I'm in OWL, but I'll list the Induction foods I'm having for dinner
Tonight:
I'm going to add bok choy and mushrooms to my soup so it's a complete meal.

Tonight:
Asian-style seafood soup with egg noodles (serves 1 or 2)
1/4 pound shrimp, peeled and deveined
1/2 pound fresh cod fillet, sliced
1/4 pound bay scallops
1/4 cup onion slices
1/2 inch piece of ginger root smashed
1 teaspoon chili paste (optional)
1 cup clam broth
2 cups water
1 egg
1/4 cup chopped scallions
In a pot combine the clam broth, water, onion slices and smashed ginger. Bring to a boil and them simmer. Add the cod fillets and poach in the simmering liquid until it just flakes. Add the bay scallops and shrimp. Poach until cooked through. Add the chili paste (if you like it spicy). Add salt and pepper to taste. Before serving add chopped scallions and egg noodles. (Can also add sauteed sliced mushroom, chopped cilantro, etc.)
Egg noodles
Beat the egg, add salt if desired. Oil a microwave safe plate. Pour the beaten egg onto the plate and microwave for 1 or 2 minutes (depending on your microwave) until the egg is set. Cool slightly and peel the egg from the plate. Roll and cut into thin noodles.

Also, I use a ton of extra-virgin olive oil in my salads - I douse it. The flavor of the entire dinner just cannot be beat.
