    Hey, Everybody...

    I just had to come by for a moment and share my exciting news.

    Sundays are weigh-in day for me. When we started this challenge, I wondered how this increase in veggies would affect my weight loss for the week. I have been looking forward to weighing today, even though TOM is looming and I expect "him" to arrive in the next couple of days (I'm pretty regular)... I was hungrier than usual yesterday and today, breaking out on my face in the same place I do every month, a little "swollen". Well, I have had a 3 pound loss this week! Woo-hoo! And I even lost 2 last week from just "practicing" with veggies for a few days before the challenge started on Monday.

    To those of you who came up with the idea for this challenge and Jimmie and Silly for running it - I want to express my sincere gratitude. You have literally changed my life! Like I have said before, I never ate vegetables before Atkins, and up until this challenge I wasn't eating nearly as many as I have been for the past 10 days. I am going to continue to strive for these minimums everyday... this is the way I eat now.

    I really couldn't be happier and I hope that everyone else feels better about veggies, as well. We did great!!

    BTW Jimmie, thank you for saying in an earlier post that I don't look 47. I appreciate that so much! (especially since I don't have makeup on in that picture ). I "take after" my mom... she looks great for her age.

        Oh, yeah!

        I also wish to express thanks to everyone who posted here everyday. I have learned so many things about vegetables and cooking that I never knew before. I really couldn't have done it without all of you.

          OH - MY!!!

          Just picked up another jicama, a smaller one that seemed nice and firm and NO potential for mold right away. Had to cut it open and try it out! YUM!!

          What a huge difference from the first one I bought. That other one was definitely spoiled! And there's no muskiness to this one at all! Very crunchy and creamy white like a potato, too.

            Last day? Already? Ohhhhhhhh.... just when I was getting into the swing of things!
            I'm good for 28 today (Sunday 29th)... or that's what I've planned. Got a mean ratatouille bubbling gently away, for supper.

            Silly and Jimmie... this has been a triumph! A real learning experience for everyone. I think we all had a few surprises. Thanks for "stirring" us all up! I feel like I stepped out of a rut... and it was about time!

            Let's do it again sometime!

              this is just an fyi on how this challenge happened.

              silly came to me maybe 4 weeks ago with this idea. she hasn't led a challenge by herself but wanted very much to see this happen. i've started and led many challenges so she asked if i would consider taking the lead on this one, teaching her what needed to be done. with the input of the other mods, i did the write up, the graphics and so on. silly has been a most excellent student and i do believe that you will see this challenge as a semi annual boardwide challenge and silly will be the one in charge.

              your kudos get offered to silly for her idea and kudos to the other moderators who provided info and encouragement to silly and myself.

                  mitzi, have you tried the winn dixie in your area? seems like i remember them carrying jicama.

                      I haven't tried Winn Dixie, as a matter of fact. I will go there today. I won't hold my breath, though. The huge Whole Foods Market didn't even have it, and they seem to have everything.

                          Would pickles be considered a veggie? Obviously I am not going to eat alot of them, because of the salt..but I was just wondering, lol.

                            Sun 29th Veggie net carbs-- 23 - my record!

                            Well, this has been a great experience - and I've lost 3 pounds into the bargain . I had just been losing 1 or 1.5 pounds a week so this was a bonus.
                            Can't wait for my cauliflower We had my husband's favorite tonight - cauliflower faux mash -yet more veggie carbs!

                            Thank you again Jimmie and Silly for all your work and support and encouragement. It's been really good checking in each day and seeing what everyone has been doing and how hard we've all been working to do this challenge.

                            I am looking at joining up to a couple of other challenges - it will help keep me on track I know.

                              hey friends,

                              Just a quick note cause we went out today and my ittle 2 year old boy is still happily running around tonight, he had a long nap in the afternoon so he is full of energy now...YIKES!!!!!!!

                              small salad in the afternoon
                              and a veggie chicken curry for tonight....YUM YUM

                              You guys rock!! Right now TOM is in town but somehow i still feel lighter. Tomorrow i'm starting another challenge the ATKINS ATTACK ONE!!.....i need to speed up my exercising and this could help.....i know that this veggie challenge helped me A LOT with my veggie intake. Thank you sooooooo much. xx

                                Hello, all! Well, it seems I have found my CCLL!! After 4 years on Atkins, it hovers around 30 grams, or last week's dairy rung. I weigh/make changes on Sundays, (same weight and inches as last week) so I am actually dropping back down to 25 grams today!

                                Today's fitdayed carbs (very hard as I only eat 2 meals on the weekends): 18!

                                I did it!

                                Thanks for the challenge-- I tried a new veggie (jicama) and had one that I haven't had in years (snow peas).
