    Joanner, mine was similar to yours. I made a fresh salsa and homemade guacamole then threw it on a bed of lettuce with some chicken breast, cucumber, sauteed onion and pepper, shredded cheddar, and a big handful of cilantro. Mmmmmm.

      Tonight will be two meatballs and grilled eggplant parmesan. Made the meatballs last night and grilled the eggplant this morning so now I just have to wait until dinnertime to reheat the meatballs and put the cheese/sauce on the eggplant and heat it in the oven.

        Last night I made corned beef hash. Instead of potatoes I used Jicama. What I found is that Jicama is just too sweet to be a potato substitute and corned beef tends to be a little sweet as well (I am sure that's why it has little less than a full carb per serving). So I think depending if I do this again, I might try turnips which only have 4 net carbs per cup instead of jicama. Well not all the experiments will go well.

        Tonight I am making tuna noodle casserole using shirataki noodles and making my own mushroom soup as the base. For the family, I will replace the shirtaki noodles with regular fetticini (sp) and add bread crumbs and more veggies to theirs. I'll let you all know how it turns out!

            What the heck Gerogianna? Okay can you tell me why not? Are the carbs to high or am I missing something else?

              It's not only about the carbs in foods. During Induction, you should only be eating foods from the Acceptable Foods List.

                im having meatballs (making myself beef, dried onions, eggs, some spices in them, maybe tobasco..have to check the label on that first) and im making eggplant spaghetti noodles...not sure if im allowed to have spaghetti sauce yet, i'll probably end up having to put tomato paste because most spaghetti sauces have sugar..haha...im learning!!!!!

                  actually, scratch the sauce...im going to cut a tomato in half, put some olive oil and oregano, and mozzarella cheese on the tomatoes and roast them under the broiler...omg..im drooling and my stomach is growling!!!

                      They don't really fit anywhere. It is a decision you need to take once you are in OWL.

                          Oopsie roll with a hamburger patty, 1 slice of non carb cheese, 4 slices mushrooms sauteed in olive oil, 1 slice tomato and 3 slices pickles, mustard and baked turnip fries. I finally dont feel like an oddball with my choices

                            All cheese has carbs. But in the US, if the carbs are below 0.5 g per serving, they can be listed zero.

                            You can search the kind of cheese you ate in the USDA database to see how many carbs it has.

                              Yes, I love oopsie rolls too. I have made oopsie rolls about 10 times. They have always turned out the way I have observed in pictures and how I have read they should be. Like Georgiana said the secret is making sure the egg whites are perfectly beaten until stiff. Also, make sure absolutely NO egg yolk gets dropped into the egg whites. Here is the recipe that I use:

                                It's been a while since anyone has posted their Induction-friendly dinners. Here's what I had tonight:

                                Grilled boneless pork loin chop with sauteed bean sprouts, scallions and snow peas.
