  • Re: Dandr ~ Our Summer Reading Program

i am going to the store today for a few things. i will admit here that, pre atkins i was a waffle pancake doughnut kind of gal. i have stayed away from anything that resembled that. fear of getting hooked on them again i guess. i am going to look for some of this atkins baking mix. and i just might try some of the waffles. geez, it's horrible to be this far along and maintaining and think i might get hooked on such a thing.

i want to try one of the smoothies too. has anyone tried soft tofu? and where the heck do you look for it? this is on page 396. Strawberry Smoothie

i just noticed something. on page 397, the Atkins Yourkshire Pudding recipe call for 1/3 cup of beef drippings or vegatable oil. didn't he tell us previously to not use veg. oil? page 374 has a list of vinegars and oils and vegatable oil is not on that list. i use canola most tims. do i have something mixed up there? must do some investigating.

I've used protein powder in place of the Atkins Baking mix. I thought the baking mix was salty. I have a decent recipe for pancakes that I make every now and then.

I've seen soft tofu in the produce section of our grocery stores.

As far as veg oils...p127 under Fats and Oils..."All other veg oils are allowed..."

Reading this again was very helpful.

Food intolerances: I never thought I had any, but since cutting out all the sugar and the white flour, I no longer have heartburn and indigestion, nor do I get gassy. Brussel sprouts used to absolutely kill me with gas. Not anymore. It's a very nice side effect of Atkins.

I noticed also that the recipes in the book are really not all that suited to induction. The first time I glances through it, I didn't understand how a lot of them were even considered to be low carb if induction was only 20 carbs a day. I did try one or two after I got out of induction, but I have to say that I much prefer the recipes that the members here post.

re reading was helpful but fast! lol

yes, he says they are allowable and states the best ones: canola, walnut, soybean, grapeseed, sesame, sunflower and safflower. makes me wonder why he didn't use one of those in the recipe i mentioned.

i don't know about the tofu stuff. it doesn't sound appetizing to me but the strawberry part sounds great. if it's not too pricey, maybe i'll give it try and let you all know how good or how yucky it is.

and thanks for the comeback on the baking mix. i would like to find the almond flour that barb has been using but i've had no luck there as of yet.

This crustless quiche with the bacon and onion sounds great. Quiche has always been a favorite of mine, I may have to try it soon. The chicken soup and egg drop soup too but only after it cools off a little, I'm not much for soup in the hot weather. Lots of these aren't induction friendly, but there are a few that would work. I'm looking at the shrimp and feta stew one... I'm not sure those two things sound very good together.

I've made a deal with myself to re-read the book all the time.
As Atkins is a way of life and not just merely a diet to do for 2 months, I'm going to re-read it yet again, maybe ready a couple of pages every day.

I've only made 1 or 2 of his recipes. I don't find anything wrong with them but many have too many ingredients for me to bother with.

I'm never without the book - I have a copy upstairs by my computer, one downstairs on the table in my breakfast room, one at work and a little paper with all the induction foods in my purse. Be prepared!

I've found almond flour at our local health food store, Wegman's and Price Chopper. Not sure if you have either of those chains near you. It's in the "natural foods section" of both supermarkets.

Also, could just buy some slivered almonds in the baking aisle and grind them up. I've done that too. Just be careful not to grind too much. End up with almond butter instead of almond flour.

Jimmie 48 almond flour can be ordered on line from honeyville grain with a discount for all ADBB memebers using ADBB in the checkout codes.

qbu or you can use your coffee grinder and do almonts or any nut in small batches and sift the resutls to get the big pieces out to regrind. don't grind to fast or you will get nut butter as the oil witll melt from the heat. I freeze mine when I grind them. if you don't sift out the big stuff you can just have a courser texture and do the recipes.

You can make bake mix yourself if you add a levening agent ( thatis the reason it is so salty tasting) to protein powder or nut flour.

One of the big problems with the book is that the recipes were not edited after the 2002 rule change so some of the recipes are marked for inductrion ( see the sample menus to know which ones are which) that really aren't like the zuchinnni nut one.

I don't have any food intolerances just a major allergy to any food that contains soy in any form so that just about rules out all the low carb frankenfoods and real high carb foods too as soy is added to just about everything, even a candy bar will have it.

Bob's Red Mill (of the flaxmeal brand) makes almond flour also. I've seen in at Stop N' Shop in the healthy (outer edge) aisle.
