    13 NET CARBS from my veggies today! AND I got my new veggie in, broccolini! Which I sauteed in olive oil and butter with some sea salt and peppercorns-YUMMO! The rest of my carbs came from cauliflower---made the "loaded" mock potato. And some celery. Tomorrow I'm making spaghetti squash!

      Hello

      Today felt hectic to me... even though I didn't get near enough done. I did manage to get my veggies in, though.

      At breakfast, I had pumpkin.

      At lunch, I had a cup of jicama, 1 serving of sugar snap peas, and 1 whole small avocado.

      Snack - another cup of jicama

      Dinner - 3 cups of romaine lettuce (I very rarely ever eat salads... only if eating out, and we picked up takeout tonight from an Italian restaurant. I get their grilled chicken caeser salad.)

      Total net veggie carbs for today........... 25 (That salad made my total low)

      Misc. Information.... 80g Total Carbs - 45g fiber = 35 net carbs for the day (this is low for me - again, it was the salad) *And my fiber rocks!

        Great job, everybody!

        23 net veggie carbs for me--green pepper, spinach, tomato, okra--I think I've created a monster with the parmesan okra--I was having to slap my son away from it so I could eat my share!

          I had 17 net veggie carbs today.

          1 c. spaghetti squash
          2 c. mixed salad
          1 c. mushrooms
          1 c. brussel sprouts/.5 c. cauliflower
          and about 1/4 of a cup of eggplant

          I tried the eggplant for the first time, and it wasn't all that bad. First, I sliced it skin and all, then fried it in olive oil. It tasted bitter! YUCK!

          So, I thought I'd give it another try without the peel and fried in butter instead. It wasn't half bad. However, I'm sure it tastes better in a casserole or dish of some kind, maybe with tomatoes. It has a taste that I'm sure grows on you.

              14 carbs for me today. Broccoli, green peppers, cucumber, 2 grape tomatoes and lettuce. I'm running out of time for that new veggie.....UGH. I will find one tomorrow didn't get the chance to get out today and shop.

                      I'm reporting in for yesterday. I had 17 carbs - got them in the usual way - pumpkin, ratatouille, lettuce and tomato. I think you're right about tonight's dinner and the new veggie, Silly. I'm going to be in that camp.

                            I just tried my new veggie for lunch - french fried jicama. It was very good.

                            Going by what I've had so far today and what I'm planning for dinner, I'm going to end up with 17 veggie carbs today. I'll check back in if it's otherwise. All in all a successful week. And I found out that I liked eating my veggies (of course it helps if you can eat them with butter, cream cheese, sour cream, full fat salad dressing, deep fried, etc.). I'm really going to try to stick with it and get 17-20 veggie carbs every day as I go through OWL.

                              Betsy - you don't have to list what you ate, but it is fun to see what others have eaten!

                              You better be trying the jicama today, it's the last day of the challenge!
