            Induction Legal Cookie:

I got this idea combining flax meal crackers with flax meal cereal.

            2 T
            flax
            meal
            1 packet Spenda
            1/8 t cinnamin (sp)
            1 T butter
            2 T water
mix dry ingredients, add butter and microwave 30 secs. Add water, stir and place on a peice of parchment paper. Spread thin with an offset spatula or a spoon. Microwave on high for 2 1/2 to 4 min. till crisp. Let cool. You can also break this up and mix with cream.

Don't forget to count the carbs. 1 for
            flax and 1 for Splenda.

THE BEST Artichoke Parmesan Dip EVER!!!

1 15oz can Quartered Artichokes (not marinated)
              2 8oz Cream Cheese
              3/4 cup Mayo
1-2 can's of Diced Chiles (or diced jalepenos if you like it spicy!)
1 5oz plastic container of Shredded Parmesan

Heat oven to 400. Soften cream cheese in medium bowl. Mix in the mayo, chiles, HALF the container of Parmesan, and artichokes. (when adding artichokes, smoosh them with your hand's when you put them in the bowl). Pour into a glass oven safe deep pie pan, or whatever kind of 8x8ish casseroll dish. Cover with the leftover Parmesan. Bake for 25mins, or until bubbly, then broil top for 3-5 mins. Enjoy with Pork Rinds, or as a spread!

I always make it for family get together's, or when guests come over. EVERYONE loves it and wants me to make about a triple batch!

Anjie - you don't ever have to eat eggs for breakfast on Atkins if you don't want to!!

The only time I do is when I am staying at a hotel which offers a 'full english breakfast' (eggs, bacon, mushrooms, tomatoes etc)

Eat anything on the allowed foods list that you fancy. Some of us even make extra 'leftovers' at our evening meal cooking to be able to eat them for breakfast the next day.

We had one member who regularly ate beanless chilli for breakfast!!

It's tough to get out of the "eggs, sausage, and bacon for breakfast" mentality, but you can have any induction friendly food for breakfast. It's nice to change things up and keep it interesting. Try it out and you will find you won't get burned out as easily, if at all.

Example: For breakfast today, I had 4 slices of turkey wrapped up in 2 large lettuce leaves with some mayo spread in them, and an ounce of pepper jack cheese crumbled into it. Not a heavy breakfast, but enough to fill me up and get me going for the morning.

Thanks for the tips but i really cant face left overs for breakfast, nor can i face cottage cheese. I used to always have a bowl of porridge but thats not allowed. I did find a coconut shake drink in the new atkins and you book, but it works out very expensive if you dont like it!!!!

You may like Cream of Flaxseed if you like porridge-type breakfasts. It is suitable for all Phases. I've included the entire thread as you may want to try some of the suggestions (like making it with more water). You may also prefer golden flaxmeal over regular as it has a much milder taste.

Thankyou for that, I will get my son to get me some today. I hope we can get it in the
UK, i am sure we will be able to and it will be easier for me to stay on Atkins as at the moment i am getting despondent with the lack of foods that I could eat for breakfast.

Anjie - in UK what the USA calls 'flax' is called linseed!

You can buy the seeds in health food shops, it comes in golden or brown varieties. Some people prefer the brown for cereal-type recipes and the golden for baking.

Though Holland & Barratt do sell it they are far more expensive than what smaller independant shops sell it for.

You will need to grind the seeds to get the benefits of it or it will just pass through you without releasing any nutrients. I use a small coffee grinder for this.

For inductionists that want a shake, I just had this one this morning and it is pretty darn good.

                                1) 3 tbsp of HW cream
                                2) 1 egg (can do two)
                                3) half a block of silky tofu
                                4) tsp of coconut oil
                                5) 3 tsp of SF syrup (i used Torani SF chocolate. SO YUMMY!!!)
                                6) 5 ice cubes

                                and blend.

Big shake comes out. I think it's super yummy. Slightly chalky flavor- but i like that. Reduce tofu if you don't.
