Whoot -- good for you Kathy!! Glad you are hydrating everyday - believe me I can tell when I drink less than 100 oz daily ad it's not a good feeling.

There were storms all around us over the weekend - one touched down a half mile from where we use to live and one of the main streets is still closed due to downed powerlines and trees. We had a couple small limbs and lots of leaves that came down but other than that nothing that bad here - thankfully! I've been through 3 tornadoes - one we ended up a half mile from where we began - so I am leary of them but also know you can't keep them from happening, so you learn to live with it...like hurricaines or earthquakes.

We didn't do much since it rained all weekend - we have just over 2 inches of rain and more on the way this week. It's colder than normal - in the high 50's - but after having 80 and 90 degree weather it's cold! LOL

Even though we didn't do much I made good food choices - I made a version of TJ's pizza for lunch today - the reason I say "version" is because I had the wrong cheese (should have had queso fresco but I used queso chichuhua) and I used my homemade spaghetti sauce in place of pizza sauce. It tasted good but I couldn't hold it like I did when I used the correct cheese. Along with my pizza I had a small salad w/ranch dressing. For dinner I had pork roast veggie soup out of the freezer, 2 slices of deli ham with my sour cream dill dip and 1-1/2 oz of steamed broccoli. So far I've had 4 34oz cups of water today and still drinking.

The hubs is going to the dentist - we went last week and after discovering our insurance had changed we had to jump through hoops and went to another dentist this morning. He needs 2 root canals and has 4 cavities. They cleaned & polished his teeth today and we go back next week for 2 of the cavities. Tomorrow he sees a specialist to have the root canals done - the bad one is absessed and is calcified so this dentist said it's tricky and needs someone "better than me".

I'm going to make alfredo sauce this week - I've never had it but it really sounds good the way Linda's recipe sounds so I'm going to try it over zucchini noodles. I think tomorrow is going to be a shrimp cocktail lunch - I had one last week and it was so good!

Well, that's enough out of me for today. My blood sugar numbers were real good today. I'm hoping to be able to start walking as soon as I talk to the poditrist next week - hate not being able to!

Ok - I hope you have a great evening and wish you a wonderful tomorrow!
      Carole

Hey Carole, so glad you're okay!! The pizza sounds good...I have some of the queso fresco ....hmm I'll have to check that out!!! Sorry you had to change dentists cause of insurance change...that always drives me nuts!!! Hope the rootcanal goes okay, their always fun...(not!!) Have to go drink more water now and start dinner! I have left over taco meat from last night...ground beef, 1/2 onion, 8 oz can of El Pato tomato sauce, with fresh grated sharp cheddar and lettuce and tomatoes...no tortilla's though. But it's spicy from the El Pato. Have a wonderful evening and a great tomorrow!!!

Yum Kathy!! I love having taco salads -they are one of my favorite meals. Yesterday I had a shrimp cocktail with vegetables for lunch and today I had another slice of pizza and a small salad for lunch. We're having sauerkraut and polska kielbasa for dinner - I love that meal....we fry the sauerkraut and it takes so much of that sour taste out of it.

The hubs had his root canal yesterday during his lunch hour. By time to go to bed he was hurting pretty bad and through the night he was owly. Hopefully he'll be feeling better tonight or by tomorrow. This tooth was calcified so he had to go to a specialist to get it taken care of. The other tooth that needs a root canal isn't as bad so the regular dentist can do it along with the 4 cavities he has. Hopefully he can get his mouth healthy again - it's not good for a heart patient to let their teeth go.

Ok, I'm off to find something to do. We are suppose to have more rain the next few days so I mowed the lawn today so that is taken care of.

          Have a great day.

Gee Carole, you can mow my lawn you know, hahahaha!!! You have so much energy it's unbelievable!! Hope your hubby feels better soon, nothing like a toothache to take the happy out of any day. I never fried sauerkraut! Never knew it took the sourerness out of it....(boy, please ignore my spelling!!) I will try that. Am off to the store (normally go on Thursdays, but the little princess cat is out of food, and you don't want to let that happen, hahaha!!) Talk later,
            Kathy

Well, I should have checked my pantry....I didn't have any sauerkraut so I ended up having polska kielbasa with spinach and 1oz snow peas and 2oz broccoli. It was still a good meal and I wrote sauerkraut on my grocery list.

Kathy, drain the sauerkraut and put it in a skillet with whatever oil you want to cook it in --- when it's starting to brown turn it over and continue to cook until it's completely lightly browned - I like to add a little butter on top, cook it a little longer and serve it. It tastes so much better than just heated out of a can or the package.
I do the same thing with cabbage only I add a little onion and fry it -- it tastes wonderful!!

I have many things on my to-do list but have no idea what I'll end up doing today....right now I'm having breakfast and pondering my day! LOL

              Have a great day.

Hi all! I'm glad to see the thread is still active because I like coming here.

I'm on day 11 of a clean induction and have lost 7 lbs. so far. I'm amazed at how easy it is. I don't even think about eating until my stomach growls! Yesterday I made a Corned Beef Brisket and tonight we are having steak. I feel so much better now that I've gotten away from the carbs again and I can't imagine what made me start eating them again. Well, now that I think about it, it was because I sprained my knee in January and got the flu. So I was taking cough syrup and couldn't exercise so I guess it was just a comfort thing. But I'm back on plan and loving it.

Well, I'm on my way out to plant potatoes. Have a great day!

Carole, thank you for the cooking inst. on the sauer kraut! I use to eat it alot in NY and since I've been out here in S. CA, not as much! But I miss it! Last St. Paddy's day I did do the cabbage with the bacon... OMG it was sooo good! Didn't miss the fact that we didn't have the corned beef!!! All that low carb green beer helps, too!!LOL...only kidding...I drink green wine....

I always cook sauerkraut with spare ribs. I brown the ribs in oil in a Dutch oven then add the kraut and some hot dogs or kolbassy. The meat really gives the kraut a great flavor and then it's served with applesauce on it to sweeten it. Of course, I skip the sauce now. But saurkraut is one of the foods I actually get cravings for. With most people it's pizza but not me! I love my kraut!

I'm a kraut lover also -- I grew up eating a lot of it. We also ate creamed turnips, rutabaga and parsnips. I'm surprised my mother didn't fix greens, but spinach was about the only green we ever had. I bought a package of frozen collard greens and am looking for a way to cook them. I'm thinking of steaming them with a little bacon grease and maybe a slice of bacon in it for flavor. If anyone has any ideas let me know -- I need help with this one! I decided to go with frozen since I've never had them so in case I didn't care of them I wouldn't have a lot left over and if I don't care for them I'll add a little to soup or whatever until the package is gone.

We had bad storms go through again last night so I'm a little tired today. I managed to vacuum the house and clean the kitchen (OMG it was horrific!) but that's about as far as I got. I'm a little lightheaded today - my sinus' are driving me nuts and the lightheadedness happens with sinus pressure.

I'm hoping for better weather tonight so I can get a good nights sleep. Hope everyone is having a great weekend.
                        Carole

Ribs do sound good...haven't had those in a long time! Will have to get a package the next time I go to the store.

Today was the last day of my re-induction so tomorrow morning I get up and on the scale and take measurements. I'm not feeling much different so I'm hoping for the best but not expecting too much.

Have a good evening -- and good thoughts for a great new week!

Hi Carole, I've been doing good all week, with the exception of two things.....
                              1. not eating enough...(that never happened before Atkins, LOL) and
                              2. not drinking enough water,
Because of these two little things...I gained 2 lbs...... 1 lb for each of those two things.....(not scientifically (oookkaayy.. i cannot spell) but I finally realized (okay, i am not smarter than a 5th grader since I can't spell!!!) that even though I don't eat alot, and without drinking enough water, I will either stay at the same weight or gain!!! This somehow proves to me that it is not calories at all....if I eat LESS than I normally do, or less in carbs....that and the less water intake somehow causes the big stall or gain....hmmmm. Anyway...sorry for the ramble, but just thinking out loud as I go. So tomorrow....whatever the scale says....don't forget...we can talk back to it!!!
