    This challenge was amazing. I have learned sooo much. The support from Mitzi was awesome. She was able to help me do something that my mother could NEVER get me to do!

    I am surprised at how good veggies taste and how filling they are! There a couple of times I couldn't finish my main food (chicken, etc) because I had my veggies first. I'm excited to continue with eating my veggies. I've been with TOM since the beginning of the challenge so here's hopeing for a nice whoosh when TOM is over.

    Thanks again Mitzi! This was awesome and much needed.

      Okay I have my totals for yesterday (friday)...sorry I was out cause hubby came back from his job up on the north slope of Alaska (he works 2 on, 2 off)....And now he is doing atkins with me! He has lost 7 pounds (eating fruit, he is not induction as he only has a few to lose and he is a guy and works hard so loses much easier) AND, now my mom is doing atkins and I have been pushing the vegies with her too! hehe
      ........Anyhooooooooooo....

      Friday Totals: Veggie total carbs: 25.31 ...Fiber totals: 14.22
      Total Veggie NET carbs: 11.09 (not quite enough but was eating out so did best I could)

      I want to thank Mitzi and everyone else here!! I loved this challenge and it was fun learning how to eat Atkins correctly! I am convinced!!! Wooohooo and I feel awesome too! (((((((((Mitzi))))))))

        Friday, May 16, 2008: Net carbs 15

        I tried pumpkin...added a little splenda and cream cheese...I actually liked it!

        This was a great challenge and thanks for hosting it. It has allowed me to get into a regular routine of eating enough veggies everyday...it really makes a difference!

          Friday's Totals: 31g Gross Veggie Carbs - 12g Veggie Fiber = 19g Net Veggie Carbs

          I had Cauliflower & Cucumber raw in the morning, grilled mushrooms and onions with some steak at lunch, and tossed salad, and then at dinner cooked green beans and roasted brussel sprouts.

          I think the brussel sprouts count as my "new" veggie. I sort of remember choking one down as a teenager under threats from my mom, but I never enjoyed them until now!

            Congrats to everyone for following through with the challenge. Also for being willing to try a new veggie. This was a great challenge & I look forward to the next one!

              Irishmom82, I think you're amazing. What a great attitude! I bet never in a million years did you think 6 months ago you would be loving vegetables.
