Re: For those starting Atkin's on 7/7/2008.

So, I'm not done. But I decided to continue on a second posting.

Food: These are some of the simple things that I like. I'll name the simple names but all are good for induction. If you want a recipe, let me know.

    Philly Cheese Steak
    Chicken Fajita
    Fried Cheese
    Baked Chicken Skins
    Meatloaf
Salmon Patties (only if oat bran is allowed like wheat bran)
"Ultimate Scrambled Eggs" I very gently tweaked from a regular cook book
    Hot Chicken Salad-surprisingly very good
    Stuffed Eggs-with cream cheese
    Chicken Parmesan
    Taco/Steak Salad

Enough of mine. Anyone have fairly simple recipes that dress up cod/orange roughy/basa or any other mild, white fish? My freezer is full of them (DH has a family history of heart disease).

Re: For those starting Atkin's on 7/7/2008.

Oh wow! How is everyone doing?

I miss one day and come back to a schlue of posts. I was so ill yesterday. I usually don't have headaches but man did I have one and nothing I took eased it. This morning I woke up and it was gone. I still feel a residue of it, but nonetheless, I'm much better. I wonder if it was because I wasn't getting enough water in. So today, I'm been chugging it down. I had to take off yesterday because I wasn't feeling well. I read through most of the posts and skim through some too.

I too have been finding it hard to get in the calories. I've been eating my meat like my turkey bacon with cream cheese. I load up on my veggies. Today for lunch, I'm going to have my veggie medley I cooked yesterday, which is broccoli, squash, and zucchini, and grilled chicken. I only eat one grilled chicken strip. Since I've started, my appetite during the day is very low. I eat a ton of my veggies and only 1 piece of meat. But at night, when dinner comes, I'm ready to eat up everything. Tonight I'll have a grilled chicken salad from somewhere.

Take care everyone! I'll try to check back in later.

        Hillbilly,

All of those listed sound good. Can I get a recipe for the ones below:
        Philly Cheese Steak
        Chicken Fajita
        Fried Cheese

Have you found a good one using cream cheese besides the egg one? Also, does anyone know the difference between cream cheese and heavy cream? I thought it was the same but obviously not.

Re: For those starting Atkin's on 7/7/2008.

I did not want to wake up today. I think I just want to sleep all day instead of going to work. But then, I realize that I have the next 4 days off, so working today wouldn't be a problem at all. Besides, I'm working with another new guy! Yay for back breakage because most of them don't know how to use a gurney, even if they got 10 minutes training on it. Oy vey. =) But I'll deal. As long as the dispatcher doesn't screw me over again today. Don't like her one bit. Meh.

So anyway, I'm still weirded out from last night and I don't know what's going to happen. I haven't gotten a reply or anything like that. I don't expect it either, but if I do, that would be nice too. =) We'll see, I'll let you know. I still feel absolutly horrible about it and I could not fall asleep last night. I think I lay crying in my bed for 2 hours. lol. I lost some water weight through that, huh?

How is everyone doing today? Day 4 for me, and I'm ready to rock it!!!

Hillbilly- Have you gone to the doctor about those migraines before? I mean, even if you have them just once a month, it could be something serious. And you should be feeling some induction flu and it will all be over in 2 days. You will make it through, you have us here to guide you through it, alright? -hugs- =)

            Bekka,

Two things: YOU accomplished everything over the last months, not your ex. He may have motivated you, but you DID it! Give yourself more credit.

Your only options are not this stupid guy or your ex. There is a world of options out there...be patient. Not every guy will be an idiot (though sometimes it seems there are a lot of them out there). You seem like a very kind and positive person...someone will appreciate for sure!

To everyone else, I did eat at the pizza place. I had a sausage and cheese calzone but didn't eat the bread (sauce on the side). Still in ketosis so I guess that was ok. I'm just afraid to eat salad out at restaurants cause I never know what's in the dressing.

Thanks for the follow up on my pork rinds question. Glad to know they are ok.

Re: For those starting Atkin's on 7/7/2008.

Well, I'm back. I started this journey back in October 2007 at 144lbs. I'm 4'11 and that was the highest in weight that I had been in a long time. Fast forward to May 2008 where I had reached my goal of 115lbs. Needless to say, the hubby returned from a four month deployment and Voila, here I'm back on induction. I started induction on Sunday, July 6th and have been going strong. This really does work, you just have to stick to it and not give into temptation!

On Sunday, July 6th, I weight 120 lbs. I've been on induction for four day's and I'm pleased to say that I'm now at 117lbs. My final goal weight is 110lbs, I know I can do it and so can all of you!!

Hillbilly - Im sorry to hear about your migraines. I hate to say it, but I suffer from them too. Mostly, I cant even THINK about eating when I get them. My induction headache was finally ebbing out yesterday, but today, I have a full blown migraine today.. all I've been trying to make sure I do is drink as much water as I can. I have noticed that when I'm doing Atkins correctly, they don't happen as often

The dessert is totally induction acceptable, and they were fantstic! I was wrong about the carb count though- they are actually only 1 gram of carbs per 2 X 2" square- so that is great!
The Brand is called "Bakers Delux" I order it online and have it delivered to my house, or work. I so far have tried their cranberry-orange muffins, Caramel explosion brownies and apple-cinnamon muffins, and none have dissapointed!

I have been giving myself more credit, but I guess not enough. =/ I mean, I totally am happy with where I am right now and I'm just going to focus on me right now and if anyone comes along for the ride, that's awesome, if not, I will be fine either way.

Just had breakfast. Just egg whites and cucumber slices. That should be sufficient enough until I eat a little snack around 11:30 or so, at work. =) I bought this bottle thing from 7-11, arrowhead, or what not and it's amazing because it's exactly 64 ounces!! So, once I finish that, I know I've had my 64 ounces for the day and I just need to drink a little more to make it to 88 oz. =)

Bekka - you're adorable. Kirby is right, they aren't your only two options. But I really understand about feeling horrible about your ex - situation. I did the same thing once, but in my case, things turned out for the best. Is it too personal to ask what you mean by the age difference? I'm sorry about last night, but for every stupid guy out there you go on a date with, there are supposed to be at least 2 good ones Im glad you're doing spectacular today.

Chubby (not so) - WELCOME!!! You're going to make us all jealous by reaching goal faster

I am worried that so many of you are having migraines, and bad headaches! Do you think it's the sugar crash?
I dont seem to get them at all.....

Nikki, I prefer not to say the age just because that's something only I should know. lol. Let's just say it was a big gap, that's all. You can fill in the blanks if you'd like. But you're right, you gotta weed out the bad ones first in order to find that perfect flower. Lol. My analogies are lame, I know. But hey, what can one do to fill their time? Yesterday I said I was free as a bird in a cage. If that makes any sense. But who knows what the future has in store for me because I don't even know myself. I'm happy where I am right now though, even though being lonely really isn't all that fun because da mudder keeps pressuring me on finding a bf or gf all the time and it gets quite annoying.

As for the headaches former, I think it's just the sugar crash and the lowering of the carb intake. They go away after a while. Mine's finally gone and like I said before, this was the first time I actually had them.

For migraines, ask your doctor about Maxalt. That's the best stuff I've used for migraines....it doesn't make you tired and sleep all day like some of the other stuff but it actually works! They don't seem to prescribe it much...I think because it's expensive...so you have to ask about it.

Fortunately, induction has not triggered any migraines for me though I have had some bad headaches.

Re: For those starting Atkin's on 7/7/2008.

Hardbody - No, not related to sugar crash. I've had these for years. When I noticed they came regularly, I went to the dr., then on to the neurologist when they escalated (or morphed as the dr. says). That was a year ago in Feb. 08.

I attribute the "morph" to beginning perimenopause (you know, rollercoaster hormones!). Sometimes a Starbucks or Sunkist will help (caffeine/sugar combo), but those aren't allowed right now!!!!!! I've been on all kind of meds (of several different types available), without any/very little success. I've even tried nerve blocks (getting needles stuck in my head and between my eyes and eyebrows--SOUNDS LIKE FUN, HUH??) So now I've graduated to the meds with more prevalent side effects (which is like adding 2 straws to the already over-burdened camel because I get all the wacky/uncommon side effects anyway).

Enough about that. It's been going on so long that it is a way of life now. Besides today's isn't that bad--I'm not in bed. A bad nuisance, really. So, in addition to being only in my forehead (which is typical for my migraines), I don't thing it is severe enough to be an induction headache. As for the flu, I made it to day 5 two weeks ago and didn't have it then, either.

Now, to the requested recipes. I don't want to step on anyone's toes, so each recipe indicates where it came from.

CHICKEN FAJITA CASSEROLE-SORT OF (The Low Carb Cafe - Recipe)
full recipe at website-mine is abbreviated
boneless chicken breast cut into strips
onion, bell peppers (red, green, orange) cut into strips
                              taco seasoning mix to taste
                              garlic powder
Monteray Jack cheese (I use the bagged, shredded Mexican cheese)

fry chicken in oil, stir in seasonings, add veggies, cook/stir until crisp/tender (1 min.).
I just then add cheese & plate. Actual recipe calls for baking it to melt cheese.
****best to use homemade taco seasoning--check website--can't find mine****

                              PHILLY STEAK CASSEROLE (PHPRecipeBook)

                              steak, sliced
                              minced garlic/powder
                              onion, bell pepper, sliced
                              sliced provolone cheese

Partially freeze steak to make slicing easier. Saute garlic, onions & peppers until onions are translucent. Remove from skillet.
Add more garlic to taste & fry steak. Cook just until no longer pink.
Again, recipe calls for casserole & bake. I just plate it & add cheese (or add everything back to pan & top with cheese & cover until cheese melts).

FRIED CHEESE (memorized-can't remember where from)
There is a similar recipe for CHEESE CRISPS at Linda's Low Carb Menus & Recipes.

Spread about an ounce of cheese in a frying pan (make sure it still touches but is not mounded up). I use cast iron, so I don't know how other types of pans will work. Fry on low/med heat (watch closely) until you start to smell cheese browning. I then turn it over & do the other side. The idea is to lightly brown NOT burn the cheese. A lot of fat will come out of the cheese. I take it out of the pan, let it cool (it will crisp up as it cools), and enjoy. Mine have never lasted more than a day, but, supposedly they will be good to eat for several days. I tried to be as specific as I could, but this is one of those things that I just do it, not think. (Besides today is not a thinking day!)

Hope I covered everything. I have another recipe for "Goldfish" crackers I want to try soon. I'll let you all know how it turns out.

Kirby-just read your post after finishing mine above. That is the one I currently have. Sometimes it helps. But it never totally gets rid of the migraine. And, they always come back the next day. All the migraine medicines (Imitrex, Maxalt, another one I can't think of) are supposed to get rid of the migraine totally--and it is not supposed to come back! And there is no reason to think that induction caused my migraines either time. It's almost like a miracle if I make it an entire week without one normally. Then there are some weeks that I get at least 2. Last fall I had at least mild-med headache pain for nearly 3 months--that was when the dr. decided to poke needles in my head.

Hormonal related migraines are supposed to be VERY, VERY difficult to treat. I guess I am just one of the lucky ones?!?! Steriods were the most effective but since they only kept me headache-free for a week, she doesn't want to keep using them. Too bad, I had TONS of energy while taking them (yeah, increased appetite, too--but I was PRODUCTIVE). The headaches haven't helped with the weight loss, either. It's kind of hard to walk (or run, which I enjoy) on a regular basis when your head pounds even more when the blood gets flowing.

Another bit of info. My son (14 yrs) pays close attention to me (in a very supportive manner--he frequently is my sounding board). He went to camp this Sunday and bet me that I wouldn't be able to make it till he gets home Friday night. This is one bet I fully intend on winning!!! Talk about incentive.

Time to do some surfing. Bye.
