We're having zucchini alfredo with grilled chicken tonight. The recipe is from here Linda's Low Carb Menus & Recipes I made this a while back and everyone just loved it. It is so amazing. I like to make the "noodles" a little smaller with a julienne peeler and i also add a little fresh mozzerella cheese to the sauce.

Mmmmmm. My breakfast for dinner was good but realized when I looked in the fridge that I had to make my meatloaf before the ground meat went bad so it was Meatloaf instead of quiche. I'll be making the quiche tonight and having something veggie related for dinner since my lunch and snacks today are all meat-intensive.

Tonight was Jamaican Jerk salmon fillet with fresh avocado salsa. Fresh pineapple in the salsa would have been great but I'm not in the fruit rung...and either are you. I might try a couple drops of pineapple extract next time to get that flavor.

Side veg was roasted green beans.

fast and easy and tasty shrimps

                            Pre-cooked shrimps
                            olive oil and/or butter
                            1 garlic clove

cumin powder to taste (don't forget to calculate your carbs here)
lemon to taste (no more than 3 tablespoon, and only if you havan't had something from the Special Category Foods).

On medium heat reheat shrimps in butter/olive oil with the garlic and cumin and add lemon to taste.

I serve this either with asparagus or on top of a green salad (with onion, olive oil and a bit of red vinegar).

Dinner tonight was chicken wings too + some cauliflower mash. I don't have a cute reason just that I didn't get to the fish market before it closed.
