Are You Eaing Your Veggies? Challenge #1

    Preparing for the breakfasts this week has given me an idea for camping with my small tent camper.

    3 oz. of ham diced up, 1/2 cup green pepper diced, 1/8 c diced onion, 2 eggs, a tbsp olive oil, and spices. All in one ziplock bag. Boil in water over the campfire or stove. Have a couple/three of those ready for the weekend mornings and I won't be wasting time with cooking or dishes. Easy Denvers for breakfast!

        I've done the egg and extras in the bag before, so this shouldn't be any different. Only thing is the green pepper and onion won't be sauteed' first. I can live with that.

        In fact, what I'll do is boil one in the bag tomorrow morning (minus the onion.) I'll let you know how it turns out.

            Could someone explain what to look for in a jicama? When at the store, should it be stored with the cooler vegetables, like cucumbers and green peppers, or should it be stored away from the coolers, like squashes? And once you bring it home, how do you store it?I just ate some of mine but I can't decide if it's bad or not. It's got a very light brownish tint to it and taste slightly musty. I have no clue if it's ok or not? There was some mold on the outside which cut off but there was also some soft, gooey spots inside that I cut out and threw away. Hope I'm not eating something that should be in the garbage...

              The ones I get say right on the sticker to store at room temp until cut and then put in the fridge. I just leave it on the countertop until I cut it.

              I've noticed that musty smell too occasionally and a little mold on the outside. I've just cut it off when I peeled it. I'm not sure if I should have really eaten it or not either.

                How did it look on the inside? Was it creamy white like a potato? (Not sure if it's supposed to look like that...)

                And where did your store have it placed? In the coolers or in a dry, warmer area?

                  I had to laugh about that... the sticker is right on them... "store at room temp". And the store (Walmart) had them in the refrigerated part, close to cucumbers and that kind of thing. I've since found them at another place that doesn't refrigerate them though which is what seems to be correct. I honestly can't remember what else was around them, they were displayed by themselves.

                  And mine have looked similar to a potato inside - sort of an off-white color.

                    There weren't any stickers on mine. And they have it in with the cooler stuff also.

                    Yours sound like it's ok. Mine had a brownish tint to it that's bothered me since I cut into it. A website stated they should be creamy white, if I imagined to be like a potato. This one does not have the color of a potato...

                            I saw that. It looks good. That's when I started hunting around for answers on this jicama thing. I'd like to make that but not with something that may be rotten!

                              I'm thinking about it. Do you think it could be frozen? Maybe cut into slices and individually frozen so we could just get out a piece at a time?
