    Had a stressful day yesterday. Had a difficult time eating but did manage to get some veggies in.

      There is no need to list individual veggies - the total number of net carbs each day is all that is required. Which day is this 22 net carbs from? Do you have your totals from the other days?

        17 net veggie carbs for the day. I've had cabbage, red pepper, cuke, celery, pumpkin & sauteed mushrooms, bean sprouts with snow peas

          I usually wash white mushrooms in water. I usually wipe off portabellos. I hadn't thought of removing the gills on portabellos - my least favourite part - I don't like the texture - how do you do it?
          Thanks, everyone, for the input on brushing versus washing mushrooms. I've been washing the smaller ones, but brushing the portabellos.

          The gills - well, since the recipe I have always used for the portabellos said to scrape the gills out, that's what I had always done. Last night, I left them in, because it's kind of a pain in the @ss to scrape them. I also decided to wash them instead of brush them off.

          The verdict - well, I have to admit that I wasn't that impressed with my dinner last night. It was pretty good, but not great... I've been musing upon why. I don't think it had anything to do with my washing them instead of brushing them. And while the gills tasted fine, it was kinda creeping me out to eat them... but that was just in my head, cause they tasted fine. But now that I see that there are others who don't scrape them out, I probably won't anymore. Mostly because to get them out, I wasted a lot of actual mushroom... I'm not very efficient with the process. I'm thinking that the reason I wasn't crazy about my dinner last night, is because I usually just put cheese in the caps... last night, I also added a tbsp of tomato sauce to each cap, along with some Italian seasoning (marjoram, thyme, rosemary, savory, sage, oregano, and basil blend). I am one who has never used seasoning... I mean, never! Everything I read says that spices are VERY important in making foods taste great, so I've been trying to incorporate them. I think I just don't like italian seasoning (and not crazy about tomato sauce, either). Ah, well... just trying to break out of my box a little bit.

          I am very envious of those of you who can cook. That was/has been my biggest challenge with doing Atkins. I don't really know how to cook, and am not very good at it. I have about a zillion recipes, but cooking just isn't my thing. But I will keep trying!

          Georgiana, please don't worry about not being able to chat more. I do miss your conversation, but you have so much going on! I mean, anyone who is taking something like astrophysics gets my complete and total respect! I appreciate that you have been able to give me your totals each day.

          Laurie, I'm sorry that you missed the veggie quiz. Boy, you really rocked those veggie yesterday. And the fiber! Woo hoo!!

          C P, I can't imagine not having access to jicama, spaghetti squash, and pumpkin! I would be in a world of trouble.

          Sherri, I'm sorry to hear about your stressful day yesterday. Your veggies looked great... I'm surprised that you didn't hit your 17, since tomato and onion are so high in carbs. Of course, the quantity is what drives it up... if you only used a couple of tbsp. of onion for seasoning, instead of eating a whole 1/2 of a big onion like I did Tuesday, that would make a difference. I'm happy to learn that things turned out OK for you at home.

              All I had today was jicama. I made that shoestring jicama at lunch and then I chopped up some more and cooked it in bacon fat with some onions at dinner....oh, it was good! Kind of hash-browny.

                      Here's my veggie carb totals for today: 31 carbs; 13 fiber = 19 net

                      I was laughing so-o-o-o hard when I read that the 3rd veggie in the 'lil challenge was okra! And there I am lying in bed so sure it was basil leaves! I must get my eyes checked LOL!

                        okay, I did two new veggies, one green calabaza squash (mexican zucchini) with two tomatilloes. I will need to use the carb count for zucchini, but I am sure it is comparable. I sauted these with garlic.. not bad!

                        Also mushroom, salad greens, mushrooms, and 3 onion slices, for a total of 23 net carbs.

                          Unfortunately, that sliminess puts off many diners, but you can minimize it by buying small, fresh okra and by cooking it very briefly. Okra's popular in the South, where they fry it in cornmeal, pickle it (this also gets rid of the sliminess), and use it to thicken their gumbos.

                            20.1 net for me today.... I had roma tomato, onion, salsa (homemade), fried cabbage, fresh green beans, salad & pumpkin....I'm really trying to get jazzed about pumpkin....it was better this time but still not great. I made fresh whipped cream to put on top this time...that helped.

                            I keep missing so much on this challenge and I'm really sorry Mitzi -- I knew all but the kolrabi on the quiz....and someone ask about the chayote - I bought 4 more today!!! They are $1.14 each at Walmart and since I shared my "Fried Apple" chayote last night I wanted more. I'm going to try the chayote bake tomorrow or Saturday.

                            This has been so much fun this week making sure I have all my veggies....I started seeing a trend in my eating a couple weeks ago where I have more vegetables on my plate than meat ... this is a huge transformation because I grew up where the meat, bread & butter and potatoes went on the plate first then 4 of us shared a can of green beans or corn -- so you see there was little vegetable on my plate. I like this better -- but I still want some meat just not as much.

                              Carol, is chayote O.K. for Rung 1? I want to try the fried "apples" too, but I didn't see it listed on the allowed Induction list. And, I've never had chayote and need a "new" veggie for this challenge. There's not much (anything?) in my local markets that I haven't had, including nopales (prickly pear pads). Prickly pears are coming in season and I have a yard full of them. Maybe I'll try the prickly pear "tuna" if it doesn't fall into the fruit catagory.
