sal, the pea thing threw me too. saw it was considered a legume at the wikipedia site but the charts have it as a starchy vegetable.

Someone came up with this when I was on that 'other evil diet' and I thought It might help some of you who are having trouble getting their veggies in. It's called spinach flatbread, but it's not bread, but you can use it like bread.
Basic Ingredients:
1 10-oz box frozen spinach, thawed & drained with all the excess moisture squeezed out
1 cup of cooked spaghetti squash
2 eggs
Spices and other ingredients to taste.
Typical additions when I make it:
garlic, onion, cayenne, minced peppers (red makes it pretty, looks christmasy)
or
cumin, jalapeno, onion
or
garlic, oregano, basil, onion
You get the idea.
Making it is simple. Put the egg, spagehtti squash and whatever spices you want in a a blender or mini food proccesor. Blend. Mix with the spinach.
Line a cookie sheet with parchment paper and spread mixture thinly. You can make it all one square or different size pieces. For instance, when I make the mexican version, I make three circles, then use it like a burrito wrap.
Once you get it spread out, put it in a 400 degree oven and bake for about 20 minutes. Take it out and cool on a rack. Thats it. You can warm it up in a microwave or toaster oven and it works great as a burrito wrapper, sandwich wrap etc. I have also make it very thin in one large rectangle, cut it into squares and put in a dehydrator for about 4 hours and it crisps up nicely. I used it to convey salsa from bowl to mouth.
I haven't made it in quite awhile because anything that reminds me of that diet...well, I just don't want to be reminded. It was not an experience I care to repeat.
