Joanner, mine was similar to yours. I made a fresh salsa and homemade guacamole then threw it on a bed of lettuce with some chicken breast, cucumber, sauteed onion and pepper, shredded cheddar, and a big handful of cilantro. Mmmmmm.

Instead of potatoes I used Jicama.
What I found is that Jicama is just too sweet to be a potato substitute and corned beef tends to be a little sweet as well (I am sure that's why it has little less than a full carb per serving). So I think depending if I do this again, I might try turnips which only have 4 net carbs per cup instead of jicama. Well not all the experiments will go well.


Okay can you tell me why not? Are the carbs to high or am I missing something else?
