For a real treat if I feel ambitious, I separate all of the brussel leaves and roast the same way, only for a shorter amount of time. They get crispy and yummy!"

    Well, I never got around to trying them, then... but today, I separated the leaves and roasted them. OMG! They were amazing.
    I'm gonna try this on Thursday for my new veggie! Mitzi, how long do you roast the seperated brussel sprouts at 400 degrees?

      Mitzi, those beans look good! yummy.

      I had 20 net veggie carbs today, little high but still in my range...OWL.

      1 c. spaghetti squash
      1 c. green beans
      1/2 cabbage
      1 small tomato
      and mixed salad with spinich

        That looks exactly like the veggie I bought! It's called "brocollini". I'm gonna saute it with some olive oil. Oh and yesterday I bought brocoli slaw and stir fried that with some beef strips today----AWESOME! They get softer (but not mushy) and are delish! There are also strips of purple cabbage and carrots but very, very little and I just picked out the carrot. I love this veggie challenge Silly! Got a spag squash in my fridge too and I'm gonna make chicken alfredo with it.

          I roasted them for about 15 minutes. And don't forget to shake the pan a few times, so they don't burn. Hope you like them!

            Cool idea! I love broccoli slaw made with mayo and splenda... it never occured to me that I could use it in a different way. Thanks!

              1.5 cups celery = 4 carbs
              2 cups lettuce = 2 carbs

              8 grape tomatoes = 4 carbs
              Faux mashed potatoes (cauliflower -new veggie of the week) = 2 carbs
              1/2 cup green beans = 3 carbs
              1 cup cucumber = 3 carbs
              *GRAND TOTAL = 18 carbs

              Also, broccoli quiche.

                checking in at 19 net today

                i did try the spaghetti squash today with butter and parmesean. it was better than last night. not sure if i will eat it again which is really strange for be becasue i like EVERYTHING (except for liver and onions.)

                ernie made his famous veggie on the grill stirfry....zucchini, red and yellow peppers, fresh tomatoes, olive oil and garlic, mushrooms......also had asparagus today. i am about to pop.

                    I just cut the ends off, wash and put in a glass container with lid (or plastic wrap) and nuke them for about 2-3 minutes depending if you like them crunchy or not! That's it! You can steam them too, but it's easier to nuke!

                        Mitzi, the beans look yummy!

                        Fatactress - working is a good thing! There's no real recipe for the veg soup, I just browned it all a little to get it carmelized a bit and added chicken broth, some chili powder (like 1 teaspoon), about 1 Tb of tomato paste and that's about it!

                        The Asparations veg was incredible! Way better than broccoli, not quite as sweet as asparagus. The pumpkin I cooked last night was also far superior to the canned variety which I O.D.'d on a year ago!

                        Everyone is doing a really great job at this!

                        I'm in at 23 today with mushrooms/3 cherry tomatoes, veg soup, asparation and pumpkin.

                              I got 18 again today with almost the exact diet as yesterday I haven't bee n shopping yet so I am having to make due with what I have. I added a little zuchinni today and subtracted the tomatoes but still came up with 18! LOL Still felt like I ate a ton of food! Tomorrow I shop!

                                22 net carbs today, and boy am I stuffed!
                                Green pepper, tomato juice, okra, cauliflower, spinach, tomato, cucumber

                                Cauliflower hashbrowns were good, I no longer fear cauliflower!
