    Chicken baked in white wine, cream sauce, and thyme with spaghetti squash and salad, most likely!

    [to make it induction friendly, just substitute the white wine for chicken broth!]

          It's cold and it's raining. So, I'm having soup!


          Meatball and Egg noodle Soup with Asian Flavors

          The Meatballs:
          1 pound ground meat (beef, pork, chicken, turkey--your choice!)
          1 cup raw spinach
          1/2 teapoon Chinese 5 Spice Powder
          1/2 cup chopped green onion
          Salt and pepper to taste

          Thinly slice the spinach, and combine with the meat, 5 Spice Powder, salt and pepper to taste and green onion. To check for seasoning, saute 1 teaspoon of this mixture (or cook the teaspoon in the microwave). Adjust seasonings accordingly.

          Roll into 1/2 inch meatballs. To cook them, drop them into the simmering soup base and let them poach.

          Soup Base:
          3 cups chicken broth
          1 cup beef (or vegetable) broth or water
          1 inch piece of ginger root, smashed
          1 garlic clove smashed
          1 green onion

          Combine all the ingredients together and bring to a boil. Boil for 3 minutes, then reduce the heat to a simmer and simmer 30 minutes. I make alot of this ahead of time and freeze the extras for future use.

          Additional ingredients to the soup. Add these while you are poaching the meatballs. You can add whatever veggie you like.
          1 cup thinly sliced bok choy or spinach
          1 cup thinly sliced mushroom
          1 cup zucchini or yellow squash sliced into matchsticks

          Egg noodles
          1 beaten egg
          pinch salt

          Beat the egg with the salt and pour into a well greased microwave safe dish. Microwave for 1-2 minutes until the egg is set. Remove from microwave and slice the egg into thin noodles. Add these noodles right before serving the soup.

            Went to Mexican place nearby and got super nachos minus the nachos. It's really good. Carne asada, pico de gallo, guacamole, sour cream shredded cheese, and green chilli salsa. I had about 4 bottles of water to wash it all pout, butit is good stuff.

                Last night (its morning here) I cooked Steak , rice and made a huge salad with chunks of cheese even. Of course I only ate the Steak and salad, and hubby and kids ate all three things!!

                      Pot roast is in the slow cooker! Roast, onions, green peppers, mushrooms, tomatos and baby carrots. (carrots not for induction!)

                          I made a deliscious shrimp scampi with a caesar salad to start. I'm the only one who ate it, though, because my husband is vegan, my older son wasn't here and the baby has a tummy bug.

                            I made Meg's soup tonight and totally enjoyed it!
                            I had some leftover chicken and turkey broth in the freezer and it turned out really yummy.

                              Tonight
                              Grilled Chicken breast

                              Faux Split Pea Soup
                              4 cups frozen green beans
                              1/2 cup chopped celery
                              1/2 cup chopped onion
                              4-6 cups chicken broth or ham broth
                              2 slices bacon, in half (can subsitute turkey bacon for this)
                              1 teaspoon oil
                              Pepper to taste
                              1/2 teaspoon dried thyme
                              1 bay leaf.

                              In a large pot, fry the bacon in the oil, until the bacon is crispy. Remove the bacon and drain on paper towels. Crumble and set aside.

                              Fry the celery and onions in the bacon fat, until they are soft and slightly browned. Add the frozen green beans and 2 cups of the broth. Bring to a boil. Add the pepper, thyme and bay leaf. Turn the heat down and simmer for 30 minutes or until the green beans are very soft. Remove the bay leaf.

                              Depending on how you like the texture of your faux pea soup...
                              For really smooth soup, blend the mixture, until completely smooth. Add the enough of the remaining 4 cups of broth to reach the consistency you like. Bring back to a boil. Serve with the crumbled bacon on top.

                              For a smooth soup with some texture, blend the mixture until it is to the chunkiness you like. Remove about 1-2 cups of the chunky mix and set aside. Blend the remaining mixture until completely smooth. Combine the chunky mix with the smooth mix, adding enough of the remaining 4 cups of broth to the thickness you like. Bring back to a boil. Serve with the crumbled bacon on top.

                              If you like you can add chopped cooked ham to the finished soup for added taste and texture.

                                We had easy-peasy chicken with caulirice.
                                Just slice one leek and fry it in 1/2 ounce of butter and some spices (sometimes I use chopped chilli peppers instead) on a low heat till softened. Then add chunks of cooked chicken breast, cover pan and leave a few minutes, stirring occasionally till the chicken is hot.
                                Then add half a cup of heavy cream and heat till it thickens, stirring to stop it sticking.
                                Serve on a bed of caulirice (grated raw cauliflower cooked in the microwave (no water added)
                                This method is good for any leftover cooked meat - even corned beef from a can!
