        leftovers. lol cabbag soup which i think will og bad before I can finish as I made a LOT. and some lemon pepper chicken...I am loving that I can eat baked chicken with crispy greasy skin woohoo.

          I really like the "What's For Dinner" & "What's For Lunch" threads!! It's so great because everyone has something different. There are so many great ideas that everyone is sharing, and it's given me ideas so I'm not eating the same things all the time.

          So for tonight's dinner, I'm going to have something that I love and am so happy that I can eat on Atkins. I'm making homemade ham salad. Ham off the bone, with a little dill pickle relish, a couple tablespoons of mayo, and just a touch of splenda to slightly sweeten it up, since I'm not using sweet pickle relish.

          Does anyone have an Atkins friendly guacamole recipe? I thought for tomorrow, I'd make some sort of taco salad, minus the taco and top with guacamole.

            We had chicken curry served over microwaved grated cauliflower (aka caulirice). My husband actually prefers this to ordinary white rice!!

                  Today we had snow, then sleet, then snow, then sleet, then rain. Soooooooo I had a nice hot steaming bowl of beef-vegetable soup. Just ground beef, cooked in a pan until browned. Then I added beef and chicken stock to it and tossed in a few veggies.

                    Stuffed hamburger (take raw ground meat, form into 2 patties, put filling on one patty, cover with the other and press to seal the edges, cook like you would any hamburger) and either sauteed yellow, red, and green peppers or steamed broccoli for my veggie.

                      Poker night. I'm having Buffalo wings & salad. The others will have pizza too. I guess I better eat before the game starts. Don't want the playing cards and poker chips to get all sticky.

                        Lamb chops with a faux-couscous. The faux couscous is made by grating a raw cauliflower, microwave it until it is tender but still has some bite. Then add some butter, and dried herbs like Italian herb mix or lemon pepper, etc.

                          Leek & 'potato' (ie cauliflower) soup, followed by chicken breasts stuffed with garlic and emmenthal cheese, brussel sprouts, rutabaga mash, mushrooms.

                              I had a BLT Salad with some moz cheese in it. For dessert i had a glass of diet A&W float, i know it has asparatame but i made the decision.

                                Had firmly beaten round steak rubbed in sage and dill and covered with turnip geens.

                                Snack is half a mock danish. OMG i love those thins. i feelliek i am cheating but im not
