    Tonight is Porterhouse steak on the grill. Mashed cauliflower and some spinach. I have some of that steak butter of Bugs'. Thanks for reminding me! Yummmm

      I'm making pot roast using London Broil...does that make for good pot roast? I sure hope so. We're having it with the old stand by of broccoli and cauliflower.

        I'm using BoiseMan's Texas-Style Low Carb Chili recipe for dinner. I will add in Chunks of Chicken Breast instead of the Lean Beef (I have none). Along with cornbread for everybody except me. Also some cooked greens to blend it all together.

        I can't wait to see how it will turn out (licking lips).

          Tonight I'm having some cod w/ shrimp. I usually make it w/ Tilapia, but I only had cod and it tasted really good too!! I'm afraid I'll over-eat... :S

          I just build up in a pan EVOO (as Rachel Ray would say...hehe), fish (tilapia, cod, etc..), onion, peppers, garlic and tomato.All in thin slices. Salt and pepper. Add shrimp. I just add cooked shrimp. Easier..hehe.. Start it over, until you are out ingredients. Close the pan. Lower the heat and let it cook...

          Now, if you are concerned about the extra tomato, I usually just add 1 or 2 small tomatoes to the whole recipe (depending on how much I'm making) and use red pepper to give color, kwim?

          I really like this ever-so-simple recipe, because it is reaaaally easy and fast too. Specially if you are using Tilapia.

          Oh... and you don't need shrimp. Tilapia alone is delish too!

            Totalele, that sounds deeeelicious! I love EVOO (Extra Virgin Olive Oil) the flavor is nice.

            I forgot to add in that I made the Chili and my kids LOVE IT!! I didn't eat any because I kept reading the ingredients and I saw some stuff in my Chili Powder, and Granular Chicken Bouillon I didn't like. So I opted for a Hot Link and 1 Cup of Greens cooked. Delicious.

                Megs, Chicken soup sounds good. I think I'm making fried chicken w/out the flour for myself and flour for everyone else. Along with their side dishes and for my side dish a green salad.

                  Funky, you can make an "oven-fried" chicken by using grated Parmesan cheese as the "breading". Use the Parmesan cheese in the box and add dried herbs and spices. Don't add any salt as the cheese is rather salty. Below is a link to a basic oven fried chicken recipe:

                  Also, the cheese will be sticky, so make sure you grease your pan well or use baking parchment paper to line the pan for easier clean up.

                    Megs, Thank you for the recipe. It sound really good, only thing is I have no parmesan cheese. I've saved the recipe for a later time though. Is it alright for me to eat my flourless fried chicken fried in vegetable oil? Please let me know.

                        CHILE RELLENOS---YUMMY YUMMY YUMMY!!!

                        canned green chili's---dipped in egg and then coated in parmesan cheese
                        lay on bottom of pan
                        top with diced chicken mixed with just a little sour cream
                        then top with cheddar cheese
                        and then another layer of the chili's
                        SOOO DELICIOUS---you could coat the chili's in pork rinds but I know that stalls some people so I dont want to risk it---sour cream doesnt seem to stall me!

                                Well, Porterhouses are on sale and my man wants red meat so I guess that's what we'll have, even though I'm having leftover ribeye steak for lunch! Guess I'll get my protein/iron in today! Not sure about the sides, probably salad for me and a carby option for the man!
