  • What's For Dinner Tonight????

I'm in OWL, but I'll list the Induction foods I'm having for dinner

    Tonight:
Asian-style seafood soup with egg noodles (serves 1 or 2)
1/4 pound shrimp, peeled and deveined
1/2 pound fresh cod fillet, sliced
    1/4 pound bay scallops
    1/4 cup onion slices
1/2 inch piece of ginger root smashed
    1 teaspoon chili paste (optional)
    1 cup clam broth
    2 cups water
    1 egg
    1/4 cup chopped scallions

In a pot combine the clam broth, water, onion slices and smashed ginger. Bring to a boil and them simmer. Add the cod fillets and poach in the simmering liquid until it just flakes. Add the bay scallops and shrimp. Poach until cooked through. Add the chili paste (if you like it spicy). Add salt and pepper to taste. Before serving add chopped scallions and egg noodles. (Can also add sauteed sliced mushroom, chopped cilantro, etc.)

    Egg noodles
Beat the egg, add salt if desired. Oil a microwave safe plate. Pour the beaten egg onto the plate and microwave for 1 or 2 minutes (depending on your microwave) until the egg is set. Cool slightly and peel the egg from the plate. Roll and cut into thin noodles.
I'm going to add bok choy and mushrooms to my soup so it's a complete meal.

    What are you having?????

That looks really good! I had bok choy for the first time while I was staying at my sisters...my brother-in-law made a special dinner and that was one of the sides. How do you cook bok choy?

Tonight we're having steak, brussel sprouts and salad. I might make some steak butter to go with the sprouts.

Jennie-O spicy turkey sausage (I cut open the casing and chunk it up) with red bell peppers and Atkins pasta.

It was my first time trying Atkins pasta. It's not very good. Kinda umm, aftertastey. Oh well, someone gave it to me for free, so nothing lost on that one!

We had chicken/prosciutto/mozzarella rolls, with a side of caesar salad. Absolutely divine!

Outback!!! My favorite restaurant ever. I always get the 9-ounce filet, rare, no seasoning, and a double Caesar salad order along with it. (It comes in a giant navy bowl!) No croutons, dressing on the side so I can dip my steak in it as well. Also, I use a ton of extra-virgin olive oil in my salads - I douse it. The flavor of the entire dinner just cannot be beat.

In my opinion, Outback has the best-tasting Caesar dressing in the world!

Bugs, you can cook bok choy the same way you cook spinach or Swiss chard. But like Swiss chard, bok choy has stems that are alittle thick, so, you either want to slice the stems thinly or leave them kind of thick and cook them longer.

              Tonight:
Grilled chicken breasts with a mayo-mustard sauce
              Sauteed mushrooms with broccoli.

Thanks megs! I might have to try that in the next couple of days.

Dinner tonight? I'm still trying to decide. Maybe parmesan chicken...

I'm going to have a nice ribeye that I marinated overnight in a little olive oil and spices with a salad (romaine, cucumber, shredded cheddar, olive oil, lemon juice and sesoning).
