      Chinese Chicken Salad

      Finely sliced cabbage, green and purple
      Chopped green onions
      Chopped bell pepper
      Chicken breast
      IF you can have it, grated carrot

      Use amounts applicable to your stage of diet, mix in bowl

      Dressing ( i just eyeball it.. sorry)
      Sesame oil - not a bunch
      Vegetable oil
      Orange vinegar _ have this at Trader Joes,, or you can use white vinegar with orange extract
      Garlic clove, chopped and crushed
      tiny dash of onion powder
      Soy sauce
      Tiny dash crushed red pepper - to taste

      Shake it all together and let sit overnight. Use to dress the chicken salad.

        anyone have any recipes for anything......bread like? lol. im thinking maybe some muffins or something that i can bring to work with some substance other than meat. any suggestions? i went to sam's club yesterday and make a huge mistake of walking by the bakery and noticed my favorite muffins!!! chocolate\chocolate chip!!! now im craving something like that. something spongie and filling..........any ideas? thanks!

          I'm a big fan of these flaxmeal muffins!

          KIM'S FLAXMEAL CINNAMON MUFFINS
          3 eggs
          1/4 cup plus 2 tablespoons oil
          1/4 cup sugar free syrup, such as Da Vinci (I used brown sugar flavored)
          2 tablespoons water
          1 tablespoon vanilla
          1 cup flax meal
          1/2 teaspoon baking soda
          1/2 teaspoon baking powder
          2 tablespoons cinnamon (the amount is correct)

          In a medium bowl, beat the eggs with a fork. With a fork or spoon, beat in oil, syrup, water and vanilla. In small bowl, combine remaining dry ingredients, then stir into egg mixture. Let stand 5 minutes. Spoon into 12 well-greased muffin cups (without papers). Bake at 350º 12-15 minutes, or until they are lightly browned and seem set to the touch. Remove from tin at once to cooling rack. Store in refrigerator.

          Makes 12 muffins
          Can be frozen

          Per Serving: 85 Calories; 7g Fat; 4g Protein; 4g Carbohydrate; 3g Dietary Fiber; 1g Net Carbs

              Amazing recipes . . . but I have a question about the Zucchini, sour creme and jack bake . . . those numbers for calories, fat, carbs, etc., are for the whole 8x8 baking dish, right???

                  I'm not Desert but I think our days are her nights or something so I'll answer since it may be awhile before she's here.

                  EVOO= Extra Virgin Olive Oil (good stuff!)

                    Finnelly...I tried the Flaxmeal Muffins with Davinci Chocolate syrup and unsweetened cocoa powder...they were delicious...much tastier than with the cinnamon! (Also added a smidge more oil and syrup than it called for and they came out moister). Thanks for posting that recipe

                      cleo's Slap Your Momma Tex-Mex Scramble

                      If you like spicy Tex-Mex, this is so you good you could slap your momma!

                      5 eggs
                      2 Tbsp water
                      1/8 cup chopped green pepper
                      1/8 cup chopped red onion
                      2 cherry tomatoes, diced
                      1/2 cup frozen spinach, thawed and drained
                      5 jalapeno pepper slices, chopped
                      1 slice pepperjack cheese
                      2 Tbsp Pace Salsa

                      Mix ingredients together and pour into an oiled pan over medium heat, and cook until eggs are to your desired consistancy.

                      Just before eggs are ready to remove, turn heat off and add pepperjack cheese to the top. Cover with a lid and let sit for 5 minutes.

                      To serve, add 2 Tbsp salsa over top and serve immediately.

                      Tips:

                      This dish also stores VERY well with saran wrap and heats up in the microwave with no trouble. If you plan to save half of the dish for later, do not add the 1Tbsp salsa to the half you will re-heat until after heating.

                      You can also add sliced black olives, guacamole, sour cream, and chopped lettuce (make certain to account for the carb count change).

                      Serves: 2
                      Total carb per serving: 7.5
                      Net carbs: 5.5
                      Calories: 513
                      Fiber: 4 grams
                      Protein: 40 grams
                      Fat: 33 grams

                        Hot Spinach Salad

                        Ingredients:
                        • 1 pound fresh young spinach,
                          (coarse stems discarded and leaves washed well and spun dry)
                        • 1/4 cup sliced green onions
                        • 5 slices bacon
                        • 1/4 cup balsamic vinegar
                        • 2 hard boiled eggs (sliced)
                        • Sweetener to taste
                        • salt and pepper to taste
                        Shred spinach into bowl. Add onions. Chop bacon; fry until crisp; add vinegar, seasoning & sweetener. Heat to boiling; pour quickly over spinach mixture. Toss until wilted.

                        Garnish with egg slices.

                        Makes 4 servings. 2.1 net grams of carbohydrate per serving.

                          MUSTARD CHICKEN

                          12 oz boneless, skinless chicken breasts
                          3 T butter, melted
                          2 t dijon mustard (1.
                          shake or two of: garlic powder, thyme
                          sage, cinnamon, paprika, pepper (2?)
                          2/3 cup crushed pork rinds
                          2 T grated parmesan (.4)
                          1 1/2 t soy flour (1)
                          2 T butter

                          Preheat oven 350. Melt 3 T butter and mix with mustard, garlic and all spices. Mix crushed pork rinds, parmesan and soy flour and place in shallow dish. Cut each breasts in half lengthwise. Coat chicken well with mustard mixture, then roll in rind mixture. Place in shallow baking dish, dot with butter, and bake covered about 30 minutes, then uncover and bake additional 15 minutes. (Serves 2 @ 1 carb, 0 fiber, 529 cal, 36 fat, 48 protein)

                            can you substitute a different vinegar as balsamic is the one vinegar not allowed becuse of the sugar in it!!

                                Herb Rubbed (the kind you eat...not the guy...ha ha) Pot Roast

                                3 to 3 1/2 lb pot roast


                                1 Tablespoon Paprika

                                1 teaspoon Kosher salt

                                1 teaspoon garlic powder

                                1/2 teaspoon black pepper

                                1/2 teaspoon dried oregano

                                1/2 teaspoon dried thyme

                                2 Tablespoons olive oil

                                Put all dry ingredients in a small bowl...mix well...add the 2 Tablespoons of olive oil and let sit for 15 minutes. Put roast on a foil lined baking sheet or baking dish, rub mixture all over roast and cook at 350-400 degress until done to suit. Approx 1 and 1/2 hours depending on desired doneness.
