    Checking in .............. todays total will be 19 net grams

    breakfast -veggie omlete

    Lunch -tuna salad on greens and one of my new veggies Jicama, I have to say I tolerated it and it wasn't horrible but not something I would make a habit of ....... it tasted a little bit earthy to me,if that makes any sense ......

    Dinner will be left over stirfry from yesterday as well as trying out my second new veggie the brocolini

    I know the challenge ends today but my plan is to keep going and there have been a few veggies mentioned and recipies shared I am really looking forward to trying out.

      Hi everyone!

      Silly,

      I sent you an email. I'm sorry I haven't checked in. I have stayed within my 12-15 net carbs, but haven't tried a new veggie. Crazy busy with the new house - it's just easier to stick with something you know. Will we be doing this Challenge next week?

        Veggie carbs for Wednesday was 19 and Thursday 20. I don't have the grand total for today yet. I still plan to have lots of them for dinner. LOL!

                Last day, and I hit my target again!

                Mushrooms and a little spinach at breakfast: 3g
                Lettuce, green onion, radishes and cucumber at Lunch: 4g
                Rutabaga, green beans and onion at dinner: 11g

                Total: 18g

                This has been a wonderful and very instructive exercise in not just getting in enough veg, but getting a good bang for the buck while doing it. Thanks for organising it and well done all!!

                  Mushrooms in my omelette for breakfast. brussell sprouts for lunch, planning on having a salad for supper. 20 net carbs will be consumed after I eat my salad.

                    I had mushrooms in my omelet this morning too. Bell pepper and onion for lunch and salad, fresh brocolli for dinner with a total of 18 grams of veggie carbs.

                      Last day (this challenge has been fun and exhausting). My new veggie for the week was cauliflower. I made the faux mashed potatoes (didn't like it but forced myself to eat it for 3 days and then caved and searched cupboard for an alternative - pumpkin which I mixed with butter and heavy cream). I had it in my cupboard but had never tried it so that's 2 new veggies for the week.

                      Today's totals:
                      Broccoli quiche = 3 carbs
                      1/2 cup cucumber = 1 carb
                      2 cups lettuce = 2 carbs
                      8 grape tomatoes = 4 carbs
                      1.5 cups celery = 4 carbs
                      1/2 cup pumpkin = 4 carbs
                      1/2 cup green beans = 3 carbs

                      GRAND TOTAL = 18 carbs (sans the broccoli quiche; with quiche = 21 carbs).

                        Ack- I'm late for Thursday-

                        I had green bell pepper, mushrooms and broccoli, and lots of beets on Thursday. Man, those beets add up quick though! Funny how you can eat too much of one veggies (spinach) and never enough of some of the higher carb ones it seems.

                        And today, Friday--

                        I should be asleep right now but we got delayed in leaving my hometown because of a car accident (not our fault). Anyway, today's veggies included mushrooms and green bell pepper in a stirfry overnight and a vegetable soup at lunch that wasn't very flavorful but did involve a lot of veggies.

                        I found we make too much spaghetti squash with one try though...

                          I'm cooking dinner right now so the boys have something to eat while I'm working the box office tonight at Second City. I'm making yummy spaghetti squash with some ground beef and pesto sauce! I'm gonna take it in a tupperware container and eat it in between shows since there's a microwave in the green room. Soooo last day of the challenge huh? FUN WITH VEGGIES! I'm gonna keep up with eating my veggies and because of this challenge have decided that Monday I will be moving onto Rung 1 Veggies! I really believe its the veggies that helped the scale move this week.

                          Today, final day I hit 15 NET CARBS!!!!
                          My veggies today were mushrooms, celery, broccoli slaw and spaghetti squash.

                          My new veggie this week was broccolini and I really enjoyed it!

                              Hi, Everyone

                              Today was exhausting, and my a$$ is dragging. I did manage to get my veggies in, but I had to work at it.

                              I had pumpkin, zucchini, sugar snap peas, romaine lettuce, a whole tomato, and a whole cucumber, for a total of 25 net veggie carbs.

                              I am proud of all of us... it's been a great week.

                                Catrenia! You are the first person I've met who didn't like the faux mashed potatoes! Did you make the one with the cheese and stuff in it?
