    I love swede, but I thought it was a later rung veggie (rung 8 or 9?) I could be wrong though, so I'm off to check, - rather hoping I am wrong, 'cos I fancy some this weekend.

    Edited to add - according to the Spreadsheet it is a rung 8 veggie, but the net carb count per cup is 7.88, which is pretty similar to pumpkin and spaghetti squash, so I wonder why it is a rung 8? Perhaps it is the natural sugar content in it? Mitzi - the Veggie Queen - will probably know!

      My total for yesterday, Thrusday the 7th, is 23 net carbs.

      I had tomatoes, cukes, lettuce, radishes, artichoke hearts and kimchi, which is cabbage marinated in vinegar and hot sauce. I had never had it before and didn't like it! Tomorrow I am going to try tomatilloes for the first time.

              Today I steamed them for 12 minutes and then chilled them in the fridge. I sliced them and fried the cold radishes with bacon and green onion. It was good, nothing like potatoes, and I don't know if the extra step was worth it. I think I will definitely toss them in olive oil and put them in a pan with turnips, onions and a roast.

              I have fried radishes quite often -- I love them....I put sea salt, pepper and Tone's Veggie Seasoning (has dill in it) on top and fry them with onion - I just quarter them and put them in the skillet with big chunks of onion and olive or canola oil. Sometimes I put Low-Carb ketchup on top - but I guess I've eaten them for so long maybe I forgot what real potatoes taste like. Keep trying them - they are good.

                I also had a 'salad in a bowl' from the produce dept but the lettuce was all iceberg.. negligible everything there..

                I have to say, this was a busy week of cooking/preparing veggies. I like veggies.. but sometimes you eat fewer because of the preparation time. It was a good reminder to me to not skimp on what my body needs. I have felt great! and thanks Mitzi!

                    Taro Root 1/2 cup sliced,….14 g carbs -2 fiber

                    Bok Choy 1/4 head….4.5 g -2 fiber
                    Ginger , 4 slices 1 g
                    Green Onion , 1/4 cup….2 g -1 fiber
                    Tomato , 1 med…..7 g -1 fiber
                    Combined veggies: 28.5 g carbs – 6 g fiber = 22.5
                    Soy Sauce, salt, pepper, garlic powder, dash cayenne, simmered with stew beef chunks & topped with 1 oz parmesan. (Note some of the onion, bok choy & ginger went with the chicken at lunch. Breakfast – eggs & bacon w/grated cheese, no veggies.)


                    And, MITZIMARIE, THANK YOU SO MUCH FOR THIS CHALLENGE!!! This morning I saw a shocking 147 - and last time I weighed, about a week ago, was 153!! Right now, I'm totally stuffed (Thumbs up on the taro, but a little more filling than I'm accustomed to lately...). Even so, scales right now are at 150 (after eating & drinking; before bed YAY!!!! ) (Can't wait to check again in the morning to be sure it's a keeper number!!!!)


                    I think Ill stay with this challenge again, if repeated!

                      Hmm... I've never eaten rutabaga, and have to admit that I didn't realize that it was a Rung 8 veggie until now. I've been doing some research, and I'm left scratching my head.

                      Look at this:





                      rutabaga = Swede turnip = Swede = yellow turnip Pronunciation: roo-tuh-BAY-guh Notes: Rutabagas look like turnips, only they're a bit larger and have a yellow complexion. Use them just as you would turnips. Substitutes: turnip (smaller, not as sweet; takes less time to cook) OR celeriac OR kohlrabi

                      It says that turnip can be a substitute, and they are not as sweet. Turnip is an Induction veggie.

                      turnip Notes: Turnips can be roasted, boiled, steamed, or stir-fried. Select small turnips that feel heavy for their size. Substitutes: rutabaga (larger and sweeter than turnips; takes longer to cook) OR kohlrabi bulbs (similar flavor) OR black radish (more pungent) OR celeriac OR parsnip OR carrot OR salsify OR daikon

                      Since celeriac and kohlrabi (both Induction veggies) were also mentioned as substitutes, I looked them up:

                      celeriac = celery root = celery knob = turnip-rooted celery = knob celery = Germany celery = soup celery = turnip celery = céleri-rave Pronunciation: suh-LAIR-ee-yak Notes: This underrated vegetable is a relative of celery that's been developed for its root, which has a pleasant celery flavor. It's popular in France and Northern Europe, where it's usually peeled and cooked in stews or grated and served raw. Many large supermarkets carry celeriac; select smallish roots that are heavy for their size. Substitutes: turnips OR celery ribs (weaker flavor) OR parsley root OR (in salads of grated vegetables) carrots + dash celery seeds

                      kohlrabi = cabbage turnip = stem cabbage = turnip cabbage Pronunciation: kohl-RAHB-ee or kohl-RAH-bee Notes: A kohlrabi resembles a turnip, only it's sweeter and more delicately flavored.                       Parsnips, however, are listed as a Pre-Maintenance veggie on the Nutritional Spreadsheet. Wow... I didn't realize that there were veggies without a Rung number. Parsnip must be really starchy!
                      parsnip Notes: These are like carrots, except that they're cream-colored and never served raw. Northern Europeans like to add them to stews, but they can also be puréed or served as a side dish. Choose small, crisp ones. Substitutes: carrot OR salsify OR turnip OR celeriac OR parsley root OR sweet potato
                      Sweet potatoes are also a Rung 8 veggie.

                      Ok, carb counts:
                      rutabaga - 7.882g net carbs per cup - Rung 8
                      turnip - 6.019g net carbs per cup - Induction
                      celeriac - 11.55g net carbs per cup - Induction
                      kholrabi - 3.51g net carbs per cup - Induction
                      parsnip - 13.09g net carbs per 100g - Pre-Maintenance
                      carrot - 6.58get carbs per 100g - Rung 8

                      Well, it is evident that net carbs per cup is not the criteria for assigning veggies to their appropriate rung. It must have something to do with it's glycemic index (or load)... more starch, or natural sugar.

                      Squash is like that, too. There are squashes that are Induction veggies, and some that are Rung 8 veggies (like acorn and butternut squash).

                        I had zucchini, cauliflower, tomatoes today. I had no meat at all today, which was rather strange.

                          Woo hoo! That's fantastic! This is exactly the kind of example I like to fall back on, when people express a fear of moving to Rung 1 and adding more veggies... or those who just don't like veggies, and don't want to make the effort to try to like them.

                          To all of you who thanked me for leading the challenge - YOU ARE VERY WELCOME! And I want to thank YOU, for signing up and participating. And, YES, I would love to have each and every one of you join the next Veggie Challenge that I will hold in November.

                          You guys are great... you've made me feel all warm and fuzzy.

                          I'll be hanging around this thread for a couple more days, gathering counts from participants, answering questions, and just chatting (I still haven't provided my own information from today!). Most of you have been very good at providing the necessary information, so I should be able to start handing out some awards tomorrow. I'll give everyone who needs it, through Sunday, to provide counts if you haven't yet. It's thrown me off and made me a little tired to work an evening shift rather than the morning shift today.                             i use rutabaga in faux potato salad. it replaces the white potato and i like it much better! more flavor than the plain ol' white spud. i also cube rutabaga and boil it.

                                19.5 net veggie carbs for Friday. I had pumpkin, broccoli, wax beans, spring lettuce mix, cuke, red pepper, celery, tomato, snow peas, shrooms & bean sprouts.

                                I did not try a new veggie due to my local store not carrying anything I haven't tried before. Unfortunately it is a 30" drive to get to another grocery store.

                                Thank you Mitzi for once again hosting the challenge. I once again realized I have not been eating enough veggies. One more thing to work on!
