    Ok im ready for this challenge, the only thing is are we going to keep posting here our daily totals, that would be easier for me than waiting till the end of the week, just not sure if we are going to do a daily thread or not.

      yes, lisa, this is your option. post here everday if you like. silly and i both have running charts and if you log your numbers, then we can place those on our charts and display them if you like. well, i can, i don't know if silly knows how to do that yet.

        I have 21.99g net veggie carbs to report for today. I;ve eaten 2 of my meals and the other one is sitting next to me...very temptingly

              Thanks Jimmie I was surprised to see I wasn't eating enough veggies to make the challenge in the first place. I'm a major planner now - I need to make sure I have no excuse whatsoever to cheat

                Saving my veggies for lunch and dinner. Planning for lunch 1 c. green beans, 1 c. salad greens and then for dinner another c. of green beans.

                On Fitday it comes out to be 13 carbs. (but I looked at labels and it said 4 carbs per serving... so a bit confused.)

                  This challenge is an eye opener! I'm gonna have to change my tonight's zucchini for a higher carb veggie to get the numbers right. And I thought I was a huge veggie eater!! Maybe I'll fill up on artichokes! Yummmmm!

                    You and me both! Not to mention having to deal with the two separate lists. Boy, was that frustrating!! Finally made a spreadsheet, highlighted the ones that worked best, and went from there.

                    Best part is trying so many new veggies. I just fell in love with spaghetti squash. It's my new lettuce. More carbs, more fiber, and more POTASSIUM! I can't get enough of that. If I can land a good jicama, that'll be my new apple. The pumpkin is fun. Tomorrow night, I'm going to try a new recipe with brussel sprouts.

                      This was a eye opener for me as well, I always get between 20-25 carbs a day but i noticed i will take away from veggies, in order to keep my carb numbers low.

                        Net veggie carbs for today: 20.5

                        oh wow- this is difficult! I tried so hard today to get in more veggies and nearly went way over my 20 net carbs! Had to cut portions at Dinner in the end! But I didn't eat any differently to how I usually eat on a work day - I just had extra tomato and onion without worrying about it

                        This is how I did it

                        Breakfast

                        Mushrooms

                        Tomatoes

                        Sweet peppers, green

                        Onions, spring or scallions

                        Lunch

                        Cabbage

                        Onions

                        Tomatoes cherry

                        Mixed green salad

                        Dinner

                        Cauliflower

                        Broccoli


                        Roll on tomorrow - will plan it again- but I buy lunch at work again tomorrow - so will have the veggies on offer.

                            same with me, sal. i've done much better when i started paying attention better.

                            you are thinking better now, lisa, if you have to get the carb number down, lets not do it by taking our veggies away. dump a few nuts, dump a piece of low carb bread etc.

                            it should get easier as the days progress and hopefully, we are all learning something that will stick with us.

                                OK, Terry... help me out. Tell me what you did with the spaghetti squash. And, I mean from the beginning. I saw one at the store yesterday, but didn't get it as I have never eaten squash in my life... any kind. So, I have no idea how to deal with it at all.
