                              matzo crackers
                              and a roasted Kosher style antipasto platter

                              slow roasted brisket with dried cherries, apricots and figs.. carrots celery and onions...cumin ...coriander and a bit of curry and lots of fresh cracked pepper (and what ever other spices strike me)

                              on a platter I will alternate the following latkes (thanks so much you guys!)
                              spicy sweet potato

                              regular ones made with russet potato
                              parsnip

                              and some zucchini pancakes what they heck they look nice color wise with the other ones ...white orange green and parsnippy color ..

                              for sauces I am going to make a scallion sour cream, a chipoltle sour cream, the chunky pear one above ..and a chutney one I am going to just make up as I go

                              tossed salad

                              ok really don't look if it will tempt you

                              but I have to make the traditional jelly doughnuts and I do...from scratch..and can do it and not eat a single one it is so fun for me

                              unsweetened pizza dough deep fried with jelly shoved in them and rolled in vanilla sugar....stacked like a tree on a plate

                              and lots of kinds of fruits, figs, pomegranites , oranges (Barb sent me two from her tree ) and desert cheese

                              how does that sound?

                              cooking it is almost 100% satisfaction to me ...watching them eat and enjoy what I made a billion times more OOOXXX

                                nice menu. Lots of variety, too.

                                I say if you can avoid eating the high carb stuff, serve it to your guests and just eat around the carby stuff.

                                I have the stuff for the cabbage latkes but haven't made them yet. I'll try them out tonight.
