  • Clean it up..... CC Summer Challenge

    Last summer our beloved Irish Irish hosted a summer challenge, that helped so many of us get through an otherwise tormenting summer of bar-b-que's and grill-out's. I decided we needed another one.

    It's time to take control of our paper plate! Have recipe idea's? Tips, tricks? Tell us how you plan to get through the rest of the summer and avoid the temptation's. Pass up the carbs folks, and go for the gusto! We all know what we need! So let's do it.

    Let's clean up our program. Go back to a squeaky clean Induction. By the book! Let's get through this summer and come out winners. We can do this. And together, we can make a difference!

      Right here... We're keeping this one in the CC... All are welcome but it's easier this way.
      We can report in here and if we have enough interest, I will sticky this thread...
      This is going to be great. I plan to lose this summer and this challenge will help make this possible. Thanks for your interest Aphex!!

          I would like to join, I am only about a month into it and I plan on kicking fats a$$ this summer.

          I love grilling outside during the summer and typically cook burgers, steak, keilbasa<sp?> and I am always looking for suggestions.

          I would love to find some ways to make ribs that are induction freindly maybe with some types of rub? Seems all the BBQ sauces even Atkins 'friendly' have too many carbs for me. I have 200lbs to loose so I am planning to sticking to 20 carbs a day for most of that journey.

            I'm in with you girl. Maybe we can even run through the door to Onderland together (we should be small enough to fit through)...LOL!!!

            When do we start? I have to get the lo-carb ice cream outta here, between that and the almonds they're kicking my butt and keeping me from dropping any more. Time to be the Queen of the Clean Induction!~

              Count me in too. I just tried OWL for a week and half and it put 3 more pounds on my body!!!!!!

              No more for me. I am back on induction for the summer and ready to lose more weight. Great idea Tammy. I know I need this challenge and sure there are others struggling now too.

                And then there were 5... I think there is no time like the present to get started. After all, every second counts!

                Here's a dry rub that is nearly carb free. It comes out to less than 1 net carb for the whole recipe...

                1. In a small bowl combine:
                4 t. salt
                2 t. paprika
                1 t. cayenne pepper
                1 t. onion powder
                1 t. thyme
                1 t. white pepper
                1/2 t. garlic powder
                1/2 t. black pepper

                  I want in too!!! This sounds exciting - just what I need.

                  I've went off plan a little while back but I've been back on Induction - thank goodness!

                    most dreaded summer event: My sisters baby shower. It's being held at my families restaurant in Michigan, and it's an Italian restaurant! I haven't eaten there since I moved to Florida, and let me tell you, they have the best pizza and pasta.

                    how I plan to overcome it: They also have the best antipasto salad. I plan to have that, and a N.Y. Strip Steak!

                    Antipasto Salad Recipe

                    (sorry, I don't measure!)

                    Fresh lettuce
                    Provolone cheese, diced
                    ham (check for sugar!) diced
                    italian hard salami, diced
                    black olives
                    tomato
                    cucumber
                    anchovies
                    pepperochini

                    Toss in a large salad bowl with your favorite, legal italian dressing!

                      Hi Pam.....glad you came aboard!! This challenge is what saved me last summer... I'm hoping for the same results this year. We can kick those summer time carbs to the curb, and have fun doing it.
                      No need for us to feel deprived. We have a bounty of foods to choose from and I love the idea of sharing our thoughts and strategies.

                      What one event are you dreading most this summer?

                      Our pool is almost ready and we are having a huge grill-out pool party. All my family will bring all kinds of carb filled foods.

                      And how have you planned to get through it?

                      By filling my table with deviled eggs, 7 layer salad, plenty of fresh veggies for dipping while they are munching chips...
                      Lots of meat choices and yummy ribs with a dry rub....
                      Maybe I'll make pepperoni chips and Pepper jack cheese chips with a bit of salsa. And staying close to fitday, plugging in all my ingredients for a safe carb count!! Iced green tea...wonderful and totally refreshing!!!

                        trips for ice cream with the kids
                        a few days at my inlaws
                        our week away (wherever we go)

                        now as to how I'm going to deal? I've not got too much of a plan.

                        At my MIL's I typically take my own chopped jicama for breakfast, take enough lettuce for my lunches and dinners and add either the protein of the evening to my dinner salad and either use my cheese allotment or some of the cold cuts from their fridge to my lunch salad (or grab some ground beef and fry it up and toss it on the salad) and I take my own salad dressings.

                        During the week away breakfast is my rough meal. I can get my salad and protein at lunch & dinner most places. I don't eat eggs so I have a tough time at the first meal of the day.

                        the ice cream, man oh man, that's my downfall...if they have sugar free vanilla or somesuch non fruit ice cream....now if they don't have any, I'm ok, won't even try it...yet if they have "sugar-free" I seem to be able to justify it for myself. Guess I'll have to go to places that don't have any sugar-free ice cream to avoid the temptation.

                          The main thing I am dreading is going on vacation - probably towards the end of summer - I just hate the idea of being on a beach with lots of skinny people!!!

                          My solution is to stay on Atkins and I know that I won't be at goal weight, but I will be smaller and yes that will make it all better.

                          Also I am dreading all the cookouts as well.

                          I will have to make sure I have plenty of Atkins friendly foods so I don't feel deprived! We do have lots of choices so it's not really that hard. I think the hardest part of being on Atkins is giving up sweets - but once all the cravings is gone, it's not a problem any longer.

                          Also I have a really hard time in the summer going outside to exercise. I live in Georgia and its just so hot and humid here. It's already been almost 90 here. I had considered joining a gym but there is not one really close by and with my schedule and all it just wouldn't work. So I've decided to invest in a Gazelle - my oldest daughter and I have purchased one and it should be here anyday now. I can't wait. This is something I really think will help me and I know I can dedicate myself to working out hopefully 5-6 days a week.

                            What one event are you dreading most this summer?
                            I am dreading our writing picnic. Most of the people in my group bring extremely carb-laden dishes to anything we have.

                            And how have you planned to get through it?
                            I will bring my own meal with me. I've done this before, so they are used to it. The thing that really gets me is the fruits. I used to be a fruit-a-holic and it is hard to watch people eat a lot of delicious juicy fruit.

                              Thanks a ton! What would you say the best way to cook these is? I have only done country ribs in the over and not sure how to make pork ribs on a 'rack'

                              I most dread the company cookout, all kinds of cookies, cake, fruit and evil buns!!

                              I plan on just tossing the buns and ignoring all the other goodies and most people know I am on atkins and while I am sure they have their own conversations about it when I am not around I will just toss the buns.
