    Re: What's for dinner?

We had London Broil with sauteed mushrooms & onions & butternut squash cooked in brown butter. Yum yum. Actually, the london broil didn't turn out as good as it usually does. I usually sear it in my cast iron skillet on the grill burner outdoors, but we were out of propane so I had to broil it. Oh, I was also out of horseradish, and I ALWAYS eat my london broil with horseradish sauce. Oh well, it wasn't the worst dinner ever.

          Re: What's for dinner?

Tonight I made Rao's Famous Lemon Chicken.

I modified the original recipe a little by using all bone-in chicken thighs rather than a whole split chicken & I "fake broiled" by baking at 425 for 30 minutes in a shallow pan, and then cranked the oven up to 500, added the sauce, and baked about 15 minutes more.

GMA Recipe: Rao's Famous Lemon Chicken

This turned out great. I made a salad to go with it. The salad was as follows:

          1 large ripe tomato, diced
          1/2 english cucumber diced
1 yellow bell pepper, seeded & diced
          2 ounces Bulgarian Feta

Combine in a bowl with Extra Virgin Olive Oil, salt and pepper and a squeeze of lemon juice.

          Very good meal.

            Did I kill this thread??

Well, I'm going to ressurect it then. Last night for dinner we had:

Ribeye Steaks on the Grill (my favorite)
            w/ horseradish sauce
            Sauteed Mushrooms & Onions
            Roasted cauliflower

This thread makes me hungry! Well ... everything makes me hungry ... plus y'all give really good suggestions; it's so easy to get caught in a rut. So tonight we're having pork spareribs, cooked in the crock pot with onion and broth, served with a big ol' salad and probably some broccoli with a bit of sesame oil.

I had some jalepeno poppers last night.

Jalepeno halves filled with cream cheese and bacon, topped with shredded cheddar and baked for 15 min. delicious. Only had 2 halves cause of all the cheese.

In addition I had a hamburger patty. Not sure what we are having tonight but it has to be quick and easy

                  Re: What's for dinner?

I had a hamburger patty with bacon, onions and smoky gouda cheese. OMG it was the best. Tonight Im going to have a portobello mushroom pizza if the mushrooms look okay and not to expensive. If that doesn't work, I precooked some chicken last night so I'm going to have a Chicken, Bacon, Lettuce and Tomato Salad.

We had flounder. I sprinkled it with cajun seasoning and broiled it. I made steamed broccoli on the side. An hour later I was hunger, like I usually am when I eat fish.

I guess I broke the thread again.

                      Last nights dinner:

Grilled NY Strip Steak topped with mushrooms sauteed in butter.

Broccoli Rabe sauteed with a squeeze of lemon, a drizzle of EVOO, a pinch of Herbes de Provence & a grating of parm cheese.

Sliced tomatoes with fresh mozz & basil from the garden.

Tonight's din-din: Smoked turkey sausage with onions and green peppers (my husband gets cornbread on the side w/his); and a simple tomato salad.

I follow this guys blog who cooks in a dutch oven and he had a recipe for potatoes, asparagus and salmon, so I tried it with cauliflower and it was really good for a one pot meal,
I cooked the cauliflower, added the asparagus and the salmon and then cooked them all together. It was okay.

Braised short ribs---made them last night in the crockpot, having them tonight for dinner. I haven't decided on the veggie yet, but it will probably be asparagus.

Megs. Let me know how they turn out. I made the best braised short ribs last month. It was my first time making them, and first time eating them. They were easy, but of course, time consuming. We ate them with pureed cauiflower. Here's the recipe. I copied this from a post on Chowhound.com. I only used half the wine. It was a Zinfendal (sp?) (not white).

Season ribs and brown 3 meaty sides in olive oil and remove from dutch oven.

Toss in a few handfuls of roughly cut onions and saute for 5 minutes. Throw in some thyme and (preferably fresh) bay leaves. Drain a bottle of thick red wine in the pot and stir in a small can of tomato paste. Return ribs to pot, add some kind of stock so ribs are mostly covered, put a tight lid on it and cook in 350 oven for 2-1/2 hours or so. Either rub sauce through a sieve or not.

These are, miraculously, amazing. I've made short ribs many ways (mostly far more complicated) but this simple version results in a most satisfying pot of ribs and sauce.
