I actually made it for lunch earlier this week. It was SOOO good that I decided to make it for dinner tonight so hubby can have some too. I used 4 cloves of garlic as the recipe indicates for me, but I'll use a little less when I make it tonight because hubby likes garlic, but not as much as I do.

It's best if the dressing chills for a few hours, and it will get runny as the cucumber losses it's water. It's close to the sauce that is served on Gyro's.

Suzy, I have your delicious Greek dressing sitting in the refrig waiting for dinner, the "finger sweep taste test" was good and I know when it's time to use, it will be better.
              Thanks again

                    Re: What's for dinner?

I had a wonderful quiche made with all the little partial packages of fresh veggies left in the refrigerator.

I should have had a salad with it... I am still not getting enough veggies. But I'm coming down with a cold and simply couldn't bear spending the extra time in the kitchen making a salad. How is that for lazy?

                    I WILL do better tomorrow!

I made an awesome seasoned chicken breast fried in olive oil and sauteed mushrooms and green beans...the butter makes it better!! It was goooood! First time in forever that I've had green beans...they're here to stay!! I'm trying to increase my carb intake and they should help!

I just picked at leftovers tonight, but I also started tomorrows dinner. Beef Short Ribs. Yum! I'll serve them with "riced" cauliflower.

I hope you're not getting what I am just getting over. It's rough! I'll spare you the dirty details since this is a food thread. I hope you have Vicks, NyQuil, hot chicken broth, and plenty of rest.

Ooooh...the short ribs were GOOD. Not induction friendly though. They're made with wine. MMMMMmmmm.
