    Beefburger with cheddar, mixed salad leaves, toms, olives, gherkin, mayo, onion, and red pepper. A bit basic tonight but very good - who needs a bun? Greek Yoghurt with a sprinkling of sweetener to follow.

        I've so rarely had really yummy dishes since starting this WOE. I cooked up something tonight that was FANTASTIC!!!

        First, I cooked boneless skinless chicken breast strips in olive oil. I kept the pan covered and the chicken was soooooo moist and juicy! I reheated some spaghetti squash in the microwave. Then, I had my first tomato sauce experiment. I threw tomato sauce, minced onions, parsley flakes, butter and parmesan cheese in a pan and heated it until it was simmering and all the parmesan was melted. I put the spaghetti squash in the bottom of the bowl and topped it with chicken chunks. Then, I drizzled the sauce on top. It was absolutely delicious!! It was one of those dishes where you sit back and KNOW, YES, I CAN eat this way for the rest of my life!!

          Hubby & I split a huge grilled ribeye steak with sauteed mushrooms, sliced tomatoes, and a little ricotta with stevia and cocoa for dessert.
