      Good job, Emma!

      I'm trying cauliflower tonight--always thought it was icky, but I'm trying to keep an open mind.

      I'm like you, Betsy, I tried the spaghetti squash and really didn't like the texture. I'm going to cook it differently and try it once more before I give up, though. Not sure I cooked it quite well enough in the microwave, may try it in the oven next time.

      Had stir-fried okra with parmesan cheese "breading" for lunch--yummy!

        they dont do canned here... they do fresh, i should pop into town sometime tomorrow, got vacation pics to pick up anyway, i'll try and get some... cos i think ive tried everything else!!! how do you cook them?

          Same thing for me today, going shopping tomorrow for some new veggies.

            i used to HATE cauliflower, i guess it was all the low fat diets i ever did and had to have it boiled, which i still cant stand!! but its fantastic as mash with baconbits and cream and cheese and its great as the macafoni on lindas site, thats one of my fave recipes!

                    Hello fellow Veggie eaters!!!!

                    Had a show yesterday so I didn't post but here are my veggies totals from yesterday...

                    Green beans - 6 net carbs
                    Mushrooms - 4 net carbs
                    Celery - 4 net carbs
                    TOTAL 14 NET Carbs! YAY!

                    Today...

                    2 cups lettuce 3 net carbs
                    5 thin cucumber slices 1 net carbs
                    1 cup broccoli slaw 3 net carbs
                    1 small zuccini 4 net carbs
                    .5 cup green beans 3 net carbs
                    TOTAL 14 NET Carbs! Hit it again! YAY!

                    And tomorrow I'll be on day 9 of induction! Man it's gone by fast!

                        I had a very good veggie day today.

                        .88 cups of pumpkin for breakfast
                        6 ounces of brussel sprouts for lunch (a new veggie!)
                        1 cup of jicama and 1 serving of sugar snap peas for a snack
                        12 ounces of fresh green beans and 1 cup of mushrooms for dinner

                        for a total of.................... *41 net veggie carbs*

                            Emma - I absolutely hate canned green beans... they make me gag. I finally tried fresh green beans not long ago, and I love them. I got this recipe from Linda's website, and there several others there, too. I use mushrooms sometimes, instead of onions, and sometimes both. I also cook the beans until they are really brown... they taste better to me that way. Very, very good... By the way - she says in the recipe that frozen green beans can be used, but I don't think that I would like frozen ones.




                            TODD'S GREEN BEANS
                            1 pound fresh green beans *
                            6 ounces onion, sliced thick *
                            1 tablespoon oil
                            1-2 tablespoons butter
                            Salt and pepper, to taste

                            In a large skillet or wok, sauté the green beans in oil and 1 tablespoon butter over medium-high heat about 4-5 minutes or until they start to brown. Add another tablespoon of butter, if needed, and add the onions. Sauté until the onions are nice and brown. Season to taste with salt and pepper.

                            Makes 4-6 servings

                            * You can also use a 16-ounce bag of frozen thin green beans that have been thawed completely and patted dry. I used frozen beans. I used a medium onion plus one small onion to get 6 ounces. Per 1/4 Recipe: 126 Calories; 9g Fat; 2g Protein; 10g Carbohydrate; 4g Dietary Fiber; 6g Net Carbs
                            Per 1/6 Recipe: 84 Calories; 6g Fat; 1g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs

                                Alright my Net carbs today were 23.4g net carbs. Two cups of iceberg lettuce, 2 mushrooms diced, 1 tbs onions chopped, 2 tbs black olives, 1/4 cup cheese, 2-2.5 cups green beans. Thats a rough estimate but I was around 23.4 g. It was kinda hard to push more veggies but I did it! hehe
