    27 nvc for me today, sillybud.


    kolhrabi is very doable. it didn't taste like a sweet potato to me but it did have a potato taste. i grated it and fried it with 1/4 of a small onion and fried it much like you would hash browns. i was very pleased with the taste. i'm gonna try to boil and mash the next one.

        I'm thinking about that. I was gonna stay on extended induction but I'm thinking the veggies have helped me lose. I didn't lose anything week 1, now week 2 with making sure I'm getting 12-15 net carbs from veggies, I've dropped 6lbs! And I'm finding out that I really can get creative with them and that veggies are yummy!!!

              Very impressive Joy, considering you're out of town. You are one determined lady!

              BTW - butternut squash is awesome. I think I'm a squash person, I love them all!

                Ahhh okay! Thanks! I'm glad I know this now because there have been a lot of helpful posts I've read. Now I know I can "rep" them!

                    OMG, that is fabulous to hear! Veggies are good. I cannot believe people think Atkins "doesn't allow" veggies!

                      LOL! I had to take notes cruising this thread just now! I had to be with my Mom today so I missed the chatter. We are so glad you are all enjoying this challenge so much!

                      Mitzi - I used to hate jicama too. I don't know if it's growing up, or trying to eat well and not limit myself, but either way it's good when we grow to love something healthy.

                      Kate, the kohlrabi sounds awesome! How high a heat, and how long did you roast? I had no idea it was like a potato. I thought it was like a celery/lettuce kind of thing! I said before I love rutabaga, is it that same kind of thing inside?

                      Emma - I was gonna say back to the basics for you! Still recovering from those green beans, huh? I agree w/ Mitzi, most veggies taste better when browned on the outside and soft inside. It's the carmelization thing!

                      Guek - 20 for you today! Very nice!

                      Blazing your recipe for the eggplant sounds really, really good! Very inventive and oh so healthy!

                      And now, I can't read the rest of my scribbled notes!

                        fatactress - I used broccoflower when I ate mine, which was really dumb since that's more like cauliflower! If I eat it again, I'm going with the broccoli count! Actually, I will eat it again, it was very sweet and tender. Like i do w/ asparagus, I did peel the outter part. My family is spoiled rotten!
