    Steak w/sautéed veggies divided for late breakfast & mid-afternoon with salad & added cauliflower , boiled eggs & seasonings w/ranch dressing for dinner & breast chicken with shiritake.


    Now, on to the choosing of a new veggie... will it be considered new if I've had a preparation other than what I choose of an uncommon veggie for here?
    Have been thinking about Taro root. But I had taro chips, just never au naturel...
    So, it would be a new experience still.
    Or, maybe some neighborhood foraging... I'm an adventuresome soul, willing to try the cup mushrooms that have just appeared with all the rain, maybe there are even more good picks in the woods.... NAH.... risky, and I've got too many flight to catch up in the Pledging Flights Challenge to go wandering off into the forest (not to mention work to catch up on)
    OK...(going to see what lurks in back of cabinets from prior trips to oriental store, not yet tried...)
    Sigh... found broken straw mushroom, baby ginger, roasted eel ...alas the eel is the only one not tried... and mole (not oriental, but I don't trust it's ingredients.

      Yes, indeed, Susan! It is perfectly acceptable to experience a vegetable that you've had before, in a new way. In fact, I will probably end up doing that, myself. I had grand plans of trying several new veggies this week, but I already had too many in the fridge that needed to be eaten before I got some more. Laurie has been cooking jicama. It's funny... as much jicama as I eat, I have never tried to cook it. I think it's time!

        Thanks! Good luck with your jicama. I do happen to have a couple of Taro roots from my trip that I got the bitter melon during - they make gorgious foliage!!! But I can just plant one for now, and eat the other.

          Although it is not on the allowed Induction list, and I couldn't find it on the Nutritional Spreadsheet that I like so much in the FAQ Forum , I do think chayote is allowed in Rung 1. I looked up nutrition facts in 3 places for a cup of chayote, and of course, all 3 sites listed something a little different. It varied between 3 and 4 net carbs per cup. That's really low, so I think it is fine.

          Prickly pears - here's what I found at www.foodsubs.com:

          nopale = prickly pear cactus pad = prickly pear cactus leaf = prickly pear cactus paddle = nopal Notes: The canned version is acceptable substitute for fresh, but it has an inferior texture. Substitutes: okra OR green beans OR green peppers

They are $1.14 each at Walmart and since I shared my "Fried Apple" chayote last night I wanted more. I'm going to try the chayote bake tomorrow or Saturday.

              Don't worry, you didn't really miss anything. It was a very informal quiz. But I might have missed something! What is the chayote bake that you speak of? That sounds good.

              This has been so much fun this week making sure I have all my veggies....I started seeing a trend in my eating a couple weeks ago where I have more vegetables on my plate than meat ... this is a huge transformation because I grew up where the meat, bread & butter and potatoes went on the plate first then 4 of us shared a can of green beans or corn -- so you see there was little vegetable on my plate. I like this better -- but I still want some meat just not as much.

              Hope everyone is having as much fun as I am!
              This makes me very happy! I really, really hope that everyone is enjoying the challenge. I really look forward to it. (Next one will be in November )

                OK, my numbers for today:
                Breakfast: .88 cups pumpkin @ 7g net veggie carbs
                Lunch: 12 ounce bag of Broccoli/Cauliflower Mix @ 8g net veggie carbs
                Snack: 1 cup jicama @ 5g net veggie carbs
                Dinner: 1 cup spaghetti squash @ 8g net veggie carbs
                6 cherry tomatoes @ 3g net veggie carbs
                GRAND TOTAL OF 31g NET VEGGIE CARBS FOR THURSDAY, 5/7

                  Right, Friday is done for me veggie-wise, but my new veggie for the week didn't work out as planned.. the asian market didn't have bitter gourd or kohlrabi so I got a swede - I believe it is also known as rutabaga. I wasn't expecting much, but I really enjoyed it. I fried it up into "chips" and it was rather delicious sprinkled with salt, pepper and paprika. Luckily there was enough left for tomorrow, yum!

                  So totals for Friday:
                  Breakfast - grilled tomato and onion - 8.6gm
                  Lunch - Burger from wendy's (minus the bad stuff) with salad and pumpkin 7.4gm
                  Dinner - Rutabaga fries with salad greens - 7.6gm
                  Day's total - 23.6gm! A great end to the week

                  Huge thanks to Mitzi, I loved my first challenge. I only tried one new veggie but I sure got creative with the ones I've had before :3 And some of the recipes and links were great, thanks to all my fellow atkineers for the inspiration :3 And be sure to let me know if anyone tries a bitter gourd stir fry, I will be as soon as I find one

                  I almost forgot - my first trip to a fast food outlet in over a month. I used to go to the Wendy's next to work once a week and would get a pretty big meal with carbs galore. I was a bit anxious about trying to explain to the guy not to put any ketchup on my burger but it worked out fine. It wasn't as amazing as I hoped but I'm guessing that was I'm much more into fresh food

                    Totals for Wed & Thursday...

                    Wed 5/6 - Net 13.8
                    Breakfast - 1/2 cup green peppers 3.5
                    Lunch - 1 cup spaghetti squash 10.1
                    Dinner - 1 cup romaine 1.5, 1 1/2 cups of chopped cucumber 4.6
                    Total 19.7 - 5.9 fiber = 13.8 net, needed the extra veggies today, I was feeling blah. (Day 3 of induction)

                    Thurs 5/7 - 14.4 net
                    Breakfast - 1/2 cup green peppers 3.5
                    Lunch - 1 cup spaghetti squash 10.1
                    Dinner - 1 cup cucumber 3.1, 1/2 green peppers 3.5
                    Total 20.1 - 5.7 fiber = 14.4 net

                    Today will be different veggies, I usually prepare a bulk of my food on Sunday for the week, so that is why the days veggies aren't very different. Today I'm out of spaghetti squash and cucs, off to the grocery store to see what looks good after I drop the oldest off at school.

                        Anyone have a creative idea for pumpkin? One that doesn't include sweeteners or cream? I'm up for cream cheese if needed. I'm determined to get through induction without cream & sweeteners... since that is what I used in my coffee and I gave up coffee.

                          I'm flying to Long Beach today to see my sister for her B-Day so in order to get in my veggies I decided to have spinach and brussel sprouts before I go for Zumba. I've got jicama and cucumber sliced to take with me and I'm going to have a hamburger salad before I leave. I figure my total, give or take 1 or 2, should be:

                          Veggie carbs: 35 less 17 fiber = 18 net

                          I'll check in as soon as I return!

                            Me too Carole! It's hard to believe that we were sharing just one can of veggies at out dinner table.
                            It's pretty cool to see all the veggies on the dinner table now and just protein for the side dish. We even have meatless meals now too. Who would of thunk it.

                                My figures for the last day are below. I can't believe how quickly the days have gone. Before we started I was sort of 'Hmm - got to commit to minimum 17 veggie carbs every day for Monday-Friday.' Now we are at the end I'm disappointed! Thanks to Mitzi for hosting the challenge and the information about different veggies, and to all of you. It's fascinating - all the 'different' veggies still to try - some that I'd definitely never even heard of before, but can get at Asda!

                                My veggies had dropped down before this challenge, and it came at the perfect moment! It looks like the scales will be a bit kinder to me as well this week (not 'officially' weighing until Sunday, but I did sneak a look this morning, as I 'felt' like I'd lost weight, and I am another pound down. If that 'sticks' and doesn't bounce up again, then that is a loss two weeks running after a month of staying the same, so I'm doubly happy!

                                Anyway, enough rambling - today my info is...

                                Beef Salad with Mixed Salad Leaves, Cherry Toms, Onion and Baby Scallop Squash stuffed with Cream Cheese and marinated in oil. (I found these at the local deli - they were labelled 'Pumpkin' but the shape was definitely Scallop Squash or a Patty Pan type They were so yummy! I'm growing some Patty Pan and some yellow Scallop Squash this year, and I'm going to make some of these!

                                Cold Roast Chicken, Homemade Tzatziki (sp?) Cherry Toms, Roast Orange Pepper and Onion, Celery, Artichoke Hearts, Cucumber, and Gherkin

                                Greek Yoghurt with Rhubarb

                                Total Net Veggie Carbs = 27
