    April 28, net 14 for me.

    Wow one spaghetti squash contains alot. Hard as heck to cut open before cooking! Thought I was going to need a chisel ...lol... It's very good however, well worth it.

            Jo, Lyssie included a note in her journal that she hasn't been reporting, but has gotten in her 13+ veggie carbs daily.

                  well...I could have sworn I posted for yesterday...but looking back I didn't...what did I do??

                  Well anyway- I got 12 veggie carbs yesterday....

                  today wasn't so good- I'm maxed out my allotment and only made 6 net veggie carbs Hooray for me for not fibbing....tomorrow is another day...and I have certainly learned a lot this week about how to get my veg carbs in. I just felt like eating light veggies today, cause my tummy has been upset. I should have had some green beans instead of that extra cup of lettuce.

                    Celery

                    I am really enjoying this challenge - thanks for doing it guys! It has made me think much more about what I am eating - and stopped me 'skipping' the veggies when I don't feel like preparing them all

                    I know I am going to discipline myself to carry on with lots of veggies as it has helped the weight loss too. I have made a big effort to eat a wide variety of veg each day- even if I have had to top up with pumpkin to make the targets

                          18 for me for Sunday please. I'm going shopping for spaghetti squash today!

                          Jimmie and Sillygirl, just wanted to say how great this challenge has been! What an eye opener. And Silly, thanks again for the salad recipes!
                          Will be on the lookout for more challenges....they really help. I introduced my family to Jicama who all loved it!

                          Can't wait to see everyone's cauliflower heads! I don't get one but I can live with that.

                              So here are my carb totals for the week so far:

                              Monday 23 = 19 carbs
                              4/24 = 20 carbs
                              4/25 = 20 carbs
                              4/26 = 19 carbs
                              4/27 = 25 carbs
                              4/28 = 19 carbs

                              Will post Sunday's totals tomorrow.

                              During this challenge, I tried some new veggies. I made SG's recipe for baked artichokes with cheese. It was delicious! My DH already like artichokes, so if I didn't like them, he would eat 'em. I also had a friend over to teach me how to cook and eat up a fresh artichoke. I don't recall anyone saying that you ate the leaves by scraping it on your teeth. Getting to the heart was intersting & very tasty!

                              I also tried baked rutabagas. Not too shabby! I did NOT try the eggplant. Maybe next time!
