  • What's for dinner?

    It's cold and snowy here so I felt like some comfort food. Made chilli for tonight. I had all the ingredients on hand and it's a very easy one pot meal:

    pound of ground beef
    1 can diced tomatoes
    1 can tomato sauce (make sure it's sugar free)
    about a cup of chicken stock
    1 red and 1 green pepper diced
    I onion chopped
    1 can of kidney beans - optional (only for OWL legumes rung)
    tbsn chilli powder (or to taste)
    tbsn cumin
    tabasco or cayenne for heat - optional. I use the chipotle tobasco gives it a smokey flavour
    salt and pepper to taste if you need it.
    you can also add tomato paste to thicken but if cooked long enough i find it doesn't need it

    Brown ground beef and onions in a deep skillet and when cooked drain fat. add remaining ingredients either in skillet/pot or slowcooker and let cook for at least 2 hours. top with shredded cheddar.

    Bf and I are doing leftovers with grilled chicken tonight, so we're making a mixed greens salad with bacon, grilled chicken, cheese, pecans, and dressing.

          Tonight was pepper and onion beef stew - a great recipe from my Low Carb Slow Cooker cookbook, which is quickly becoming one of my favourites!!

            I'm at my MILs tonight, so don't know what she'll cook... but it'll be yummy and legal. Probably some kind of fish or shellfish, maybe an Italian type veggie souffle... possibly some potato free russian salad... could be an eggplant parmigiana... or meatballs...

            I know her repertoire well and it's always delicious. One of my fortunes in life is having a Roman MIL... at least cooking-wise!

              well... last night was a salad of onion, spinach and bacon with a hot vinegar dressing.


              Tonight... hard telling. buffalo burgers sound yummy though.....

                Swordfish steak. I haven't decided on a veggie yet: but it's either going to be snow peas or zucchini.

                      I cook on Friday....beats trying to figure out if something is "okay".

                      Tonight for dinner, I'm having a pork chop. I was going through an old(ish) recipe book in the library this morning and found a recipe for "chop suey salad. It's a combo of raw slivered snow peas, bean sprouts, shredded cabbage, carrots, and green onion, that is tossed with a little soy sauce, minced ginger root, and salt and pepper. With the exception of the carrots, it's Induction friendly.

                      I changed the dressing a little by adding some toasted sesame oil to it.

                        I am making a recipe my mother gave me. She said that it is REALLY good. Chicken with tomato-basil cream sauce. If it is as good as she says i will post the recipe in the main dish forum. Going to serve it with steamed cauliflower.

                          My mother in law and sister in law came to visit. Even though I'm on the maintenance phase, My sister in law is doing Atkins so I made it a pretty friendly meal. I made Lindas deep dish pizza.. mmm yummy! Side of salad and bacon wrapped poppers for an appetizer. I think she was impressed that it doesn't always have to be meat and a salad.
                          I sent them home with left over's so not sure what's on the menu for tonight. My 5 year old son however is asking me for more pizza... go figure! lol
