                I discovered this weekend that I like Jicama fried for a few minutes on each side with butter, and I also like it raw, sliced really thin. What an amazing veg!

                  So, I was just chopping veggies for dinner tonite (and I'm exhausted). It occured to me that I hope the nay-sayers of this WOE are reading this thread. If Atkins were protein/fat/no carb only, like many still believe, that would be far too easy!

                  I know Sally said it, Jimmie said it and I'm saying it too. I honestly thought I was eating lots of veggies. With fitday you see the whole day, so yeah, in trying desparately to keep the carbs reasonable my veggies suffered if I'm now eating them like I should have been for months now!

                  I love Atkins, I love this board and love the bond a good challenge makes between friends!

                      OK, here's a stupid question. *Technically* I know that a tomato sauce counts as a veggie (if you're OWL or later), so can I count it for the challenge?

                      Today's Veggies:
                      1 red bell pepper
                      1 cup spaghetti squash
                      1/2 cup tomato sauce
                      1/2 cup pumpkin

                      TOTAL NET CARBS=24

                      If I can't count the tomato sauce, my net carbs are at 18.

                        It's basically a tomato... it definitely should count.

                        (If an avocado counts, tomato sauce certainly should!)

                          That's what I'm hoping, dream. And the stuff I have has no added sugars or anything.

                          I feel sort of like a ninny...this veggie challenge is HARD. I have always made sure to eat at least 4 servings of veggies each day, but since OWL, I've never paid attention to the actual CARB counts of just the veggies themselves. I tend to look at the big picture. I like to eat salads with dark, leafy greens, which have a lot of fiber, but not a lot of net carbs. This week will be a challenge!!!

                            OK, I'm checking in. I'm on induction and I have 13 carbs for the day. You know, I'm pretty full! I've eaten much less than I normally do. The same thing happened yesterday when I tried it. Amazing!

                            Do we need to post what we actually ate? Just curious. I use fitday so it shouldn't be a problem.

                              Oh gosh, I know what you mean, Julie. I've been eating a lot of salads with the spring mix and spinach and there's not much there carb wise. This is a lot tougher than I thought it would be!
